fresh pickled beet melody

Ingredients

  • 6 beets, stems removed
  • 4 large carrots, cut diagonally into 1 1/2-inch slices
  • 1 large onion, cut in half and thinly sliced
  • dressing:
  • 1 1/2 cups vinegar
  • 2/3 cup sugar
  • 2 teaspoons ground ginger
  • 2 teaspoons orange zest
  • 2 teaspoons dried dill
  • 1 1/2 teaspoons sea salt
  • 1 teaspoon garlic powder
  • 1 teaspoon dry mustard
  • 1/4 teaspoon freshly ground black pepper
  • 1/3 cup olive oil

  • place whole beets in a pot and cover with water. bring water to a boil, cover the pot, reduce heat to medium-low, and cook until beets are tender, about 30 minutes.
  • place carrots in a microwave-safe dish and cook on high until firm but tender, about 6 minutes. place carrots in a colander under cold water to stop the cooking process, 3 to 5 minutes. remove peels and discard; cut beets into thin slices.
  • whisk vinegar, sugar, ginger, orange zest, dill, sea salt, garlic powder, mustard, and black pepper together in a microwave-safe bowl until sugar and salt dissolve. whisk oil into dressing mixture. microwave dressing on high for 2 minutes; whisk again.
  • combine beets, carrots, and onions together in a large container; pour dressing on top and mix well. cover the container and refrigerate for at least 24 hours before serving.

skewered grilled potatoes

Ingredients

  • 2 pounds red potatoes, quartered
  • 1/2 cup water
  • 1/2 cup light mayonnaise
  • 1/4 cup dry white
  • 2 teaspoons crushed dried rosemary
  • 1 teaspoon garlic powder
  • wooden skewers, soaked in water for 30 minutes

  • place potatoes and water in a microwave safe bowl. cook potatoes in microwave on high until just tender, about 15 minutes, stirring half-way through. drain potatoes and allow to steam for a few minutes to dry.
  • in a large bowl, stir together mayonnaise, , rosemary, and garlic powder. mix in drained potatoes and toss to coat. marinate, covered, in the refrigerator for 1 hour.
  • preheat an outdoor grill for high heat and lightly oil grate.
  • remove potatoes from marinade, and skewer. grill, covered, for 6 to 8 minutes, brushing occasionally with marinade, turning half-way through. remove potatoes from skewers and serve hot.

Mediterranean Pasta With Greens

  • 1 (16 ounce) package dry fusilli pasta
  • 1 bunch swiss chard, stems removed
  • 2 tablespoons olive oil
  • 1/2 cup oil-packed sun-dried tomatoes, chopped
  • 1/2 cup pitted, chopped kalamata olives
  • 1/2 cup pitted, chopped green olives
  • 1 clove garlic, minced
  • 1/4 cup fresh grated parmesan cheese

  • bring a large pot of lightly salted water to a boil. stir in pasta, cook for 10 to 12 minutes, until al dente, and drain.
  • place chard in a microwave safe bowl. fill bowl about 1/2 full with water. cook on high in the microwave 5 minutes, until limp; drain.
  • heat the oil in a skillet over medium heat. stir in the sun-dried tomatoes, kalamata olives, green olives, and garlic. mix in the chard. cook and stir until tender. toss with pasta and sprinkle with parmesan cheese to serve.

  • 1/4 teaspoon spice
  • 1 cup coffee
  • 1 tablespoon whipped cream topping, or to taste (optional)
