Banana, Beans, Corn And Greens From Tanzania

Total Time: 40 mins Preparation Time: 15 mins Cook Time: 25 mins

Ingredients

  • 6 green bananas, peeled and mashed
  • 4 ears of corn, shucked and off cobb (i cheat with frozen out of season)
  • 2 cups green beans, cut to 2-inch
  • 1 bunch greens, large and chopped (any you have, collards, spinach, cabbage, pumkin leaves, chaya, etc.)
  • 2 cups coconut milk (regular milk ok)
  • salt

Recipe

  • 1 zap the corn and beans al dente in your microwave.
  • 2 add bananas. cook for about 10 minutes on top of the stove.
  • 3 add greens and cook til just done.
  • 4 add milk, mix well and reheat without boiling.
  • 5 season to taste and serve hot or cold.
