garlic chicken and potatoes

Ingredients

  • Servings: 4
  • 8 small red potatoes
  • 3 squares garlic & herb saute ® saute starter
  • 1 pound boneless skinless chicken breasts
  • 1 (12 ounce) package fresh pre-trimmed green beans

Recipe

    Preparation Time: 30 mins Ready Time: 30 mins

  • pierce potatoes with fork in 2-3 places. microwave 3-5 minutes or until just beginning to soften.
  • melt 2 saute ® squares in 12-inch nonstick skillet over medium-low heat just until begin to form.
  • add chicken.
  • saute 13-18 minutes or until chicken is golden brown on both sides and done (165 degrees f). remove from skillet.
  • melt remaining 1 saute ® square in skillet. cut potatoes into bite-sized wedges; add potatoes and green beans to skillet. cover; cook over medium-high heat, stirring occasionally, 8-10 minutes or until potatoes are golden brown and green beans are tender.
  • slice chicken; serve over potatoes and green beans.

rhubarb betty

Ingredients

  • Servings: 8
  • 5 cups chopped rhubarb
  • 3/4 cup white sugar, or to taste
  • 1/2 teaspoon ground cinnamon
  • 4 cups cubed cinnamon swirl bread
  • 1/4 cup butter, melted

  • in a medium bowl, toss together the rhubarb, sugar and cinnamon. add half of the bread cubes, and toss lightly to distribute. transfer to an ungreased 2 quart microwave-safe baking dish. top with remaining bread cubes. drizzle melted butter over the top.
  • cook in the microwave on full power for 12 minutes, or until the rhubarb is tender. serve warm.

feta mashed potatoes

Ingredients

  • Servings: 4
  • 2 pounds red potatoes, each cut into 6 pieces
  • 1/2 teaspoon salt
  • 6 cloves garlic, peeled
  • 1 teaspoon olive oil
  • 6 ounces plain fat-free greek yogurt, or more as needed
  • 4 ounces crumbled feta cheese
  • 1 tablespoon butter

  • place potatoes into a large pot and cover with water and salt; bring to a boil. reduce heat to medium-low and simmer until tender, about 15 minutes. drain and return potatoes to pot over low heat to evaporate any extra water. put potatoes through a potato ricer or mash thoroughly with a potato masher.
  • place garlic cloves in a microwave-safe dish; drizzle olive oil over garlic. microwave on high until garlic is fragrant and tender, 1 1/2 to 2 minutes. mix garlic and yogurt into potatoes; add more yogurt as needed. stir feta cheese into mashed potatoes until melted; top with butter to serve.

white chocolate holiday spritz cookies

Ingredients

  • 1 cup unsalted butter, softened
  • 1 egg
  • 2 teaspoons vanilla extract
  • 3/4 cup confectioners' sugar
  • 2 1/4 cups all-purpose flour
  • salt
  • 1 (12 ounce) package white chocolate chips
  • 3/4 cup multicolored candy sprinkles (jimmies), as desired

  • preheat oven to 375 degrees f (190 degrees c). lightly grease or line two cookie sheets with parchment paper.
  • cream the butter in a mixing bowl until light colored and fluffy. beat in the egg and vanilla until smooth. add food coloring, if desired. gradually mix in the confectioners' sugar, flour, and salt to make a smooth dough.
  • place dough into cookie press cylinder fitted with 1 inch sawtooth ribbon disk. press dough into long strips on prepared cookie sheets. use a paring knife dipped into flour to score the strips every two inches.
  • bake in preheated oven until edges are slightly golden, about 6 minutes. remove from oven, cool slightly, and cut along score lines while they are still warm. transfer to wire racks to cool completely.
  • line a baking sheet with parchment paper. melt white chocolate chips in the top of a double boiler placed over medium heat, or in the microwave. add food coloring, if desired. spread white chocolate icing on the bottom of one cookie and place the bottom of a second cookie into the icing to form a sandwich. place cookie sandwich prepared baking sheet. repeat to assemble remaining cookies, and refrigerate on the baking sheet 10 minutes to set icing. remove and dip ends of cookies into white chocolate, then into candy sprinkles. place cookies on wax paper until white chocolate is set.
