Make Ahead Lunch Wraps

Ingredients

  • 2 cups uncooked brown rice
  • 4 cups water
  • 4 (15 ounce) cans black beans
  • 2 (15.5 ounce) cans pinto beans
  • 1 (10 ounce) can whole kernel corn
  • 1 (10 ounce) can diced tomatoes and green chiles
  • 16 (10 inch) flour tortillas
  • 1 pound shredded pepperjack cheese

  • combine rice and water in a saucepan, and bring to a boil. reduce heat to low, cover, and simmer for 35 to 40 minutes, or until tender. remove from heat, and cool.
  • place black beans and pinto beans into a colander or strainer, and rinse. add corn and diced tomatoes with green chilies, and toss to mix. transfer to a large bowl, and mix in rice and cheese.
  • divide the mixture evenly among the tortillas, and roll up. wrap individually in plastic wrap, place into a large freezer bag, and freeze. reheat as needed in the microwave for lunch or snacks.

Microwaved Potatoes Lyonnaise

  • 3 large potatoes, peeled and cubed
  • 2 small onions, sliced
  • 2 tablespoons margarine
  • 2 cloves garlic, minced
  • 1/2 teaspoon salt
  • 1/8 teaspoon dried oregano
  • 1/8 teaspoon black pepper
  • 1/8 teaspoon paprika

  • in a 3-quart microwave-safe casserole dish, combine potatoes, onions, margarine, garlic, salt, oregano, pepper and paprika.
  • heat in microwave on high until margarine melts, about 1 minute; stir. cook 10 minutes more, stirring occasionally.

  • 2 cups graham cracker crumbs
  • 2 cups confectioners' sugar
  • 1 cup peanut butter
  • 1 1/2 cups semisweet chocolate chips
  • 4 tablespoons peanut butter

  • in a medium bowl, mix together the butter or margarine, graham cracker crumbs, confectioners' sugar, and 1 cup peanut butter until well blended. press evenly into the bottom of an ungreased 9x13 inch pan.
  • in a metal bowl over simmering water, or in the microwave, melt the chocolate chips with the peanut butter, stirring occasionally until smooth. spread over the prepared crust. refrigerate for at least one hour before cutting into squares.

  • 1/4 teaspoon salt
  • 3/4 cup white sugar
  • 18 (1 ounce) squares bittersweet chocolate
  • 1 cup unsalted butter
  • 6 eggs

Recipe

  • preheat oven to 300 degrees f (150 degrees c). grease one 10 inch round cake pan and set aside.
  • in a small saucepan over medium heat combine the water, salt and sugar. stir until completely dissolved and set aside.
  • either in the top half of a double boiler or in a microwave oven melt the bittersweet chocolate. pour the chocolate into the bowl of an electric mixer.
  • cut the butter into pieces and beat the butter into the chocolate, 1 piece at a time. beat in the hot sugar-water. slowly beat in the eggs, one at a time.
  • pour the batter into the prepared pan. have a pan larger than the cake pan ready, put the cake pan in the larger pan and fill the pan with boiling water halfway up the sides of the cake pan.
  • bake cake in the water bath at 300 degrees f (150 degrees c) for 45 minutes. the center will still look wet. chill cake overnight in the pan. to unmold, dip the bottom of the cake pan in hot water for 10 seconds and invert a serving plate.

Five Minute Lemon-poppy Seed Cake

  • 1/4 cup white sugar
  • 3 tablespoons buttermilk
  • 3 tablespoons vegetable oil
  • 1/2 teaspoon baking soda
  • 1 tablespoon poppy seeds
  • 1 teaspoon lemon extract
  • 1 egg

  • whisk flour, sugar, buttermilk, vegetable oil, baking soda, poppy seeds, and lemon extract together in a bowl until smooth. beat in the egg. pour batter into a large microwave-safe glass or ceramic mug or cereal bowl.
  • heat in the microwave on high until a toothpick inserted into the center comes out clean, about 3 minutes.

  • 1 cup mayonnaise
  • 1 (6.5 ounce) jar marinated artichoke hearts, drained and chopped
  • 1 clove garlic, minced

  • in a microwave-safe bowl, stir together the asiago cheese, mayonnaise, artichoke hears and garlic. heat in the microwave at 50% power for 30 seconds at a time, stirring between heatings until cheese has melted and dip has a smooth consistency. serve warm.
