Creamy Chicken Broccoli Pasta

Total Time: 45 mins Preparation Time: 15 mins Cook Time: 30 mins

Ingredients

  • Servings: 4
  • 4 chicken breasts
  • 4 (10 1/2 ounce) cans cream of chicken soup
  • 2 cups water (more or less depending on consistency you want)
  • 4 tablespoons parmesan cheese (grated, more to taste)
  • 1 tablespoon garlic powder (also to taste)
  • 6 tablespoons lemon juice (separated)
  • 4 teaspoons salt
  • 4 teaspoons pepper
  • 1 (16 ounce) bag frozen broccoli (the kind you steam in microwave or fresh cooked)
  • 1 (16 ounce) box spiral shaped pasta

Recipe

  • 1 preheat oven to 400 degrees.
  • 2 put a tbsp of lemon juice on each of the 4 chicken breasts, sprinkle with salt and pepper. cook in the oven for about 25 minutes, or until done. cut into bite size pieces.
  • 3 microwave your broccoli according to package.
  • 4 in a large sauce pan cook noodles by directions on the box. strain and set aside.
  • 5 in the empty sauce pan, mix chicken, cream of chicken, water, parmesan cheese, garlic powder, broccoli, remaining lemon juice, and a little more salt and pepper if you desire. cook about 5 minuted until heated through, and put on top of pasta. enjoy!

Brunch Pancakes

Total Time: 25 mins Preparation Time: 20 mins Cook Time: 5 mins

Ingredients

  • 3 egg yolks
  • 1 cup buttermilk
  • 2 cups flour
  • 3 tablespoons sugar
  • 2 teaspoons baking powder
  • 1/4 teaspoon baking soda
  • 1/2 cup buttermilk
  • 6 tablespoons butter, melted
  • 3 egg whites
  • berry syrup or maple syrup
  • butter
  • fresh raspberries (optional) or blueberries (optional) or sliced strawberry (optional)

Recipe

  • 1 in a large mixing bowl, blend together egg yolks and 1 cup buttermilk.
  • 2 in another bowl, combine flour, sugar, baking powder and baking soda and add to egg mixture.
  • 3 mix to combine. stir in the 1/2 cup buttermilk and the melted butter.
  • 4 in a mixer bowl, beat egg whites until stiff peaks form.
  • 5 gently fold beaten egg whites into flour mixture, leaving a few fluffs of egg whites ~ do not overmix.
  • 6 for each pancake, spoon 1 tablespoon of the batter onto a hot, lightly greased griddle or heavy skillet (i use my electric fry pan).
  • 7 if batter is too thick to spread slightly when poured on griddle, add 2 to 4 tablespoons additional milk (1 tablespon at a time).
  • 8 cook until golden brown, turn and cook other side when pancakes are bubbly and dry around the edges.
  • 9 before serving, warm syrup in a pan or in the microwave and serve with syrup, butter, and fresh berries over the top of the pancakes.

Carrots Elegante

Total Time: 50 mins Preparation Time: 10 mins Cook Time: 40 mins

Ingredients

  • Servings: 4
  • 1 lb carrot, thinly sliced
  • 1/4 cup butter
  • 3 tablespoons honey
  • 1 tablespoon lemon juice
  • 1/4 teaspoon ground ginger
  • 1/4 cup sliced almonds

Recipe

  • 1 cook the carrots in water, covered, for about 8 minutes. (i used frozen sliced carrots & followed the directions on the package.) drain the carrots.
  • 2 put the butter, honey, lemon juice & ginger in a microwavable bowl. microwave for 30 seconds, then stir. continue until all butter is melted and all ingredients are combined.
  • 3 put the carrots into a 1 1/2 to 2 quart greased dish. pour the sauce over the carrots & stir. (may refrigerate at this point for baking later.).
  • 4 bake, uncovered, at 375 degrees for 30 minutes, stirring every 10 minutes.
  • 5 sprinkle almonds over carrots just before serving.

Carrots Au Gratin (a La Gail)

Total Time: 50 mins Preparation Time: 20 mins Cook Time: 30 mins

Ingredients

  • Servings: 6
  • 2 tablespoons margarine or 2 tablespoons butter, melted
  • 2 tablespoons flour
  • 1 cup milk
  • 1/2 cup cheddar cheese, grated
  • salt
  • pepper
  • 4 cups carrots, sliced
  • 1/4 cup onion, chopped
  • 1 -2 cup corn flakes

Recipe

  • 1 you can make the cheese sauce in either the microwave or on the stovetop.
  • 2 melt margarine.
  • 3 add flour and mix.
  • 4 add milk.
  • 5 cook until thickened.
  • 6 add cheese (feel free to add more to make a cheesier sauce). stir.
  • 7 cook a bit longer until cheese is melted.
  • 8 season with salt and pepper.
  • 9 slice carrots and chop onions and cook almost completely (not mushy and not too soft).
  • 10 mix with cheese sauce.
  • 11 place carrot mixture in a shallow dish and top with crumbled cornflakes or cornflake crumbs.
  • 12 bake at 350 degrees for 1/2 hour.

Apple Pecan Crepes

Total Time: 25 mins Preparation Time: 15 mins Cook Time: 10 mins

Ingredients

  • Servings: 6
  • 1 (21 ounce) can apple pie filling
  • 1/2 cup coarsely chopped pecans
  • 1/2 teaspoon ground cinnamon
  • 12 prepared crepes (7 inches each)
  • 1 egg, beaten
  • 3/4 cup half-and-half cream
  • 2 tablespoons sugar
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon almond extract

Recipe

  • 1 in a bowl, combine pie filling, pecans and cinnamon; mix well.
  • 2 spread 2 rounded tablespoonfuls down the center of each crepe; roll up tightly.
  • 3 place in a greased 13-in. x 9-in. x 2-in. baking dish.
  • 4 bake, uncovered, at 375° for 10-14 minutes or until heated through.
  • 5 meanwhile, in a microwave-safe bowl, combine the egg, cream, sugar and extracts. cover and microwave at 50% power for 5-6 minutes or until thickened, stirring every 2 minutes. cool.
  • 6 serve over crepes.

Cheesy-cherry Pockets

Ingredients

  • 2 (8 ounce) packages refrigerated crescent dinner rolls
  • 1/2 cup cream cheese, room temp
  • 1 cup cherry pie filling
  • 1 teaspoon cinnamon
  • 1 egg , lightly beaten

Recipe

  • 1 preheat oven to 375°.
  • 2 in mixing bowl, combine cream cheese, cinnamon and pie filling.
  • 3 unroll crescent dough, flatten into one large sheet, pressing edges and perforations together.
  • 4 cut into 16 circles, approximately 4 inches in diameter (use a cookie cutter this size or improvise with a cup or just use a knife).
  • 5 place approximately 1 tablespoon cherry mixture in center of each circle.
  • 6 fold dough in half, seal by pinching with your fingers.
  • 7 place on cookie sheet with approx one inch from one another.
  • 8 brush each pocket with egg .
  • 9 bake approximately 15 minutes or until light brown.
  • 10 for freezing: place baked and cooled pockets in freezer safe ziploc bag. to reheat: microwave, turning pocket every 15 seconds until warm all the way through.

Broccoli Casserole With A Kick

Ingredients

  • 20 ounces frozen broccoli (about a 20 oz bag or so)
  • 1 (10 ounce) can cream of mushroom soup
  • 1 cup nacho cheese sauce
  • 1/4 cup chopped onion (optional)
  • 1 (4 ounce) can mushrooms
  • 15 -20 ritz crackers
  • 1 -2 tablespoon melted butter or 1 -2 tablespoon butter-flavored cooking spray

Recipe

  • 1 cook broccoli until tender. i put it in the casserole dish, covered and microwaved for about 5 minutes added the onion, stirred and cooked until done.
  • 2 drain off excess water.
  • 3 add mushrooms-drained, mushroom soup, and cheese sauce. mix well.
  • 4 crush ritz crackers (if you are using melted butter, mix together now) and sprinkle on top (if you are using butter spray, spray the top of the crackers now). the butter or spray help to get the topping crisp.
  • 5 bake in a 350 oven until hot and bubbly and golden, 30-45 minutes.

Broccoli Casserole

  • 4 cups broccoli florets, frozen
  • 2 cups velveeta cheese, cubed
  • 1/4 cup milk
  • 1 (50 g) package chicken stuffing mix (unsure of the amount in pkg.)
  • 2 tablespoons butter, melted

Recipe

  • 1 lay broccoli in greased dish.
  • 2 combine milk and cheese.
  • 3 microwave on medium for 2 1/2 to 4 1/2 minutes.
  • 4 pour over broccoli.
  • 5 mix stuffing with melted butter and put over top of sauce.
  • 6 bake at 375 degrees for 25 minutes or microwave for 8 minutes.

Chocolate Potato Cake With Coconut Ganache #5fix

Ingredients

  • Servings: 12
  • 24 ounces simply potatoes traditional mashed potatoes
  • 13 1/2 ounces coconut cream, divided
  • 12 ounces chocolate chips, divided
  • 4 eggs, separated
  • 18 1/4 ounces devil's food cake mix

Recipe

  • 1 preheat oven to 350 f . peel film at corner of simply potatoes package to vent and heat on high for 3 minutes in microwave. when simply potatoes are heated for 3 minutes, remove film and stir. measure out 1 ½ cups and use remaining potatoes for other use.
  • 2 meanwhile grease and flour a 12 cup bundt pan. beat egg whites in a small bowl until stiff. set aside.
  • 3 open can of coconut cream without shaking. spoon off the top 1/4 cup thickest cream, and place in a large bowl with the 4 egg yolks. beat until smooth. add 1 ½ cups cooled, mashed potatoes and cake mix. beat at medium speed for 1 minute, then at high speed for 2 minutes. by hand stir in 4 ounces chocolate chips, and then fold in beaten egg whites.
  • 4 pour batter into bundt pan. bake about 50 minutes or until cake tester comes out clean. let stand 10 minutes, then invert cake onto a wire rack. let cool.
  • 5 while cake bakes, make ganache. place 3/4 cup of the reserved, thick coconut cream in a 1 1/2 qt pan. bring to a simmer until reduced to 2/3 cups. place chocolate chips in a bowl. pour hot coconut cream over chips. let stand 5 minutes, then stir until smooth.
  • 6 let cool 10 -15 minutes. spoon over cake. glaze hardens as it cools further. place cake on round serving platter.

  • 2 tablespoons cornmeal
  • 1 tablespoon unsweetened baking cocoa
  • 1 cup water or 1 cup skim milk
  • sugar (to taste) or sugar substitute (to taste)

Recipe

  • 1 whisk cornmeal and cocoa in a bowl with water.
  • 2 microwave on high for 3 minutes stirring every minute.
  • 3 let cool for five minutes.
  • 4 enjoy!

Broccoli Cheddar Casserole

Ingredients

  • Servings: 12
  • 36 ounces frozen chopped broccoli, warmed in microwave then drained colander
  • 3 large eggs, beaten
  • 15 ounces campbell's healthy request reduced fat low sodium condensed cream of mushroom soup
  • 2/3 cup light mayonnaise
  • 1 medium yellow onion, grated
  • 1 1/2 cups shredded sharp cheddar cheese
  • 1 1/2 cups cheez its cheese crackers, crushed

Recipe

  • 1 heat oven to 350. spray a 12-cup casserole dish with nonstick cooking spray.
  • 2 in a large mixing bowl, whisk eggs. add soup, mayonnaise and onion, and whisk together. fold in broccoli, cheese and 1/2 cup of the crushed crackers. spoon into prepared casserole dish. top with remaining 1 cup crushed crackers.
  • 3 bake at 350 for 1 hour, then open oven and check casserole when shaken, all but the center should be set. if needed,cook another 5 minutes. let stand 10 minutes before.

Camping Potatoes/carrots

Ingredients

  • potato, still in skin

  • salt and pepper

Recipe

  • 1 cut potatoes into small cubes put in bowl with chopped carrots.
  • 2 boil in microwave or stove until soft usually 15 to 20 minutes.
  • 3 drain water and then place carrots and potatoes in aluminum foil shape foil like a bowl so juices won't leak out.
  • 4 cover potatoes and carrots with a hefty.
  • 5 sprinkle of soy sauce and however much salt and pepper you want.
  • 6 wrap up tightly in foil and put in oven 400 for 30 to 35 minutes or used while out camping and then just cook it under some nice hot coals.

Broccoli Cheese Stuffed Chicken With Spinach Patties

Total Time: 1 hr 5 mins Preparation Time: 30 mins Cook Time: 35 mins

Ingredients

  • Servings: 2
  • 2 chicken breasts
  • 4 small broccoli florets, heads only, chopped
  • 4 basil leaves, shredded
  • 4 sun-dried tomatoes, sliced thinly
  • 6 -8 tablespoons gruyere, grated (depends on size of breasts, mine were of a good size so i used 8)
  • 4 -6 slices prosciutto (again just depending on size of breast these are just use to secure and i needed 3 per breast)
  • 1/2 cup dry wine
  • 1/2 cup water
  • 1 tablespoon lemon juice
  • 1 tablespoon fresh parsley, finely chopped
  • 1 1/2 teaspoons instant chicken bouillon granules
  • 2 teaspoons mild creamy prepared mustard
  • 2 teaspoons cornflour
  • 1/2 cup cream
  • 300 g baby spinach leaves
  • 1 small red onion, chopped finely
  • 1 garlic clove, crushed
  • 3 slices bacon, chopped
  • 3 tablespoons cream
  • 1/2 teaspoon instant chicken bouillon granules
  • 3 tablespoons parmesan cheese
  • 1 egg, lightly beaten
  • 3/4 cup panko breadcrumbs, flakes (japanese breadcrumbs, available at most supermarkets or specialty asain stores.)

Recipe

  • 1 preheat oven to 180°c.
  • 2 open out chicken breasts, using a meat mallet pound each breast until of equal thickness.
  • 3 divide broccoli between breasts from top to bottom down the centre, top with basil leaves, then sun-dried tomato, finally press cheese firmly over tomato to form a small mound. fold breasts over to enclose filling and wrap prosciutto around each breast to secure.
  • 4 place breasts in a lightly oiled oven proof dish and cook in pre-heated oven for 30-35 min's or until chicken is cooked through.
  • 5 sauce.
  • 6 combine wine, water, lemon juice, parsley, stock and mustard in a saucepan. heat over med high heat, use a whisk if necessary to combine mustard fully, you don't want lumps.
  • 7 mix a little water with the cornflour and add to sauce stir until mixture thickens, add cream and stir to heat through. serve with chicken.
  • 8 spinach:.
  • 9 heat some water in a pan, plunge spinach leaves into water for only a minute, drain, squeeze out any excess water.
  • 10 in a small fry pan cook bacon, drain on absorbent paper.
  • 11 combine spinach, onion, garlic, bacon, cream, stock and cheese, in a microwave safe bowl, stir well. microwave for about 1 minute to melt cheese, stir again.
  • 12 make sure mixture is cool enough to add egg as you do not want it to cook. add egg and panko flakes.
  • 13 heat some oil in a pan, using a tablespoon divide mixture into roughly 4 equal parts. take spoonful of mixture add to pan press down to form a pattie shape and cook until browned on both sides.
  • 14 to serve: place chicken on a plate, spoon some sauce over, garnish with a basil leaf, place patties on plate and garnish with kumara curls if desired.
  • 15 kumara curls: if you wanted to do this just peel kumara, then using a vegetable peeler peel kumara into strips, heat some oil in a pan (about 1/4 inch deep). add kumara and fry until it curls up and is crisp.

Cheesy Vegetable Soup With Homemade Croutons

Ingredients

  • 1 cup celery, diced
  • 1 cup onion, diced
  • 4 chicken bouillon cubes
  • 4 cups water
  • 3 cups potatoes, cubed
  • 1 cup carrot, shredded
  • 10 ounces frozen creamed corn
  • 10 ounces frozen mixed vegetables
  • 10 3/4 ounces cream of chicken soup
  • 1 1/2 lbs velveeta cheese, cubed
  • salt and pepper
  • 3 tablespoons butter
  • 1/4 teaspoon onion salt
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon italian seasoning
  • 1 buns or 1 dinner roll

Recipe

  • 1 for soup:.
  • 2 in a large saucepan, bring the water to a boil.
  • 3 add celery, onion and bouillon.
  • 4 reduce to medium heat and cook for 20 minutes.
  • 5 add potatoes, carrots, corn, mixed vegetables, and soup. cook until the vegetables are tender.
  • 6 reduce the heat to low and add the cheese.
  • 7 cook, stirring gently until the cheese has melted and the soup is hot. do not boil.
  • 8 add salt and pepper to taste.
  • 9 serve with croutons.
  • 10 for croutons:.
  • 11 melt butter in the microwave and sprinkle with onion salt, garlic powder and italian seasoning.
  • 12 stir together.
  • 13 cut up sandwich bun and stir into butter mixture to coat.
  • 14 microwave 1 minute and stir.
  • 15 microwave 30 seconds and stir.
  • 16 microwave 20 seconds and stir.
  • 17 microwave 20 seconds and stir.
  • 18 pour onto something cool.
  • 19 these crisp up best by making one bun at a time. each bun makes enough for two bowls. you can use any leftover bun, roll, etc that you have.

Can't Leave Alone Bars

Ingredients

  • Servings: 8
  • 1 (18 1/4 ounce) box cake mix
  • 2 eggs
  • 1 (14 ounce) can sweetened condensed milk
  • 1/4 cup butter
  • 1/3 cup vegetable oil or 1/3 cup canola oil
  • 1 cup chocolate chips

Recipe

  • 1 mix cake mix, oil, and eggs in bowl. press 2/3 mixture in 9 x 13 inch pan.
  • 2 microwave condensed milk, choc.chips, and butter until melted. pour of batter.
  • 3 drop remaining batter by teaspoons on top.
  • 4 bake 350 degrees 25 minutes or until lightly browned.

Blueberry Crisp For Two

Total Time: 15 mins Preparation Time: 5 mins Cook Time: 10 mins

Ingredients

  • Servings: 2
  • 1/4 cup brown sugar
  • 1 tablespoon cornstarch
  • 2 cups blueberries (fresh or frozen)
  • 1/4 cup all-purpose flour
  • 1/4 cup brown sugar
  • 1/4 cup oatmeal (not instant)
  • 2 tablespoons butter, softened

Recipe

  • 1 stir brown sugar with cornstarch then stir in berries.
  • 2 transfer to lightly greased 6 cup microwave safe dish.
  • 3 microwave uncovered on high for 3 1/2 minutes if using fresh berries, or 6 minutes if using frozen berries (berries should look thickened and bubbly).
  • 4 stir once halfway through cooking.
  • 5 for topping, mix topping ingredients together with fingers or fork until evenly mixed and spread onto a micro-safe plate.
  • 6 cook uncovered on high for about 4 minutes stirring once halfway through cook time, until lightly golden and crumbly.
  • 7 spoon over the blueberry mixture and serve immediately with a scoop of vanilla ice cream or whipped cream.

Chocolate Pistachio Fudge

Total Time: 1 hr 30 mins Preparation Time: 30 mins Cook Time: 1 hr

Ingredients

  • 1 (395 g) can sweetened condensed milk
  • 1 cup firmly packed brown sugar
  • 2 tablespoons liquid glucose (is a form of sugar)
  • 125 g butter, cubed
  • 150 g milk chocolate or 150 g chocolate, chopped
  • 3/4 cup pistachios, chopped
  • 2 tablespoons baileys irish cream

Recipe

  • 1 grease& line the base& sides of a 7cm deep, 30cm x 7.
  • 2 5cm bar pan.
  • 3 combine condensed milk, sugar, glucose& butter.
  • 4 microwave uncovered for approx 8 mins or until mixture begins to boil, whisking every 2 mins.
  • 5 continue to microwave for 3-4 min on medium, whisking every minute, until thick& golden.
  • 6 remove from microwave add chocolate, stirring until mixture is smooth.
  • 7 stir in the nuts and liqueur, mix well.
  • 8 spoon into prepared bar pan, set aside for 1-2 hours to cool to room temperature.
  • 9 remove from bar pan and cut into approx 15 small slices/bars, individually wrap in greaseproof paper.
  • 10 store in airtight container in the fridge.

Baked Eggs Wrapped In Bacon…easy And Low Carb!

Total Time: 30 mins Preparation Time: 10 mins Cook Time: 20 mins

Ingredients

  • Servings: 6
  • 1 tablespoon melted butter or 1 tablespoon cooking spray
  • 6 slices bacon or 6 slices deli ham or 6 slices pepperoni
  • 6 eggs
  • 6 tablespoons heavy cream or 6 tablespoons half-and-half cream or 6 tablespoons milk
  • 2 ounces cheddar cheese, cut into 6 slices or 2 ounces cheese, of your choice cut into 6 slices

Recipe

  • 1 preheat oven to 325.
  • 2 sauté or microwave to half cook strips of bacon to insure the bacon is done by the end of the baking time (this step is not needed for either the pepperoni or ham).
  • 3 grease bottom of muffin cup with the butter (or spray tin with cooking spray).
  • 4 line the sides & bottom with the bacon slice (or deli ham or pepperoni slices).
  • 5 place 1 egg in each muffin cup and pierce yolk.
  • 6 place 1 t. cream over the top of egg and sprinkle egg lightly with salt and pepper.
  • 7 put a slice of cheddar to cover top of the egg.
  • 8 bake for 20 minutes or until eggs are set and cheese melted. lift out of the tin and enjoy!

Blueberry Crisp

Ingredients

  • Servings: 9
  • 1/4 cup brown sugar, packed
  • 1 tablespoon cornstarch or 1 tablespoon tapioca starch
  • 2 cups blueberries, fresh or frozen
  • 1/4 cup all-purpose flour
  • 1/4 cup brown sugar, packed
  • 1/4 cup quick-cooking rolled oats
  • 2 tablespoons butter, melted

Recipe

  • 1 in a mixing bowl, mix together brown sugar with cornstarch.
  • 2 add blueberries to sugar mixture and stir until well coated.
  • 3 spoon blueberry mixture into a 9 inch x 9 inch microwave safe dish.
  • 4 microwave on high (full power) uncovered for 3 1/2 minutes for fresh blue berries or 6 minutes if using frozen blueberries.
  • 5 blueberry sauce should be thick and bubbly.
  • 6 stir once half way through cooking.
  • 7 topping-----------.
  • 8 in a mixing bowl, combine flour, brown sugar, rolled oats and butter and rub together with fingers until evenly mixed.
  • 9 spread evenly in a separate microwave safe dish and microwave on high (full power) for 4 minutes or until golden and crumbly; stirring once.
  • 10 spoon cooked topping evenly over blueberry base.
  • 11 serve hot with icecream or whipping cream.

Cherie's Caramel Corn

Ingredients

  • 4 quarts popped butter flavored microwave popcorn
  • 5 cups small pretzels (if you can find them, use the square grid like pretzels)
  • 2 cups packed brown sugar
  • 1 cup butter
  • 1/2 cup dark brown corn syrup
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1 cup pecans (you can use any kind of nut)
  • 2 cups plain m&m's

Recipe

  • 1 place popcorn, pretzels, and nuts into a large bowl, set aside.
  • 2 in a heavy saucepan combine sugars, butter, corn syrup, and salt. cook over medium heat, stirring occasionally, until mixture comes to a rolling boil.
  • 3 cook and stir until candy thermometer reads 238 degrees (soft ball stage).
  • 4 remove from heat and stir in baking soda.
  • 5 quickly pour over popcorn mixture and mix thoroughly.

  • 1 in a medium saucepan, fill enough water to reach about a third of the way to the top. place it on the burner on high to heat it up faster, place the steak in the pan, cover it. turn the heat down once the steam starts to emit too much, to medium, and leave a little crack in the cover if you have to. cook each side for 15 minutes.
  • 2 in a small serving bowl, combine chipotle mustard and wasabi sauce together with a fork.
  • 3 mince the jalapeno pepper, place in the sauces mixed together, and combine just a little bit more.
  • 4 cube the steak into tiny chunks. toss them with the sauce, and they should be fully coated. scoop them off to one side of the bowl, place down a pepperjack cheese slice, slide them back on it (in the center), and then place another cheese slice down on top.

Recipe

  • 1 set oven to 350°f.
  • 2 in a microwave safe dish pour in blueberries and add stick of butter. put microwave on defrost and microwave for 6 minutes. after micro beeps stir and microwave at half power 2 minutes at a time until blueberries are defrosted and butter is melted.
  • 3 in a mixing bowl mix sugar and flour.
  • 4 add evaporated milk. stir until well mixed. add a little cinnamon just until there is a light speckle in the mixture.
  • 5 add almond extract.
  • 6 in a 9x12 dish (i used glass) spray non-stick cooking spray. (it's important that you evenly coat the pan and that you dont miss a spot becuase it will make cleaning the dish easier.).

  • 8 sporatically pour sugar mixture over blueberry mixture. you dont want to much "dough" in one spot so be careful.

Best Ever Stir-fried Chinese Cabbage!

  • 1/3 cup chinese wine
  • 1 -2 teaspoon cornflour, to thicken
  • 3/4 cup hot water

Recipe

  • 1 soak dried scallops and dried shrimp in hot water or put it in the microwave for 5 minutes on high and slice the chili and garlic as well as roughly chopping the chinese cabbage.
  • 2 once the dried scallops have significantly soften, drain them while reserving liquid.
  • 3 heat oil in pan and brown the garlic slices. once garlic is browned, remove half the browned garlic slices and set aside.
  • 4 then add the chilies and then the soaked dried scallops and shrimp and fry for 1 minute.
  • 5 season with salt and pepper.
  • 6 add the chinese cabbage and fry till it slightly wilts and then add then cooking wine, oyster sauce, the soaking liquid.
  • 7 season with soy sauce to taste.
  • 8 cook cabbage for a further 3-5 minutes till cooked but retaining a bit of crunch and then thicken with corn flour.
  • 9 garnish with the crunchy garlic slices and enjoy!

Chipotle Mexican Grill Barbacoa Burritos By Todd Wilbur

  • 1 make adobo sauce by combining vinegar, lime juice, peppers, garlic, cumin, oregano, black pepper, salt and clove in a blender or food processor and puree on high speed until smooth.
  • 2 trim the fat from the meat, and then slice the roast into 6 smaller pieces. sear all sides of the chunks of meat in 2 tablespoons of oil in a large stockpot or dutch oven over medium heat until browned. add the adobo sauce to the meat, pour in the chicken broth, and add the bay leaves. cover the pot, turn your stove to med/low heat and let the meat simmer (braise) for 5 to 6 hours or until meat easily flakes apart. turn meat every 30 minutes as it cooks. after 4 hours, keep the lid off the pot. at the 5-hour mark, you should be able to tear meat apart into bite-size chunks with tongs.
  • 3 as soon as your meat is in the pot, make pico de gallo by combining all ingredients in a bowl. cover and chill for several hours while the barbacoa is cooking.
  • 4 just before meat is done, prepare the pinto beans by combining beans with bacon fat and oregano in a medium saucepan. simmer 30 to 40 minutes or until most of the liquid is gone and beans are soft. keep beans covered until the meat is ready.
  • 5 make the cilantro-lime rice by combining water, rice, butter and salt in a large saucepan. bring to a boil over medium heat, then reduce heat to low, cover saucepan, and simmer for 20 minutes. when the rice is done stir in the cilantro and lime juice. keep rice covered until you're ready to assemble the burritos.
  • 6 make each burrito by first heating a flour tortilla on a large skillet over medium heat, or wrapped in moist paper towels in the microwave. when the tortilla is warm, spoon a healthy portion of barbacoa meat into the tortilla, followed by the cilantro-lime rice, beans, pico de gallo, and your choice of cheese. you can also add sour cream and/or guacamole, if you like. fold in the sides, tightly roll the tortilla, and dig in!

  • 1 to prepare the blueberries: place the berries in a microwave-safe bowl, and heat them for 4 to 5 minutes, till they're thawed and beginning to warm.
  • 2 combine the berries with the remaining filling ingredients, and spoon the mixture into a lightly greased 8" round cake pan, 9" pie pan, or 9" round cake pan; if you use an 8" pan, be sure it's at least 2" deep.

  • 1 combine honey, molasses, brown sugar, and butter in heavy saucepan. place over medium-high heat and cook, stirring occasionally, until butter melts and mixture begins to bubble gently. remove from heat and lt cool 15 minutes. in large bowl, combine flour, cocoa, baking powder, baking soda, salt, cinnamon, pepper and mace.
  • 2 add eggs to honey mixture, pour at once into flour mixture. stir to form a dough. add candied lemon peel, chopped almonds, and lemon rind; mix well. divide dough in half. wrap each half separately in plastic wrap. refrigerate 1 1/2 hours, or overnight.
  • 3 preheat oven to 350 degrees and grease 2 baking sheets.
  • 4 pinch off small pieces of dough (about heaping teaspoon size) and roll into balls. place on cookie sheets about 2 1/2" apart. bake for 12 to 15 minutes, or until done.

  • 4 cups cubed cooked chicken

Recipe

  • 1 cook noodles according to package directions. meanwhile, in a large bowl, combine the remaining ingredients. drain noodles; add to chicken mixture.
  • 2 transfer to two greased 8 inch square baking dishes. cover and freeze one casserole for up to 3 months. cover and bake remaining casserole at 350 degrees for 30 minutes. uncover and bake 10-15 minutes longer or until heated through.
  • 3 to use frozen casserole: thaw in the refrigerator overnight. remove from the refrigerator 30 minutes before cooking. cover and microwave on high for 10-12 minutes or until heated through, stirring twice.

Broccoli Cheddar Twice-baked Potatoes

  • 1/4 cup margarine
  • 1/4 cup skim milk

  • 2 teaspoons dry ranch dressing mix (optional but delicious)

  • 1 bake the potatoes in a 400 degree oven for about 1 hour. *okay, i s'pose you could use microwaved "baked" potatoes instead to save time and they'd come out fine. but, please, if you do have the time, take the time to bake them. they'll taste much better and the skins will hold up much nicer.*.
  • 2 after the potatoes are cool enough to handle, slice each one in half lengthwise and scoop the guts out into a large mixing bowl, being careful to leave the skins intact. place skins on ungreased cookie sheet and set aside.
  • 3 add margarine to potato guts and mash using a potato masher until fairly smooth.
  • 4 add sour cream, milk, 1/2 cup of the cheese, ranch dressing mix, chopped broccoli, and seasonings, and mix well.
  • 5 spoon the potato mixture back into the skins, top with the remaining cheese, and bake at 400 degrees for 15 minutes.

  • 1 (4 ounce) can pineapple chunks
  • 2 tablespoons marinade (sesame ginger lawry's brand)
  • 2 tablespoons wine vinegar
  • 2 tablespoons panko breadcrumbs
  • 8 hot dog buns
  • 4 tablespoons butter
  • 1 tablespoon parmesan cheese

  • 1 dice up the spam and pineapple into pieces the size of your pinky nail.
  • 2 throw em into a sauce pan with the marinade and wine vinegar and keep an eye on it.
  • 3 toss it around until it browns. when it does - add the panko bread crumbs and the parmesan cheese and stir it up really good.
  • 4 meanwhile get another (big enough for 2 hot dog buns) pan and toss in the 1 tablespoon of butter and let it melt. take your 2 hot dog buns and nuke them for 20 seconds in the microwave. then, open it gently to not break it and put it with the inside down on the pan with the butter. let it sit on there and let it toast up. if you are going to make 8 of them it will take 4 tablespoons of butter.
  • 5 then put the cowabunga mixture into your toasted hot dog bun. bon appetite!

  • 1 preheat oven at 450 degrees.
  • 2 mix soup, corn, peas & chicken in a 9x13 glass pan & then spread it evenly & flat.
  • 3 evenly sprinkle lemon pepper, garlic & bacon on top of mixture.

Broccoli Cheddar Stuffed Potato Skins With Avocado Cream

  • 1 heat over 450 degrees. clean potatoes and pierce wrapping in paper towel and cooking in microwave 13-15 minutes. when cool slice in 1/2 and scoop out pulp. reserving pulp for another time. brush inside and out of potato with oil and sprinkle with salt. bake them in oven skin side down 20 minutes. chop broccoli about 4 cups and steam 3-4 minutes. set aside. dice canadian bacon and cook until crisp about 3-4 minutes. set aside. combine minced scallion whites, avocado, sour cream, lime juice, cilantro, minced garlic and salt in a food processor on high until smooth, about 30 seconds. set aside. toss cooled broccoli with cheese and spoon into potato skin lowering oven to 400 degrees. bake 5 minutes. presentation: spoon 1 tablespoon avocado cream on each potato halve , top with green diced scallions and 1 teaspoon canadian bacon.

  • 1 make the crust as per instructions on graham wafer crumb box.
  • 2 melt the bars, marshmallows and milk carefully in the microwave or in the top of a double boiler.

  • 1 large onion, chopped and minced finely
  • 3 cooked boneless skinless chicken breasts (shredded or diced)
  • 12 ounces fresh sliced mushrooms, cleaned
  • 16 ounces frozen chopped broccoli
  • 1 cup half-and-half
  • 1 lb marbled cheddar and swiss cheese, grated
  • 2 teaspoons garlic, minced
  • 1 teaspoon garlic salt or 1 teaspoon garlic powder
  • 1 teaspoon pepper
  • 1 teaspoon lemon juice
  • 3 pinches dried tarragon
  • 2 pinches dried basil
  • 3 dashes worcestershire sauce

Recipe

  • 1 finely chop one large onion, by hand or in mini chopper food processor.
  • 2 in large stockpot melt one stick of butter or margarine.
  • 3 sauté onion until tender.
  • 4 sift 1/2 cup flour over butter/onion mixture and whisk to form a paste.
  • 5 let paste cook and slightly darken but do not burn.
  • 6 about 6-8 minutes.
  • 7 slowly whisk in two cups milk.
  • 8 add two chicken bullion cubes and pepper and allow to thicken a couple of minutes while whisking to get out lumps.

  • 15 use a food processor to chop finely for all of it or part of it.
  • 16 add mushrooms, chopped chicken, and broccoli stirring frequently.
  • 17 add half and half, garlic, garlic salt, tarragon, basil, worcestershire, lemon juice and salt and pepper to taste.
  • 18 cook about half an hour.
  • 19 add half and half cream, and one pound shredded cheese, cooking and stirring frequently until cheese is melted, and all flavors have been incorporated well.
  • 20 total cook time approx 1 hour.

  • 1 soften coconut - you can use the microwave, or a double boiler, or submerge your container in hot water. in a very warm house it might be soft enough already!
  • 2 stir in peppermint extract and cocoa powder until thoroughly mixed. taste as you go - i didn't measure how much i used so this is an estimate.
  • 3 pour into candy molds, mini muffin tins, ice cube trays, very small cups, or whatever else you need to get the shape you'd like.
  • 4 refrigerate or freeze until solid, and store in the refrigerator.

  • 2 combine 1/3 cup mix with water.
  • 3 cook and stir on stove top or in microwave until thickened.

  • 6 pour over chicken mixture.
