Chocolatey Goodness In A Crust

Ingredients

  • Servings: 8
  • 1 (14 ounce) can sweetened condensed milk
  • 4 unsweetened chocolate squares
  • 8 ounces extra thick cool whip topping, thawed
  • 1 prepared graham cracker crust

Recipe

  • 1 melt chocolate in microwave according to your manufacturer's directions. (i used 2 minutes and it worked great.).
  • 2 stir evaporated milk into chocolate until blended.
  • 3 fold in cool whip and pour into pie shell.
  • 4 chill for at least 2 hours or overnight.
  • 5 if desired, pie can be decorated with whipped topping and/or semi-sweet chocolate shavings.

Chokecherry Sauce

Total Time: 5 mins Preparation Time: 5 mins

Ingredients

  • 3/4 cup prepared ketchup
  • 3/4 cup chokecherry jelly (from recipe of your choice)
  • 1 tablespoon yellow mustard
  • 1 teaspoon soy sauce
  • 1/2 teaspoon ground ginger
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon grated nutmeg
  • 1 tablespoon cider vinegar

Recipe

  • 1 heat sauce ingredients in pot on stove or bowl in microwave until bubbling.
  • 2 add chunks of cooked meat of choice (fried duck or sausage is wonderful).
  • 3 simmer for a few minutes, then keep hot into a chafing dish, or reheat as needed.
  • 4 serve with picks for an appetizer.

Carol Ann's Bacon Stuffed Mushrooms

Ingredients

  • 20 mushrooms (pop stems and chop stems)
  • 1 medium onion (chopped)
  • 1 package bacon (cooked very crisp and crumbled)
  • 1 1/2 packages cream cheese (can use light)
  • parmesan cheese

Recipe

  • 1 microwave onion and chopped mushroom for 2 minutes on high.
  • 2 stir and cook a bit longer.
  • 3 while hot, mix in cream cheese.
  • 4 add bacon.
  • 5 spoon into mushroom caps.
  • 6 sprinkle freshly grated parmesan cheese on top.
  • 7 cover with foil.

Chocolate Berry Trifle With Toasted Almonds

Ingredients

  • Servings: 6
  • 3 cups 1% low-fat milk
  • 12 ounces low-fat cream cheese
  • 6 1/4 ounces chocolate pudding mix
  • 6 amaretti cookies, crushed
  • 2 cups mixed berries
  • 1/2 cup sliced almonds, toasted

Recipe

  • 1 in a blender blend first 3 ingredients till smooth.
  • 2 place in a microwave safe dish and micro for 10 minutes whisking a couple of times.
  • 3 cover with plastic wrap and chill.
  • 4 when cooled place 1/2 in a trifle bowl.
  • 5 top with 3 crushed cookies, 1 cup berries, 1/4 cup almonds, following with the rest of the pudding, 3 crushed cookies, 1 cup berries, 1/4 cup almonds.

Cholly's World -famous Gingerbread Cake

Ingredients

  • Servings: 8
  • 1 cup dark molasses
  • 1 teaspoon baking soda
  • 2 1/2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1 1/2 teaspoons ground cinnamon
  • 1 teaspoon ground ginger
  • 1/2 teaspoon salt
  • 1/8 teaspoon ground cloves
  • 1/2 cup butter, at room temperature
  • 1 cup firmly packed brown sugar
  • 2 large eggs

Recipe

  • 1 in a 2-quart pan over high heat, bring 1 cup water to a boil.
  • 2 remove from heat and stir in molasses and baking soda.
  • 3 after mixture stops foaming, stir in 1/2 cup cold water; let cool to room temperature, stirring often (about 10 minutes).
  • 4 (this can also be done easily in microwave).
  • 5 in a small bowl, whisk together dry ingredients.
  • 6 preheat oven to 325 degrees f.

Coffee Ganache

Ingredients

  • 2 tablespoons powdered instant espresso
  • 1/4 cup boiling water
  • 1 1/2 cups heavy cream
  • 2 tablespoons light corn syrup
  • 2 2/3 cups finely chopped dark chocolate

Recipe

  • 1 stir together the instant espresso and boiling water until smooth. set aside.
  • 2 combine the cream and the corn syrup in a heavy saucepan and bring to a boil over medium heat. remove the pan from the heat and stir in the espresso. pour the mixture over the chocolate and let sit, covered, for 2 to 3 minutes. stir until the chocolate is completely melted and the sauce is very smooth.
  • 3 keep warm until ready to use, or let cool to room temperature and store in a container with a tight-fitting lid in the refrigerator for up to 2 weeks. reheat chilled sauce over very low heat on the stovetop or in the microwave until warm enough to pour easily.

  • 1 cup semi-sweet chocolate chips
  • 3 tablespoons corn syrup
  • 1/2 cup bourbon
  • 2 1/2 cups crushed vanilla wafer cookies
  • 1 cup finely crushed pecans
  • 1/2 cup sifted confectioners' sugar
  • 1/4 cup granulated sugar

Recipe

  • 1 place chocolate chips in microwave safe bowl. microwave on half power for one minute. stir, and continue microwaving on half power, check every 30 seconds, until completely melted (approx. 2-3 minutes). stir in corn syrup and bourbon.
  • 2 in large bowl, mix together crushed vanilla wafers, confectioners' sugar, and chopped nuts. blend in chocolate mixture until all dry ingredients have been well moistened. let stand at room temperature for 30 minutes.

  • 1/4 cup butter, melted
  • 1/2 cup sugar
  • 1 egg
  • 1 cup milk
  • 2 cups flour
  • 2 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 cup sugar
  • 2 cups boiling water
  • 2 tablespoons butter
  • 2 tablespoons flour
  • 1 teaspoon vanilla

Recipe

  • 1 preheat oven to 350 degrees.
  • 2 for the cake, combine first seven ingredients (butter, sugar, egg, milk, flour, baking powder and salt). pour batter into a greased 13" x 9" cake pan. bake for 30 minutes or until cake tester inserted into center of cake comes out clean.
  • 3 to make the sauce, combine the last five ingredients (sugar, boiling water, butter, flour and vanilla) in a saucepan over medium heat until sugar is dissolved and sauce thickens slightly. remove from heat. the sauce will be thin.
  • 4 slice cake into 2-inch pieces and place each piece in a bowl to serve.
  • 5 pour a liberal amount of the sauce over each warm piece of cake and serve immediately. do not pour sauce over entire cake, as it will become soggy.
  • 6 store left-over cake at room temperature for up to three days. store sauce in refrigerator and warm in microwave when re-use desired.

Chicken Tortilla Casserole California-style

Ingredients

  • Servings: 10
  • 4 whole chicken breasts (skin removed)
  • 1 dozen flour tortilla
  • 1 (10 3/4 ounce) can cream of mushroom soup
  • 1 (10 3/4 ounce) can cream of chicken soup
  • 1 small onion, chopped
  • 1 (15 ounce) can chili without beans
  • 1/2 cup milk
  • 3/4 cup green chili salsa
  • 1/2 lb grated sharp cheddar cheese
  • 1/2 lb grated monterey jack cheese

Recipe

  • 1 microwave (or otherwise cook) chicken until tender.
  • 2 bone and lay in chunks in a greased large shallow baking dish.
  • 3 break up 1 dozen flour tortillas and lay them on top of the chicken.
  • 4 mix together the soups, onion, chili, milk and salsa.
  • 5 spread this mixture evenly over the top of the chicken and tortillas.
  • 6 sprinkle both cheeses on top of the casserole.
  • 7 you can freeze the casserole at this point if you wish.

Coconut Curried Chicken

Ingredients

  • 1 lb boneless skinless chicken breast
  • 2 tablespoons curry powder
  • 1/2 cup canned light coconut milk
  • 1 tablespoon canned tomato paste
  • 2 teaspoons vegetable oil
  • 3 garlic cloves, minced
  • 1 small onion, chopped
  • 1 teaspoon chopped fresh ginger
  • 1/8 teaspoon cayenne pepper
  • 1/2 teaspoon salt

Recipe

  • 1 cut chicken breasts into bite-size pieces.
  • 2 in a 2-quart, microwavable dish, stir the chicken with the oil until it's good and greasy.
  • 3 stir in the curry powder, garlic, onion, ginger, and cayenne pepper.
  • 4 nuke for 3 to 5 minutes, stirring a few times, until the spices are fragrant and the chicken is almost cooked through.

Recipe

  • 1 microwave 8 squares chopped chocolate in large microwavable bowl on medium for 3-4 minutes.

Recipe

  • 1 in a microwave safe bowl, heat chips and oil at 50% power for 1 minute; stir. microwave 10 to 20 seconds longer or until chips are melted, stirring occasionally.
  • 2 cool for 5 minutes.
  • 3 stir in baking bits or pretzels. spread onto wax paper lined baking sheet. chill for 10 minutes. remove from refrigerator; break into pieces.

Bisquick Oatmeal Muffins

  • 2 cups bisquick
  • 3 tablespoons sugar
  • 3/4 cup quick-cooking oats
  • 1 egg
  • 2/3 cup milk

Recipe

  • 1 heat oven to 400.
  • 2 grease 12 muffin cups or use paper liners.
  • 3 mix all ingredients with a spoon to combine.
  • 4 beat for about 30 seconds.
  • 5 fill muffin cups 2/3 full with batter.
  • 6 bake 15 to 20 minutes.
  • 7 remove from pan immediately, split and butter each muffin.
  • 8 cold muffins warm well in the microwave (20-30 seconds on high).

Carol's Candy Bark

Ingredients

  • 1 lb chocolate (disks)
  • 1 cup small pretzels
  • 1 cup m&m's plain chocolate candy

Recipe

  • 1 line a 11 by 17 jelly roll pan with foil, lightly spray with cooking oil.
  • 2 put the chocolate disks in a large microwave safe bowl.
  • 3 microwave for one minute and stir.
  • 4 microwave for 30 more seconds and stir.
  • 5 continue to microwave for 30 second intervals, stirring after each until chocolate is just melted.
  • 6 gently stir in the mini pretzels until well mixed.
  • 7 add the m& m candies and stir gently and quickly (you do not want them to melt when you are stirring them!).
  • 8 pour the candy mix onto the foil lined pan, using a spatula to spread to a thin layer.

Butterscotch-ginger Ice Cream Sauce For Two

  • 1/3 cup packed brown sugar
  • 2 teaspoons cornstarch
  • 1/4 teaspoon ground ginger
  • 3 tablespoons honey
  • 1/4 cup half-and-half cream

  • 2 tablespoons finely chopped crystallized ginger

Recipe

  • 2 1/2 teaspoons pumpkin pie spice

Recipe

  • 1 heat oven to 350°f grease pie plate, 9 inch or 10 inch. beat all ingredients 1 minute in blender on high or 2 minutes with hand beater. pour into pie plate. bake until knife inserted in center comes out clean, 50 to 55 minutes; cool.

  • 1 medium apple
  • 1/4 cup fat-free cheddar cheese

  • 1 core and chop the apple into small bite size pieces and place in a small zip-loc bag. sprinkle a dash of cinnamon in the bag with the apples and put it in the microwave on high for 4 minutes, leaving a corner of the zip-loc bag open. spray a small omelet skillet with nonstick cooking spray and cook the 6 egg whites while the apple is cooking in the microwave.

Bisquick Fluffy &cheesy Biscuits

  • 2 1/4 cups bisquick baking mix
  • 2/3 cup milk (whole for best and fluffiest taste)
  • 1 -1 1/2 cup mild cheddar cheese or 1 -1 1/2 cup pepper jack cheese

  • 1 preheat oven to 425°f.
  • 2 in large bowl, mix bisquick, milk, and cheese together.

Butterscotch Chocolate Coconut Muesli Clusters

Ingredients

  • 1/2 cup chocolate chips (i used pieces of a choc bar)
  • 1/4 cup butterscotch chips
  • 3/4 cup muesli (use your favourite, mine included different flakes, amaranth, poppy seeds and goji berries)
  • 1/4 cup desiccated coconut (unsweetened)

Recipe

  • 1 in a microwave safe bowl combine chocolate chips and butterscotch chips. melt them and stir until smooth (in my microwave it took 1 1/2 minutes on high). you can also do this over a warm water bath.
  • 2 stir in muesli and coconut until everything is well coated. if you find that the mixture is too wet, simply add some more muesli by the tbs until it reaches a nice thick consistency.
  • 3 drop by tabelspoonfuls onto a paper-lined baking sheet. allow to dry for about 1 1/2 hours or until set (this might depend on the weather).
  • 4 enjoy.

Bean And Bacon Fiesta Dip

Ingredients

  • 8 slices bacon
  • 1 (16 ounce) can refried beans
  • 1 (4 1/2 ounce) can chopped green chilies, drained
  • 1 cup frozen corn kernels
  • 1 (15 ounce) can black beans, drained, rinsed
  • 1 (16 ounce) jar thick salsa
  • 1 1/2 cups shredded mexican blend cheese
  • sour cream (optional)
  • corn tortilla chips

Recipe

  • 1 cook bacon until crisp; drain on paper towels. set 2 slices of bacon aside and crumble the remaining 6 slices.
  • 2 spray 8 inch square microwaveable dish with cooking spray. in medium bowl, mix refried beans, green chiles and crumbled bacon. spread mixture evenly in dish. sprinkle frozen corn and black beans evenly over refried bean mixture. pour salsa over top. sprinkle cheese over salsa. crumble remaining 2 slices of bacon; sprinkle over cheese.
  • 3 microwave on high for 10-15 minutes or until cheese is bubbly and mixture is thoroughly heated. garnish with sour cream and serve with tortilla chips.

Cream Of Wheat Cake (basboosa)

Ingredients

  • 2 cups semolina flour (cream of wheat)
  • 1/3 teaspoon baking powder
  • 1 cup granulated sugar
  • 1 cup sweetened flaked coconut
  • 1/4 cup butter, melted
  • 1 cup plain yogurt
  • 1/4 cup milk
  • 1 cup water
  • 1 cup granulated sugar
  • 1 tablespoon rose water or 1 tablespoon lemon juice

Recipe

  • 1 preheat oven to 350 degees f (175 degrees c). grease an 8 inch square baking dish.
  • 2 in a large bowl, mix together the semolina flour (cream of wheat), baking powder, 1 cup sugar, coconut and butter. add the yogurt and milk; mix until all is well moistened, but not runny. it should be the consistency of brownie batter. if it's too dry, add a little more milk.
  • 3 spread into prepared baking dish, smooth the top.
  • 4 bake 45 minutes until golden brown.
  • 5 while it is baking, make the syrup: combine the water and sugar, bring to a boil and boil for at least 5 minutes. you can do this on top of the stove or in the microwave.
  • 6 when it is finished baking, pour the syrup over the hot cake and place back into the oven for 5 minutes or until the syrup has been fully absorbed.
  • 7 allow to cool to room temperature before serving.

Coffee Foam In Microwave

Recipe

  • 1 find a jar with a lid and fill it with as much milk as you normally like in your coffee (or other hot beverage!). the milk should fill the jar no more than half way to allow room for the foam.
  • 2 shake the jar with the lid on as hard as you can until the milk has become frothy and doubled in size. this takes us about 30 seconds.
  • 3 take the lid off and microwave for 30 seconds. the foam will rise to the top of the milk and the heat from the microwave will help stabilize it.
  • 4 pour the milk into your coffee using a spoon to hold back the foam. then scoop the foam on top!

Chocolate Banana Tofu Mousse/dessert

Ingredients

  • 1 cup semi-sweet chocolate chips
  • 1 (10 ounce) box silken tofu, soft variety
  • 2 large ripe bananas, sliced
  • 1 teaspoon vanilla extract
  • 2 -3 tablespoons light brown sugar
  • 1/4 teaspoon salt
  • 1 teaspoon raspberry vinegar

Recipe

  • 1 melt chocolate chips in a double boiler or in microwave.
  • 2 place tofu and 1/4 of banana chunks in blender or food processor and puree.
  • 3 add remaining banana in small batches and process until smooth.
  • 4 add vanilla, brown sugar, salt and vinegar and blend.
  • 5 add melted chocolate chips (will be warm), pureeing until smooth and uniform texture.
  • 6 adjust brown sugar to taste.
  • 7 transfer to container and cover.
  • 8 chill at least 2 hours prior to serving.

Ingredients

  • 3 cups shredded cooked chicken
  • 1 (4 ounce) can chopped green chilies
  • 1 (2 1/4 ounce) can sliced black olives, divided
  • 1 cup chicken broth
  • 1 (10 3/4 ounce) can condensed cream of mushroom soup, undiluted
  • 1 (10 3/4 ounce) can condensed cream of chicken soup, undiluted
  • 1 small onion, finely chopped
  • 12 corn tortillas

Recipe

  • 1 chop the carrots into chunks and place the carrots and water in a bowl and cover the top with cling wrap. place in the microwave and heat for 15 min on high.
  • 2 preheat the oven to 350 degrees f/180 degrees celsius lightly grease the bottom of two mini loaf pans or one medium loaf pan.
  • 3 place in a large mixing bowl and mash with a fork or potato masher. don't worry if it's not very smooth.
  • 4 add the oil, honey and applesauce and mix.
  • 5 add the flour and salt and ginger powder. mix until even.

Cheesy Chicken Burrito

  • 90 g long grain rice
  • 15 ml vegetable oil
  • 1 onion
  • 200 g canned tomatoes
  • 400 g chicken breasts
  • 150 g cheddar cheese
  • 60 ml sour cream
  • 2 1/2 ml chili powder
  • 5 ml cumin
  • 326 g flour tortillas
  • 1 pinch salt and pepper

Recipe

  • 1 half fill a pan of water and bring to the boil.
  • 2 sprinkle the water with salt and add the rice. cook for 8 minutes.
  • 3 chop onion and grate the cheese.
  • 4 heat oil in a large pan then add the chopped onion, chilli powder and cumin for 2-3 minutes.
  • 5 drain the rice then add to the large pan along with the tomatoes. cook until the juice has absorbed.
  • 6 set pan aside.
  • 7 put chicken breasts into another large pan and pour in enough water to cover and bring to the boil. simmer for 10-15 minutes.
  • 8 place the chicken on a plate and using forks, shred the chicken.
  • 9 now add then chicken to the rice filling, along with the grated cheese.
  • 10 stir in the soured cream to the filling.
  • 11 wrap the tortillas in cling film and heat in a microwave for 1 minute.
  • 12 spoon one eighth of the filling into the centre of the tortilla and fold both sides. fold from the bottom up and the top down to form a parcel.

Cheesy Chicken Broccoli Linguini

  • 1 lb linguine, dry weight
  • 15 ounces cheese whiz
  • 10 ounces canned low sodium chicken broth
  • 1/2 cup canned mushroom slices, drained

  • 3 tablespoons olive oil, divided
  • 1/2 teaspoon garlic powder
  • 2 large fresh garlic cloves, minced
  • 3 tablespoons butter, divided
  • 1 tablespoon red onion, chopped
  • 1/2 teaspoon hot sauce, west indies-type (yellow hot sauce, substitute ( 1/2 teaspoon red pepper flakes)
  • 6 quarts water, divided
  • 1/2 teaspoon salt
  • fresh parsley sprig, garnish

Recipe

  • 1 boil the pasta in 3 quarts of salted water (using the 1/2 teaspoon of salt), also adding 1 teaspoon of the olive oil to the water. drain the pasta when it is tender and return it to the pan. add 2 tablespoons of the butter and toss as it melts. cover and set aside.
  • 2 boil three more quarts of plain water. boil the chicken breasts 25-30 minutes. drain and set aside until chicken cools and then chop it into 3/4" chunks.
  • 3 in a very large no-stick skillet, pour in the remaining olive oil (2 2/3 tablespoons) and the remaining butter (1 tablespoon). over medium heat, sauté the onion for one minute and then add the garlic and garlic powder. after 30 seconds more, add the chicken stock and cheese whiz.
  • 4 as soon as the cheese whiz is melted and blended, add in the chicken and reduce heat to a simmer.
  • 5 while the chicken is simmering, place the broccoli florets in a microwave-proof bowl, add two tablespoons of water and cover with cling wrap. steam the broccoli for 2 minutes on the high setting. drain the broccoli and add it to the chicken in the cheese sauce.
  • 6 add the mushrooms and the hot sauce (or pepper flakes). allow to simmer, covered, for five more minutes.
  • 7 serve by plating up individual plates of linguini and pouring the chicken-broccoli-cheese sauce over the top. garnish each plate with parsley.
  • 8 note: the west indies hot sauce is fairly mild so do not substitute habanero-based or scotch bonnet-based sauces which are very hot. i like the west indies sauce for the flavor it imparts and the fact that it does not change the yellow color of the dish, but you could also substitute 1/4 teaspoon of regular ground red pepper, if you prefer that over red pepper flakes, without making the dish spicy hot.

  • 1 cup strained confectioners' sugar
  • 3 tablespoons boiling water (or more)
  • 2 tablespoons light corn syrup
  • 3/4 teaspoon vanilla extract

  • 1 position rack in oven to lowest position and preheat to 350.
  • 2 butter a 9 inch spring form pan and line 8 inch parchment and butter the parchment.
  • 3 place the broken chocolate hot water and espresso powder in a 1 qt heatproof glass bowl and melt in microwave on medium power., stir occasionally until chocolate is smooth. when chocolate is melted gradually pour in the canola oil and blend with small whisk until incorporated. set aside to cool.
  • 4 whisk together the flour ,baking powder salt and baking soda in medium bowl with whisk.set aside.
  • 5 in chilled bowl, with chilled whip attachment, whip 3/4 c of the cream on medium speed until soft peaks. add vanilla and slowly add the remaining cream and beat until firm peaks., but is still creamy. do not over beat of it will be lumpy.
  • 6 place eggs in a large bowl and beat with electric mixer on medium speed for 1 minute.add superfine sugar taking about 30 seconds to blend.beat for 1 minute longer.
  • 7 reduce mixer to medium low and pour in melted chocolate. mix for 2 minutes.scrape down sides if necessary. chocolate mixture is ready when it thickens slightly.
  • 8 reduce mixer to low and add flour , dividing the flour in 3 parts and the whipped cream in 2 parts.starting and ending with flour.scrape side of bowl as needed but don't overmix. remove bowl from mixer and gently fold in 1/2 cup snocaps candy.
  • 9 empty batter into a buttered pan .sprinkle 1/4 c snow-caps over the top, but don't press down. bake 42-45 mins baking quickly in the last 2-3 minutes. a few particles of cake should cling to the toothpick when inserting in the center.
  • 10 remove cake from oven and place pan on cooling rack. let stand 20 minutes. remove the rim of the pan and let stand 10 more minutes. then using the cooling rack invert the cake on cooling rack. remove the metal disk and parchment paper.
  • 11 place an 8 inch cardboard round on top of cake using a plate turn the cake topside and place on a sheet pan. lined with wax paper.
  • 12 make the glaze:.
  • 13 place chocolates and butter in a 1 at glass bowl and melt in microwave.
  • 14 using whisk add sugar and hot water, stirring until smooth.
  • 15 blend in corn syrup and then the vanilla. at this point the glaze should be glossy and pourable. if it's too thick add some water.
  • 16 glaze sides of cake first, using a spoon to drizzle around the cake.
  • 17 glaze entire top of cake and smooth with spoon.
  • 18 sprinkle remaining snow caps over the top of the cake.
  • 19 decorate the sides with snow caps as well in any pattern you choose.
  • 20 serve with whipped cream.

Corn Side Dish

  • 1 (10 ounce) package frozen corn

  • 1 tomato, finely chopped (med to large)
  • 2 tablespoons brown sugar
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt

  • 1 dash cayenne pepper (optional)

  • 1 in 2-1/2 to 3 qt casserole dish, toss celery and green pepper in oil.

  • 4 cups powdered sugar
  • 1 cup nuts, finely chopped
  • 1/4 cup bourbon
  • 1 (6 ounce) package milk chocolate chips

  • 1 melt butter/margarine in microwave in medium bowl mix in sugar, nuts and bourbon.
  • 2 refrigerate until firm.
  • 3 after chilled, shape into 1-inch balls.
  • 4 refrigerate again until firm.
  • 5 melt chocolate chips and half-and-half together in microwave (at medium-high (70%) for about 1-3 minutes, stirring occasionally until chips are melted) or in double boiler.
  • 6 when your mixture is homogenized, drizzle chocolate over candies.
  • 7 (you may want to let chocolate mixture cool slighly, but not to the point of solidifying.) alternately, i believe the balls could be dipped in the sauce.

  • 1 zest one of the oranges; set zest aside.
  • 2 slice off the ends of each of the oranges. working with one orange at a time, set an orange on end; with a small knife, slice off and discard the peel and the pith. holding the orange in your hand, use a knife to cut the orange segments away from their membranes. place the segments in a bowl and set aside.
  • 3 over a separate bowl, squeeze the remaining orange pulp to extract any remaining juice and repeat with the second orange.
  • 4 whisk 4 tablespoons oil, the lemon juice, oregano and spring onion into the orange juice and season with salt and pepper; set the dressing aside.

  • 1 cream butter in a large bowl.
  • 2 beat in the sugar, egg and essence.
  • 3 fold in the flour and cocoa powder until you get a thick paste-like consistency of the dough.
  • 4 divide the dough into walnut size pieces.
  • 5 roll into balls.
  • 6 place at regular intervals on a flat, non-metallic tray.

  • 8 bake in batches of 10 in a microwave oven for 2-3 minutes.

Coffee Frozen Yogurt Parfaits

  • 2 boneless new york strip steaks (3/4 inch cut)

  • 4 slices blue cheese, shredded
  • 2 tablespoons butter, melted
  • 2 pressed garlic cloves
  • 1 (6 ounce) bag plain potato chips

  • 1 place garlic bread on a large sheet pan, and bake according to package directions.
  • 2 slice onions thin and microvave covered on high for 5 minutes.
  • 3 heat a pan on medium-high for 5 minutes, while the onions are in the microwave.
  • 4 season steaks with rub, and cook 5-10 minutes , or until browned.

Chocolate Banana Snacks

  • 2 medium bananas
  • 10 toothpicks
  • 1/3 cup semi-sweet chocolate chips
  • 1/3 cup chocolate frosting
  • 1 teaspoon multicolored candy sprinkles

  • 1 line a small cookies sheet or plate with waxed paper. peel bananas and cut each banana into 5 chunks. place cut side down on cookies sheet. insert a toothpick into each chunk. place in freezer for about 20 minutes or until frozen.
  • 2 meanwhile; place chocolate chips in small microwave-safe bowl. microwave on high for 60 - 90 seconds or until melted; stir. add frosting; mix well. microwave on hight for 15 - 20 seconds or until dipping consistency.
  • 3 dip each banana chunk in chocolate mixture, spooning onto sides of banana chunks. sprinkle with sprinkles. if chocolate mixture becomes too stiff, microwave for 5 to 10 seconds.
  • 4 return bananas to cookie sheet and freeze for 1 hour.
