Chili's Honey Chipotle Sauce

Total Time: 6 mins Preparation Time: 5 mins Cook Time: 1 min

Ingredients

  • 1 cup light corn syrup
  • 1/4 cup barbecue sauce
  • 3 tablespoons orange juice
  • 1/2 teaspoon salt
  • 1/4 cup honey
  • 1/2 teaspoon ground red pepper (like cayenne)
  • 1 pinch dried chipotle powder
  • 2 drops lemon juice

Recipe

  • 1 mix all ingredients together and microwave on high for 1 - 1 1/2 minutes. let cool to let flavors meld.

Chewy Gingerbread Molasses Cookies

Total Time: 1 hr 15 mins Preparation Time: 45 mins Cook Time: 30 mins

Ingredients

  • 1 cup margarine
  • 1 cup sugar
  • 1 cup molasses
  • 1/4 cup water
  • 5 cups flour
  • 1 1/2 teaspoons baking soda
  • 1 tablespoon ginger (or to taste)
  • 1 tablespoon cinnamon (or to taste)
  • 1 teaspoon allspice (or to taste)

Recipe

  • 1 place margarine in large mixing bowl; soften it in a microwave for a few seconds.
  • 2 cream sugar and margarine; add molasses and water.
  • 3 combine flour, baking soda, ginger, cinnamon, and allspice.
  • 4 add to the mixing bowl; mix together.
  • 5 let dough cool, covered, in freezer for at least one hour.
  • 6 preheat oven to 325 degrees fahrenheit.
  • 7 roll out dough; cut out with cookie cutters.
  • 8 if the cookies are thin, bake for 6 minutes.
  • 9 if cookies are thick, bake for 8 minutes.
  • 10 cookies will appear slightly underbaked but that's what makes them taste so good and chewy!
  • 11 cool cookies on a wire rack.
  • 12 these cookies stand their own without frosting, but if you want to frost them, mix a cup of powdered sugar with a little water to make frosting. draw a few accent lines or dots on the cookies.

Chocolate Filling Or Icing (fudgey)

Ingredients

  • 1 (7 ounce) jar marshmallow cream
  • 1 1/2 cups sugar
  • 1 (5 ounce) can evaporated milk
  • 4 tablespoons butter
  • 1/4 teaspoon salt
  • 3 cups semi-sweet chocolate chips, melted
  • 1 teaspoon vanilla extract
  • 5 tablespoons hot water (or more to thin)

Recipe

  • 1 place chips in microwave safe bowl and microwave on high for 1 and 1/2 minutes, stirring to melt.
  • 2 if not melted microwave for 15 second intervals stirring thoroughly each time until melted then set aside.
  • 3 in large heavy saucepan combine sugar, evaporated milk, marshmallow cream, butter and salt.
  • 4 cook over medium heat stirring constantly until it comes to a vigorous boil.
  • 5 cook for 5 minutes thenn remove from heat.
  • 6 add vanilla and melted chocolate chips, stirring until incorporated.
  • 7 add hot water and using hand mixer beat on high until incorporated.
  • 8 let cool at room temperature.

Amarula Fondue Fantasy

Ingredients

  • Servings: 6
  • 200 g dark chocolate, broken into pieces
  • 20 ml orange juice
  • 60 ml amarula cream liqueur
  • 178 ml evaporated milk, chilled
  • 10 ml finely grated orange rind

Recipe

  • 1 place the chocolate in a bowl over a saucepan of simmering water. stir the chocolate continuously until it has melted. stir in the orange juice. amarula cream, half the can of evaporated milk and orange rind. stir to make smooth.
  • 2 whisk the remaining evaporated milk until thick and fold into the chocolate mixture. pour into a fondue pot and set over a low flame.
  • 3 serve with a selection of fresh fruit and sponge fingers.
  • 4 note: chocolate burns easily, so it its important not to let the mixture boil or it will become bitter.
  • 5 microwave method:.
  • 6 in a heat resistant bowl place the chocolate, orange juice, amarula cream, half the can of evaporated milk and orange rind. microwave on 100% power to soften, about 3 minutes. stir to make smooth. whisk the remaining evaporated milk until thick, and then fold into the chocolate mixture. pour into a fondue pot.

  • 1 arrange chicken pieces in a baking dish with meaty portions toward the edges of the dish. cover with waxed paper.

  • 4 eggs
  • 1 1/2 tablespoons instant coffee granules
  • 1 1/2 teaspoons vanilla extract
  • 1 cup sugar
  • 250 g bittersweet chocolate
  • 250 g butter
  • 1/2 teaspoon salt
  • 1 cup flour
  • 4 1/2 tablespoons cocoa

Recipe

  • 1 combine eggs, coffee, vanilla extract and sugar. mix well.
  • 2 melt chocolate and butter together in microwave. stir every minute or so and continue heating until the mixture is fully melted.
  • 3 combine egg mixture with chocolate mixture and mix.
  • 4 combine flour, salt and cocoa.
  • 5 add egg-chocolate mixture to the flour mixture, mix well.
  • 6 pour batter into a 30cmx25cm (~ 10x12 in inches) buttered baking pan.
  • 7 put into oven, preheated to 180c (350f). bake for 25 minutes.
  • 8 allow to cool completely before cutting into squares.

Chili's Egg Rolls-lightened Up!!!

Ingredients

  • 3 flour tortillas, not large (latortilla factory brand originals lowfat lowcarb)
  • 1 ounce chicken, cooked and shredded
  • 2 tablespoons black beans, canned
  • 2 tablespoons corn, canned
  • 1 ounce fat free cheese, shredded (your choice of kind)
  • 1 tablespoon red chili pepper, diced
  • 3/4 cup frozen spinach, thawed and drained
  • 2 tablespoons avocados
  • 2 tablespoons nonfat sour cream
  • 1/2 teaspoon hidden valley ranch dip, dry
  • 1 tablespoon tomato, diced
  • pepper

Recipe

  • 1 preheat oven to 400 degrees.
  • 2 combine chicken, corn, cheese, chili pepper, and spinach in a microwaveable bowl.
  • 3 heat for 30 seconds in micro.
  • 4 warm tortillas in micro for 15 seconds.
  • 5 on a clean, flat surface, lay out tortillas side-by-side.
  • 6 put 1/3 of chicken mix in the center of each tortilla.
  • 7 to assemble each roll, fold the left and right sides in so no filling escapes during cooking, and roll up.
  • 8 place all 3 rolls seam side down on a baking pan that has been sprayed.
  • 9 bake 12 minutes, flipping 1/2 way through cooking.
  • 10 while eggrolls are in the oven prepare dip.
  • 11 sauce:.
  • 12 combine sour cream, avocado, and dry dip mix in a small bowl until smooth.

Chai Tea Latte

  • 3 tablespoons brown sugar (or honey)
  • 1 teaspoon instant tea (unsweetened or no flavoring)
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon ground cardamom
  • 1/4 teaspoon ground ginger
  • 1 1/2 cups low-fat milk
  • 1 teaspoon vanilla (optional)

Recipe

  • 1 mix all dry ingredients together.
  • 2 add dry ingredients to 1-1/2 cups milk and vanilla in microwave proof bowl or saucepan
  • 3 in microwave or on stovetop: heat until the temperature you like your latte (do not boil).
  • 4 froth with portable electric wisk / frother --- or by hand and pour into mug (i make mine every morning to drink in a travel mug on the way to work).

Chestnut Truffles

Ingredients

  • 18 (1 ounce) chocolate baking squares
  • 1/2 cup unsalted butter, cut into 8 pieces
  • 1 cup sweetened chestnut puree, with vanilla
  • 1 (300 ml) can sweetened condensed milk
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon imitation rum extract
  • 8 (1 ounce) semi-sweet chocolate baking squares or 8 (1 ounce) chocolate, chopped
  • 1 tablespoon vegetable shortening

Recipe

  • 1 in heavy saucepan over low heat (or in double boiler), melt chocolate and butter. stir in remaining ingredients.
  • 2 transfer to parchment paper lined 8 or 9 inch square or round pan. cool. chill until firm enough to handle, about 2-3 hours.
  • 3 using a melon baller, scoop mixture and roll into balls. place on parchment paper lined cookie sheet and refrigerate.
  • 4 chocolate coating: melt chocolate with shortening on stove-top or microwave just until melted.
  • 5 stove-top method: place chocolate and shortening in the top of a double boiler over hot, not simmering, water, stirring just until melted.
  • 6 microwave method: place chocolate and shortening in microwave-proof bowl. microwave on medium one minute; remove from microwave and stir. if chocolate is still not melted, repeat every 30 seconds until melted. note: time will vary accordingto microwave oven and how finely chopped the chocolate is.
  • 7 use a fondue fork (or skewer or other small fork), dip truffles in melted chocolate. let excess chocolate drain from truffles before removing from fork or skewer and placing on cookie sheet to harden.

Awesome Banana-chocolate Pie

Ingredients

  • Servings: 8
  • 4 ounces baker semisweet chocolate
  • 2 tablespoons milk
  • 1 tablespoon margarine or 1 tablespoon butter
  • 1 graham cracker crumb crust (either your own or storebought)
  • 2 medium bananas
  • 2 3/4 cups milk (cold)
  • 2 (3 1/2 ounce) packages instant banana pudding mix or 2 (3 1/2 ounce) packages instant vanilla pudding
  • 1 1/2 cups whipped topping (either whipped cream or cool whip)

Recipe

  • 1 in a glass bowl, microwave chocolate, milk and margarine/butter on high power for 1 minute, stirring every 20 seconds; depending on the power of your microwave, you may need another 30 seconds or so.
  • 2 try not to microwave longer than 90 seconds.
  • 3 stir mixture until chocolate is completely melted.
  • 4 spread this mixture evenly in crust, then refrigerate for 30 minutes or until chocolate firms up.
  • 5 pour milk into a large bowl; add pudding mixes.
  • 6 with a whisk, beat for one minute; let stand for five minutes.
  • 7 during this standing time, peel and slice the bananas and arrange over chocolate.

  • 1 can frozen pineapple juice
  • 1 can frozen orange juice
  • 1 cup water
  • 1 cup sugar
  • 2 tablespoons lemon juice
  • 3 medium bananas
  • 1 (16 ounce) package frozen strawberries
  • 1 can mandarin orange
  • 1 can crushed pineapple

Recipe

  • 1 in large bowl prepare pineapple juice concentrate according to package directions.
  • 2 add orange juice concentrate, water, sugar, lemon juice and fruit.
  • 3 spoon 3/4 cupful into each plastic cup.
  • 4 place cups in pan and freeze.
  • 5 remove from freezer 40-50 minutes before serving.
  • 6 or place in microwave for approximately 15-20 seconds prior to serving.

Chocolate Fondue

  • 4 ounces semisweet chocolate
  • 1/4 cup evaporated milk or 1/4 cup half-and-half
  • 4 kraft caramel candies
  • 1/4 cup mini marshmallows
  • 1 tablespoon corn syrup
  • 1 tablespoon butter

Recipe

  • 1 place all ingredients in a microwave safe fondue pot or glass bowl.
  • 2 heat for 30 second increments, stirring until melted.
  • 3 if using fondue pot, place in holder and light tea light to keep chocolate mixture warm.
  • 4 serve with fruit, pound cake, cheesecake squares, or anything else that sounds good!

Breakfast Egg Roll

Total Time: 20 mins Preparation Time: 10 mins Cook Time: 10 mins

Ingredients

  • Servings: 6
  • 6 egg roll wraps
  • 6 eggs
  • 6 tablespoons milk
  • 1/2 cup cheddar cheese, shredded
  • 1/4 cup cremini mushroom, diced
  • 6 tablespoons sour cream, divided
  • 1 tablespoon salt
  • pepper, to taste

Recipe

  • 1 heat oil in pan or fry daddy to 350°f.
  • 2 place egg roll skin on clean, dry surface.
  • 3 smear 1 tbsp of sour cream in middle of skin.
  • 4 sprinkle some of the mushrooms on top of sour cream, followed by a pinch of salt.
  • 5 in ramekin, mix together 1 egg with 1 tbsp of milk.
  • 6 add pinch of salt and pepper.
  • 7 microwave for 50 seconds, on high.
  • 8 break up scrambled egg with fork and place egg evenly on top of mushrooms and sour cream.
  • 9 sprinkle eggs with shredded cheese and a little more mushroom.
  • 10 add another pinch of salt on top of mushrooms (this helps mushrooms to soften).
  • 11 moisten edges of egg roll skin and wrap up, envelope-style, making certain all edges are well sealed.
  • 12 place in oil and cook until well browned.
  • 13 when finished, remove to paper towels to absorb excess oil.
  • 14 serve and enjoy!

Chocolate Euphoria Cookie Bars

Total Time: 35 mins Preparation Time: 15 mins Cook Time: 20 mins

Ingredients

  • 1/2 cup butter (one stick, 4 oz, 1/4 pound)
  • 1 1/2 cups chocolate wafer crumbs (or oreo cookie crumbs)
  • 1 cup semi-sweet chocolate chips
  • 2 cups mini marshmallows
  • 1 (14 ounce) can sweetened condensed milk (not evaporated milk)
  • 1 cup chocolate chips (or vanilla chips)
  • 2 cups cocoa puffs cereal (or any other chocolate cereal)
  • 1 cup milk chocolate chips

Recipe

  • 1 preheat oven 350 degrees f rack in middle position.
  • 2 spray 9x13 inch pan with non-stick cooking spray.
  • 3 melt butter in a small bowl in microwave on high for 50 seconds.
  • 4 add cookie crumbs to melted butter. stir until everything is well moistened.
  • 5 spread butter and cookie crumb mixture in the bottom of cake pan and spread evenly.
  • 6 sprinkle the semi-chocolate chips evenly on top of crumb mixture.
  • 7 arrange mini marshmallows on top of chips as evenly as you can.
  • 8 open can of sweetened condensed milk and pour over the top of marshmallows as evenly as you can.
  • 9 sprinkle chocolate chips on top, trying for an even distribution.
  • 10 measure chocolate cereal an spread on top, again as evenly as you can.
  • 11 sprinkle milk chocolate chips on top.
  • 12 press everything in the pan down with the flat blade of a metal spatula (if the cereal crunches a bit that is ok).
  • 13 bake 350 degrees for 20-25 minutes.
  • 14 remove bars from oven and let cool in the pan. when bars reach room temperature, cut into brownie-sized pieces right in the pan. don't take them out unless you are going to eat them right away.
  • 15 you can now refrigerate the cookie bars in the ban to set up firmly.
  • 16 if you do not cut before refrigeration, you may have a problem. they're very firm when chilled.

Caramel Apple Squares

Ingredients

  • Servings: 10
  • 11 graham cracker squares
  • 22 kraft caramels, unwrapped
  • 3 tablespoons milk
  • 2/3 cup chopped walnuts
  • 1 cup cold milk
  • 3 ounces size instant vanilla pudding
  • 2 cups thawed cool whip
  • 2 cups diced red apples
  • 1/4 cup kraft miniature marshmallow

Recipe

  • 1 arrange crackers in bottom of 12x8 baking dish, cutting crackers to fit if necessary.
  • 2 microwave 15 of the caramels and 2 tbls of the milk in a small microwaveable bowl on high 1-1 1/2 minutes or until caramels are melted and mixture is smooth, stirring after 1 minute.
  • 3 spread over crackers, sprinkle with 1/3 cup of the walnuts. refrigerate.
  • 4 pour 1 cup of milk into large bowl, add pudding mix, beat with wire whisk 1-2 minutes.
  • 5 gently stir in 1 cup of whipped topping. spread over caramel layer.
  • 6 refrigerate at least 3 hours or until ready to serve.
  • 7 garnish with remaining cool whip, 1/3 cup chopped walnuts, apples and marshmallows. microwave remaining 7 caramels and 1 tbls milk in small microwaveable bowl on high 1 minut or until caramels are melted and mixture is smooth, stirring after 30 seconds.
  • 8 drizzle over top of dessert. store leftover dessert in refrigerator.

Chocolate Fire Cake

Total Time: 50 mins Preparation Time: 15 mins Cook Time: 35 mins

Ingredients

  • 1 cup sugar
  • 1/3 cup butter, softened
  • 1 large egg
  • 1 1/4 cups all-purpose flour
  • 6 tablespoons unsweetened cocoa
  • 1 1/2 teaspoons baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground red pepper
  • 1/4 teaspoon salt
  • 3/4 cup 1% low-fat milk
  • 2 teaspoons vanilla extract
  • baking spray with flour
  • 2 tablespoons semi-sweet chocolate chips

Recipe

  • 1 preheat oven to 350*.
  • 2 beat sugar and butter at medium speed of a mixer until well-blended (about 5 minutes).
  • 3 add egg, beating well, lightly spoon flour into dry measuring cups; level with a knife.
  • 4 combine flour and next 5 ingredients, stirring well with a whisk. combine milk and vanilla.
  • 5 add flour mixture to sugar mixture alternately with milk mixture, beginning and ending with flour mixture.
  • 6 pour batter into a 9-inch round cake pan coated with baking spray. bake at 350* for 35 minutes or until a wooden pick inserted in center comes out clean.
  • 7 cool in pan 10 minutes on a wire rack; remove from pan. cool cake completely on wire rack.
  • 8 place chips in a small heavy-duty zip-top plastic bag, and seal. submerge bag in very hot water until chips melt, or microwave at high 1 minute or until melted. snip a tiny hole in 1 corner of bag; drizzle chocolate over cake.

Cinnamon-apple Chex Mix

Total Time: 15 mins Preparation Time: 8 mins Cook Time: 7 mins

Ingredients

  • 5 cups wheat chex
  • 1 cup lightly salted whole almond
  • 1/4 cup butter or 1/4 cup margarine
  • 1/3 cup packed brown sugar
  • 2 tablespoons light corn syrup
  • 1 teaspoon ground cinnamon
  • 1 cup chopped dried apple
  • 1/2 cup vanilla yogurt-covered raisins

Recipe

  • 1 in large microwavable bowl, mix cereal and almonds.
  • 2 in 2-cup microwavable measuring cup, microwave butter, brown sugar, corn syrup and cinnamon uncovered on high about 2 minutes, stirring after 1 minute, until mixture is boiling; stir. pour over cereal mixture, stirring until evenly coated. microwave uncovered on high 3 minutes, stirring and scraping bowl after every minute. stir in apples; microwave uncovered on high about 2 minutes or until apples just begin to brown on edges.
  • 3 spread on waxed paper or foil to cool, about 5 minutes. place in serving bowl; stir in raisins. store in airtight container.

Chili's Chicken Fajita Nachos (copycat)

Total Time: 45 mins Preparation Time: 15 mins Cook Time: 30 mins

Ingredients

  • Servings: 2
  • 16 tortilla chips (large and whole, not broken)
  • 1 (1 ounce) envelope of mccormicks fajita seasoning mix
  • 1 uncooked boneless chicken breast (cut in strips)
  • 1 vidalia onion (cut in half and sliced)
  • 1 bell pepper (cut in half, deseeded, then sliced into strips)
  • 1 jalapeno (deseeded and cut in slices)
  • 1/2 cup monterey jack cheese (shredded)
  • 1/2 cup mild cheddar cheese (shredded)
  • 1 cup lettuce (shredded)
  • 1/2 cup of pace thick & chunky salsa
  • 2 tablespoons sour cream
  • 2 tablespoons guacamole (optional)

Recipe

  • 1 saute chicken, onion, & peppers as directed on the fajita seasoning pack.
  • 2 when done, drain mixture and set aside.
  • 3 place tortilla chips in a circle on a large plate or platter that is oven proof or microwaveable.
  • 4 layer chicken, onions, & peppers on top of the tortilla chips.
  • 5 next, layer shredded cheeses on top of the chicken, and top with jalepenos.
  • 6 place plate in oven (350° just until cheeses are melted) or microwave on medium.
  • 7 when nachos are ready, add the shredded lettuce (in the middle of the plate or platter).
  • 8 top the lettuce with the salsa & the sour cream (and if you like, add guacamole).
  • 9 grab a cold one and enjoy!

Chocolate Flan Cake

Total Time: 2 hrs 25 mins Preparation Time: 25 mins Cook Time: 2 hrs

Ingredients

  • 1 (18 ounce) box chocolate devil's food cake mix
  • 1 1/2 cups water (amount per cake mix directions)
  • 1/2 cup oil (amount per cake mix directions)
  • 3 eggs (amount per cake mix directions)
  • 1 (11 ounce) jar cajeta caramel topping or 1 (11 ounce) jar smucker caramel topping
  • 1 (14 ounce) can sweetened condensed milk
  • 1 (12 ounce) can evaporated milk
  • 1/2 cup fresh milk
  • 1 (8 ounce) package cream cheese, room temperature
  • 1 teaspoon vanilla
  • 5 eggs

Recipe

  • 1 heat oven to 350ºf.
  • 2 spray a large 12-cup bundt pan with nonstick coating.
  • 3 soften the cajeta in the jar in the microwave and pour into the prepared pan.
  • 4 prepare cake mix according to package directions.
  • 5 pour the cake batter into the cake pan over the cajeta.
  • 6 to make the flan: pour condensed, evaporated and fresh milks into a blender with the cream cheese, vanilla and eggs.
  • 7 mix well.
  • 8 pour the flan mixture very slowly over the cake batter.
  • 9 spray aluminum foil with non-stick spray (like pam);.
  • 10 cover the pan tightly with aluminum foil.
  • 11 (covering tightly is very important.) set the bundt pan into a large pan and set on the oven rack and slide into the oven.
  • 12 carefully pour hot water into the larger pan to a depth of 2 inches (the bundt pan will be sitting in 2 inches of water).
  • 13 bake cake for 2 hours (test); do not uncover during this time.
  • 14 after two hours, remove cake from water and allow to cool for 15 minutes. peel off the aluminum foil.
  • 15 invert cake onto a large plate with rim.
  • 16 the cajeta will drip down the sides of the cake.
  • 17 cool completely then refrigerate. refrigerate leftovers.
  • 18 note: even though the flan is poured on top of the cake batter, it will sink to the bottom of the pan.

Cinnamon Tortillas

  • 1 teaspoon cinnamon
  • 2 tablespoons sugar
  • 8 soft flour tortillas, 8 inch diameter
  • butter, softened

Recipe

  • 1 mix cinnamon and sugar.
  • 2 butter tortillas lightly and sprinkle them with the cinnamon and sugar mixture.

  • 1 brown the beef and drain.
  • 2 add taco seasoning and 1/2 cup water and cook until all liquid is gone.
  • 3 meanwhile, drain about half of the liquid off of the pinto beans and then heat in a pan.
  • 4 when beans start to simmer, lightly mash until you get the desired consistency (i like some whole beans left). season to taste with salt, about 1 teaspoon.
  • 5 lightly heat one tortilla over burner until pliable.
  • 6 spread some beans down the center or tortilla and top with some seasoned meat. sprinkle on some onions and any other options you'd like. (save some for on top!).

  • 1 1/2 cups hot water

  • 1 preheat oven to 375.
  • 2 whisk together cake mix and spices in a mixing bowl.
  • 3 blend in milk, making sure that you don't leave any "clumps" of cake mix. fold in chopped apple.
  • 4 spread batter in greased 9" square pan.
  • 5 stir brown sugar into hot water until dissolved. (i heat the water in the microwave in a glass measuring cup, then pour it and the brown sugar into the mixing bowl that i just scraped the batter out of to save washing another pot or bowl.).

Chocolate Fudge Brownies

  • 4 (1 ounce) unsweetened chocolate squares
  • 1 cup butter, softened
  • 2 cups sugar
  • 4 large eggs
  • 1 cup all-purpose flour
  • 1 teaspoon vanilla extract
  • 1 cup semisweet chocolate morsel

  • 1 microwave chocolate squares in a microwave-safe bowl at medium (50% power) 1 1/2 minutes, stirring at 30-second intervals until melted. stir until smooth.
  • 2 beat butter and sugar at medium speed with an electric mixer until light and fluffy. add eggs, 1 at a time, beating just until blended after each addition. add melted chocolate, beating just until blended.
  • 3 add flour, beating at low speed just until blended. stir in vanilla and chocolate morsels. spread batter into a greased and floured 13- x 9-inch pan.
  • 4 bake at 350° for 35 to 40 minutes or until center is set. cool completely on wire rack. cut into squares.
  • 5 praline-pecan brownies: prepare and bake chocolate fudge brownies as directed; cool completely. spread uncut brownies evenly with chocolate glaze; sprinkle evenly with 2 cups coarsely chopped praline pecans.
  • 6 caramel-coconut-pecan brownies: prepare batter for chocolate fudge brownies as directed; spread batter into a greased and floured 13- x 9-inch pan. sprinkle batter evenly with 2 cups sweetened flaked coconut, 1 (12-ounce) package semisweet chocolate morsels, and 1 1/2 cups chopped pecans. drizzle evenly with 1 (14-ounce) can sweetened condensed milk. bake at 350° for 50 to 55 minutes or until golden brown and center is set. makes 32 brownies. prep: 20 min., bake: 55 minute.
  • 7 chocolate fudge cheesecake: sprinkle 1/2 cup toasted, chopped pecans evenly over the bottom of each of 2 greased and floured 9-inch springform pans. prepare chocolate fudge brownie batter as directed. divide batter evenly between pans, spreading over chopped pecans.
  • 8 beat 4 (8-ounce) packages of softened cream cheese at medium speed with an electric mixer until smooth; add 1 3/4 cups sugar, beating until blended. add 7 large eggs, 1 at a time, beating just until blended after each addition. stir in 2 teaspoons vanilla extract. divide cream cheese mixture evenly between each pan, spreading over brownie batter.
  • 9 bake at 325° for 1 hour and 15 minutes or until set. remove from oven; cool completely on wire racks. spread top of each cooled cheesecake with 1 recipe chocolate glaze; cover and chill 8 hours. remove sides of pans before serving. garnish, if desired, with fresh mint sprigs and sliced strawberries. makes 2 (9-inch) cheesecakes. prep: 30 min.; bake: 1 hr., 15 min.; chill: 8 hours.
  • 10 note: we topped each cheesecake with 1 full recipe of chocolate glaze. for a thinner layer of chocolate on top, divide 1 recipe of glaze between the two cakes.
  • 11 peppermint brownie tarts: prepare batter for chocolate fudge brownies as directed. divide batter evenly between 2 greased and floured 9-inch tart pans with removable bottoms. bake at 350° for 20 minutes or until center is set. cool completely on wire racks.
  • 12 beat 1/2 cup softened butter at medium speed with an electric mixer until creamy; gradually add 1 (16-ounce) package powdered sugar alternately with 1/3 cup milk, beating at low speed after each addition. stir in 1/4 teaspoon peppermint oil. divide butter mixture between each tart, spreading evenly over cooled brownies in pans; cover and chill 1 hour or until firm. divide 1 recipe chocolate glaze evenly between each tart, spreading over chilled butter mixture in pans. sprinkle 1/2 cup crushed peppermint candy canes around outer edge of each tart. makes 2 (9-inch) tarts. prep: 30 min., bake: 20 min., chill: 1 hours.
