Chilli Popcorn

Total Time: 15 mins Cook Time: 15 mins

Ingredients

  • Servings: 6
  • 50 ml olive oil
  • 75 g unpopped popcorn (i sometimes use microwave popcorn and only half the amount of oil )
  • 1 teaspoon dried chopped chile
  • 1/2 teaspoon minced garlic

Recipe

  • 1 heat half of the oil in a large pan ,add the popcorn kernels and cover tightly cook until the popping stops shake the pan occasionally to prevent burning ( if you are using microwave popcorn ,follow the instuctions on the packet and go on to step 2 ).
  • 2 empty the popcorn into a bowl
  • 3 add the rest of the oil with the garlic and chillies to the pan and cook gently for around 30 seconds or until the ingredients are blended
  • 4 return the popcorn to the pan and toss together over a gentle heat for a further 30 seconds.
  • 5 pour into a bowl and allow to cool.
  • 6 serve at room temprature.

Best Cinnamon Buns (rolls)

Ingredients

  • 1 1/4 cups warm milk
  • 2 eggs
  • 1/3 cup margarine
  • 4 -5 cups flour
  • 1 teaspoon salt
  • 1/2 cup sugar
  • 2 1/2 teaspoons yeast
  • 1 cup brown sugar, packed
  • 2 1/2 tablespoons cinnamon, ground
  • 1/3 cup margarine
  • 3 ounces cream cheese, soft
  • 1/4 cup margarine
  • 1 1/2 cups icing sugar (powered, confectioners')
  • 1/2 teaspoon vanilla
  • 1/8 teaspoon salt

Recipe

  • 1 place all dough ingredients into bowl and mix until dough forms, i use a dough hook with the mixer, if you don't have one, mix by hand, and kneed until mixed.
  • 2 set dough aside in draft free area, and allow to double in size.
  • 3 in small bowl combine filling ingredients, and mix well.
  • 4 after dough has doubled, punch down, and roll out, into a 16x21 inch rectangle.
  • 5 spread filling all over dough.
  • 6 roll up tightly.
  • 7 cut into 12 equal buns (rolls).
  • 8 place into a 9x13 greased baking pan.
  • 9 cover and let rise until doubled.
  • 10 preheat oven to 400°f.
  • 11 place buns (rolls) into oven for approximately 15 minute.
  • 12 while buns (rolls) are baking mix together the icing ingredients.
  • 13 spread the icing on warm buns (rolls).
  • 14 enjoy!
  • 15 these will warm up nicely in the microwave--if you have any leftovers.

Apple Fritters With Spiced Syrup

Ingredients

  • crisco canola oil (for frying)
  • 1/2 cup granulated sugar
  • 3/4 teaspoon ground cinnamon
  • 1/2 cup maple syrup or 1/2 cup table syrup
  • 1/4 teaspoon ground cinnamon
  • 1 large egg, lightly beaten
  • 1/2 cup milk
  • 1 medium apple, peeled, cored and chopped to make 1 cup
  • 1 tablespoon crisco canola oil
  • 1 cup all-purpose flour
  • 1 tablespoon sugar
  • 1 teaspoon baking powder
  • 1/4 teaspoon ground cinnamon
  • 1/4 teaspoon salt

Recipe

  • 1 heat 2-3 inches of oil to 365f in deep fryer or deep saucpan.
  • 2 cinnamon sugar: while oil heats, combine sugar and cinnamon in a resealable food storage bag.
  • 3 spiced syrup: mix syrup and cinnamon and heat in a microwave safe bowl or on low heat in a saucepan. keep warm while peparing fritters.
  • 4 batter: combine egg and milk in large bowl. stir in apple and oil.
  • 5 combine flour, sugar, baking powder, cinnamon and salt in another bowl. add to egg mixture. stir until just mixed.
  • 6 drop by tablespoonfuls a few at a time into hot oil. fry about 4 minutes or until golden brown. turn as needed for even browning. remove with slottled spoon. drain on paper towels.
  • 7 gently shake fritters in cinnamon sugar mixture. place in a shallow serving bowl. drizzle with warm syrup. serve warm.

Cocoa Hugs Squares

Ingredients

  • 6 cups cocoa puffs cereal
  • 1/4 cup butter or 1/4 cup margarine
  • 40 large marshmallows
  • 1 (11 1/2 ounce) package milk chocolate chips
  • 24 hugs chocolate kisses

Recipe

  • 1 place cereal in a large bowl; set aside.
  • 2 in a microwave-safr bowl, combine the butter and marshmallows.
  • 3 microwave, uncovered on high for 3 minutes; stir.
  • 4 continue cooking until smooth, stirring every minute.
  • 5 add chocolate chips and stir until melted.
  • 6 pour over cereal; stir until well coated.
  • 7 spread evenly in a greased 13 x 9 inch pan.
  • 8 arrange kisses in rows over the top.
  • 9 cool before cutting.

Cocoa Fudge Cookies

Ingredients

  • 1 cup all-purpose flour
  • 1/4 teaspoon baking soda
  • 1/8 teaspoon salt
  • 1/4 cup butter, softened
  • 7 tablespoons unsweetened cocoa powder
  • 2/3 cup sugar
  • 1/3 cup brown sugar
  • 1/3 cup plain yogurt
  • 1 teaspoon vanilla extract
  • 1/2 cup dried tart cherries or 1/2 cup miniature chocolate chips

Recipe

  • 1 preheat oven to 350°f.
  • 2 whisk together flour, baking soda and salt in a small bowl.
  • 3 melt butter in microwave at low temperature.
  • 4 stir in cocoa powder sugar, and brown sugar.
  • 5 add the yogurt and vanilla extract, stirring gently until mixed.
  • 6 sift together the flour, baking soda, and salt. add to chocolate mixture until just combined.
  • 7 fold in the cherries or chocolate chips at this time.
  • 8 drop tablespoonfuls of batter onto a parchment or silicone mat lined baking sheet.
  • 9 press cookies down slightly to flatten (they do not spread much).
  • 10 bake at 350f for 9-12 minutes or until set and slightly firm at the edges.
  • 11 cool on the pan for a few minutes to set the bottom then finish cooling them on wire cookie racks.

Apple Fritters

Ingredients

  • 1 cup flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon cinnamon
  • 2 eggs
  • 1/2 cup milk
  • 2 apples, chopped

Recipe

  • 1 mix dry ingredients.
  • 2 in separate bowl, beat eggs, stir in milk and apples.
  • 3 combine with dry ingredients.
  • 4 drop 1 tablespoon at a time into hot 375 deg f. fat.
  • 5 fry until golden brown.
  • 6 drain and serve sprinkled with confectioners' sugar, and/or maple syrup.

Cavatelli, Broccoli And Mushrooms

Total Time: 45 mins Preparation Time: 25 mins Cook Time: 20 mins

Ingredients

  • Servings: 4
  • 6 ounces cavatelli or 6 ounces rotelle pasta (spirals)
  • 1 tablespoon olive oil
  • 1 teaspoon olive oil
  • 4 cloves garlic, finely chopped
  • 2 cups broccoli florets
  • 1/4 cup chopped fresh basil
  • 1/2 teaspoon salt
  • 3/4 ounce parmesan cheese, grated
  • freshly cracked black pepper
  • 1 1/2 cups freshly sliced mushrooms or 1 (4 1/2 ounce) can sliced mushrooms

Recipe

  • 1 preheat oven to 350 degrees f (175 degrees c).
  • 2 bring a large pot of lightly salted water to a boil.
  • 3 add pasta and cook for 8 to 10 minutes or until al dente; drain.
  • 4 place broccoli in a microwave safe dish with about 3 tablespoons of water.
  • 5 microwave for 3 minutes, or until tender.
  • 6 melt butter in a medium skillet over medium heat.
  • 7 saute garlic and mushrooms until garlic becomes aromatic.
  • 8 combine with pasta, broccoli and parmesan cheese; transfer to a 2 quart baking dish.
  • 9 cover and bake in preheated oven for about 20 minutes, or until heated throughout.

Chimi Chili Dogs

Total Time: 16 mins Preparation Time: 10 mins Cook Time: 6 mins

Ingredients

  • Servings: 8
  • 8 turkey hot dogs (we use jennie-o)
  • 1 (15 ounce) can chili
  • 1 -2 cup shredded cheddar cheese
  • 8 large flour tortillas
  • oil, for frying

Recipe

  • 1 place 1 hot dog in center of each tortilla.
  • 2 spread 1/4 cup chili over each hot dog.
  • 3 place 1/8-1/4 cup cheese on each (to your preference).
  • 4 fold bottom of tortilla up over hot dog, and then fold in the sides.
  • 5 roll up remaining tortilla.
  • 6 place seam side down.
  • 7 wrap each chimi chili dog in plastic wrap and place in fridge for 1-2 hours, or freeze at this point.
  • 8 heat 1 inch of oil to 350 degrees farenheit.
  • 9 place chimi chili dog seam side down in hot oil and cook 2-3 minutes on each side, or until golden brown.
  • 10 to use frozen: thaw and cook as directed above, or, for quick preparation, heat for 2-3 minutes on high in microwave.

Creamy Mashed Potato Casserole With Spinach And Feta Cheese

Ingredients

  • Servings: 6
  • 5 lbs potatoes (about 12-13 potatoes)
  • 2 -3 tablespoons butter
  • 3/4 cup sour cream (light is okay)
  • salt and pepper
  • 1 (300 g) package frozen spinach, thawed and squeezed dry or 1 (10 ounce) package fresh spinach
  • 2 cups crumbled feta cheese, to taste
  • 2 -3 cloves fresh minced garlic, to taste
  • 1/2 cup grated parmesan cheese

Recipe

  • 1 cook the poatoes in boiling water until very tender.
  • 2 mash with a potato masher or a fork.
  • 3 in a large bowl, mix together the mashed potatoes with the butter, sour cream, salt and pepper.
  • 4 set the oven to 350 degrees.
  • 5 butter a 10 cup casserole dish.
  • 6 wash the fresh spinach leaves (if using fresh spinach).
  • 7 place the wet leaves in a microwave-safe dish; cover, and microwave on high for 2-3 minutes, when cool, enough to handle, squeeze out all excess moisture.
  • 8 chop coarsley, and place in a medium-size bowl; stir in the feta cheese and the garlic.
  • 9 stir the spinach mixture into the potatoes.
  • 10 spoon the mixture into the prepared baking dish (swirling the top slightly to design).
  • 11 sprinkle with the grated parmesan cheese.
  • 12 bake, uncovered in the center of the oven at 350 degrees about 40-50 minutes, or until the top is golden.

Chocolate Zebra Cookies

Ingredients

  • Servings: 12
  • 1 1/4 cups all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 3/4 cup butter, softened
  • 3/4 cup brown sugar, packed
  • 1 egg
  • 1 teaspoon vanilla
  • 2/3 cup semi-sweet chocolate chips
  • 4 ounces chocolate, melted

Recipe

  • 1 preheat oven to 350 degrees.
  • 2 in a small bowl, combine flour, cocoa powder, baking soda and salt; mix well.
  • 3 in a medium sized bowl, beat butter and sugar until creamy.
  • 4 add egg and vanilla to cream mixture; beat well.
  • 5 add flour mixture and chocolate chips; mix well.
  • 6 with the large pampered chef cookie scoop, drop 6 scoops of dough, 3 inches apart, onto rectangle stone; flatten slightly (cookies will spread while baking).
  • 7 bake 14-16 minutes or until cookies are almost set and cracked on top. (centers will still be moist. do not over bake).
  • 8 cool 5 minutes on stone; transfer to cooling rack; cool completely.
  • 9 repeat with remaining dough.
  • 10 melt chocolate in the microwave on high for 1-2 minutes or until chocolate is melted and smooth, stirring every 30 seconds.
  • 11 drizzle cooled cookies with melted chocolate; allow chocolate to set completely.

Baked Potato Soup

Ingredients

  • Servings: 6
  • 12 slices bacon
  • 2/3 cup margarine
  • 2/3 cup all-purpose flour
  • 7 cups milk
  • 4 potatoes, baked, peeled and cubed
  • 4 green onions, chopped
  • 1 1/2 cups cheddar cheese, shredded
  • 1 (8 ounce) container sour cream
  • 1 teaspoon salt
  • 1 teaspoon garlic powder (optional)
  • 1 teaspoon ground black pepper

Recipe

  • 1 cook bacon over medium heat until crisp. drain, crumble and set aside.
  • 2 in a stockpot, melt margarine over medium heat, add flour and whisk until smooth.
  • 3 gradually add milk, stir constantly until thickened.
  • 4 add cubed potatoes, onions and spices. bring to a boil, stir frequently. reduce heat and simmer for 10 minutes.
  • 5 add bacon, cheese and sour cream. stir until cheese is melted.
  • 6 serve.

Cocoa And Marshmallows Oatmeal

  • 1/2 cup oats
  • 1 tablespoon unsweetened cocoa powder
  • 15 mini marshmallows
  • sugar substitute, to taste

Recipe

  • 1 cover oats with water and microwave for about 3 minutes.
  • 2 mix in cocoa until consistent
  • 3 add sugar substitute
  • 4 add mini marshmallows.

Baked Potato Casserole

Ingredients

  • Servings: 4
  • 4 -5 large russet potatoes
  • 3 tablespoons butter
  • 1 cup cheddar cheese, shredded
  • 1 cup monterey jack cheese, shredded
  • 3 slices bacon
  • 3 -4 green onions, chopped
  • 1/2-1 cup sour cream
  • 1/2 cup ranch dressing
  • 1 teaspoon garlic powder
  • salt & pepper, to taste
  • pam cooking spray

Recipe

  • 1 scrub potatoes, removing any bad spots.
  • 2 boil until just fork tender, about 20 minutes.
  • 3 chop the bacon slices and fry or microwave until cooked. set aside.
  • 4 drain potatoes and preheat oven to 350°f.
  • 5 let cool a little, but while somewhat hot, with skins on, cut into cubes, or bite size pieces. place in a large bowl.
  • 6 add the butter, monterey jack cheese, bacon, sour cream, salt, pepper, and garlic powder to the potatoes in the bowl. stir to combine.
  • 7 spray a 2" deep casserole dish, mainly on the sides, with the pam.
  • 8 drizzle all the ranch dressing on the bottom of the dish, coating the entire bottom. i use homemade ranch dressing from scratch, but hidden valley is awesome or use whatever you prefer.
  • 9 add the potato mixture into the casserole dish, forming an even layer.
  • 10 sprinkle the cheddar cheese and green onions on top.
  • 11 bake until cheese is nice and bubbly, or about 15 minutes.

Brownie Balls (a.k.a. Pms Dessert!)

Ingredients

  • 1/2 cup butter or 1/2 cup margarine
  • 2 ounces unsweetened baking chocolate
  • 3/4 cup sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1 3/4 cups flour
  • 1/2 cup chopped walnuts (or pecans!)
  • powdered sugar

Recipe

  • 1 pre-heat your oven to 375 degrees (f).
  • 2 melt butter or margarine and chocolate in medium saucepan over low heat (or melt in the microwave in a glass bowl or measuring cup for 2 minutes or until butter or margarine is melted).
  • 3 set aside to cool for five minutes.
  • 4 while you're letting the chocolate cool, stir sugar, egg, vanilla and salt together until well blended.
  • 5 stir the cooled chocolate/butter or margarine mixture until nice and smooth. then mix it in with the above sugar, etc. mixture.
  • 6 now stir in the flour and nuts.
  • 7 shape mixture into 1-inch balls and place 2 inches apart on ungreased baking sheet.
  • 8 bake for 8 to 10 minutes.
  • 9 while warm, roll in powdered sugar.
  • 10 cool on wire racks.
  • 11 once cool, roll in powdered sugar again!
  • 12 store in airtight container.

Austin's Hyde Park Bar & Grill Mac And Cheese

Ingredients

  • Servings: 12
  • 1 1/2 cups heavy cream
  • 5 cups whole milk
  • 1/2 lb cheese, kraft deluxe slices (yellow)
  • 1/2 lb cheese, kraft deluxe slices ()
  • 1/4 lb cheese, smoked gouda, shredded
  • 1/2 cup vegetable stock
  • kosher salt
  • 1 lb macaroni, cooked al dente
  • shredded cheddar cheese, for topping

Recipe

  • 1 heat cream and milk in a double boiler.
  • 2 add remaining ingredients, except macaroni.
  • 3 heat until cheese is fully melted.
  • 4 salt to taste.
  • 5 fold mixture into macaroni and chill in shallow dishes (or a baking dish). mixture might seem thin, but it will thicken as it cools.
  • 6 serving instructions: preheat oven to 350 degrees. heat desired amount of mac and cheese in microwave. top with shredded cheddar cheese.heat in ove until cheese on top is melted.

Basic Scones

Ingredients

  • 4 cups flour
  • 4 tablespoons sugar
  • 4 teaspoons baking powder
  • 1/2 teaspoon cream of tartar
  • 1/2 teaspoon salt
  • 3/4 cup unsalted butter
  • 1 large egg
  • 1 1/2 cups light cream (half & half)

Recipe

  • 1 preheat oven to 425 degrees. coat large baking sheet with cooking spray. in a large bowl, combine the flour, 2 tablespoons sugar, baking powder, cream of tartar, and salt. with a pastry blender or 2 knives, cut in butter until it resembles coarse crumbs.
  • 2 separate egg, placing egg in a cup and the yolk in a small bowl. with a fork, beat egg yolk and stir in cream. add yolk mixture to dry ingredients and mix together lightly with a fork until mixture clings together and forms a soft dough. turn onto a lightly floured surface. knead gently 5 or 6 times. divide dough in half. with a lightly floured rolling pin or your hands, roll each dough half into a 7-inch circle. cut into 6 wedges.
  • 3 place scones on prepared baking sheet 1 inch apart. beat reserved egg and brush on scones. sprinkle with remaining 2 tablespoons sugar. bake scones 15 to 18 minutes or until golden brown. serve warm. (to reheat frozen scones, place on baking sheet in a 350-degree oven for 25 minutes.).
  • 4 variations.
  • 5 dried fruit scones: add 1/2 cup dried cherries, raisins, currants, or nuts after butter is cut in and before adding cream.
  • 6 marble scones: in a small microwave-safe bowl, microwave four 1-ounce squares semisweet chocolate on medium for 20-second intervals, stirring after each, until chocolate is just melted. stir in 2 tablespoons light corn syrup. gently knead mixture into dough to create marbled effect.
  • 7 maple walnut scones: toast 1 cup walnut halves; add to dough before cream is stirred inches continue with recipe. whisk together 2 egg yolks, 1/3 cup cream, and 2 tablespoons maple extract and brush on top of scones. sprinkle with sugar.
  • 8 yields: 12 large wedges.

Best Coffee Cake Ever

  • 2 1/2 cups flour
  • 1 1/4 cups sugar
  • 1/2 teaspoon salt
  • 2 teaspoons ground cinnamon
  • 1/2 teaspoon mace or 1/2 teaspoon nutmeg
  • 1 cup unsalted butter, melted and cooled slightly (2 sticks, 8 ounces)
  • 1 teaspoon vanilla extract
  • 3/4 teaspoon almond extract
  • 1/2 cup unsalted butter, softened (1 stick, 4 ounces)
  • 1 cup sugar (7 ounces)
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup sour cream (8 ounces)
  • 2 cups unbleached all-purpose flour (or, bread flour is better)
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon baking powder

  • 1 adjust oven rack to center position and preheat oven to 350. grease two 8-inch round cake pans; dust pans with flour, knocking out excess. set aside.
  • 2 make the crumb: in a medium-sized mixing bowl, wisk together the flour, sugar, salt and cinnamon.
  • 3 melt the butter in the microwave or in a small saucepan over low heat. remove from heat and stir in the vanilla and almond extracts. gradually drizzle the melted butter mixture into the flour mixture while continuously and gently tossing with a fork. continue to toss until all the butter is absorbed and you have a uniformly moistened crumb mixture. if texture of crumb is too small, gently squeeze small clumps together to make large crumbs ranging in size from that of a pea to that of a grape, about 1/4- to 1/2-inch in size. (adding the butter too fast, too much butter, and/or over-mixing can result in the crumb mixture coming together as a solid dough. if that happens, simply use your fingers to break-up the solid crumb mixture into big crumbs, about 1/4- to 1/2-inch in size. crumbs don't have to be uniform, just try to get most about this size.) set aside while you make the cake batter.
  • 4 make the batter: in a large bowl, cream the butter and sugar together with an electric mixer on high speed until light and fluffy. add the eggs, one at a time, beating after each addition. beat in the vanilla and sour cream, scraping down the sides of the bowl with a spatula as needed. in a medium-sized bowl, whisk together the flour, baking soda, salt and baking powder. add flour mixture to the sour cream mixture and beat on low or stir with a large spoon until evenly combined.
  • 5 turn the batter into the prepared pan(s) and spread evenly. sprinkle the crumb mixture over the batter with your fingers, covering the batter evenly and completely. bake 8-inch rounds for 20-25 minutes. cake is done when a wooden pick or cake tester inserted near the center comes out clean, and the sides of the cake are golden and slightly pulling away from the edge of the pan. remove from the oven and let the cake cool in its pan(s) set on a wire rack. carefully transfer the cake, crumb side up, onto a serving plate. dust with confectioners' sugar, if desired.
  • 6 makes 16 (2-inch) wedges.

Brooke's Ultimate Sugar Cookies

Ingredients

  • 1 1/2 cups confectioners' sugar
  • 1 cup butter
  • 1 egg
  • 1 teaspoon vanilla
  • 1/2 teaspoon almond flavoring
  • 2 1/2 cups flour
  • 1 teaspoon baking soda
  • 1 teaspoon cream of tartar
  • 2 large egg whites
  • 1 1/3 cups powdered sugar
  • 1 1/3 cups powdered sugar
  • food coloring

Recipe

  • 1 cream sugar and butter. mix in egg and flavorings.
  • 2 blend dry ingredients and stir into creamed mixture.
  • 3 refrigerate 2 or 3 hours.
  • 4 heat oven to 375*.
  • 5 divide dough in half and roll out on lightly floured board 1/4 inch thickness. cut into shapes. sprinkle with plain or colored sugar -- or use the royal icing recipe below. place on lightly greased baking sheet. bake 7 to 8 minutes or until golden brown. makes 5 dozen 2 to 2 1/2 inch cookies.
  • 6 royal icing.
  • 7 in a microwave-safe bowl (i use a pyrex measuring cup) stir together until combined:.
  • 8 2 large egg whites.
  • 9 1 1/3 cups powdered sugar.
  • 10 microwave on high 1 1/2 to 2 min until mixture is bubbly or it reaches 160°f
  • 11 then add mixture to another 1 1/3 cups of powdered sugar and beat with an electric mixer at high speed (adding food coloring if desired while still runny) until the icing is cool and stiff peaks form when the beatersa re lifted out of the bowl.
  • 12 keep a damp dishtowel over the bowl as you're working so it doesn't dry out -- and of you feel its getting too stiff, add a little water and stir or beat again -- its super easy to work with (i usually do mine with it the consistency of paint so it dries smooth on top) have fun!

  • 1/2 cup buttermilk or 1/2 cup nonfat milk

  • 1/3 cup grated parmesan cheese

Recipe

  • 1 1. place the chicken in a 13" x 9" baking dish and pierce in several places with a fork. pour the buttermilk over the chicken and turn to coat both sides. cover and refrigerate for 1 hour.
  • 2 2. place the squash, cut sides up, in a microwaveable dish. cover with plastic wrap and microwave for 25 minutes, or until forktender. using a fork, scrape the flesh from the squash. keep warm.
  • 3 3. meanwhile, preheat the oven to 375°f.
  • 4 4. in a shallow dish, combine the flour, 1/4 cup of the cheese, the garlic powder, and seasoning salt. dredge the chicken in the flour mixture, then return to the pan with the buttermilk, then coat again with flour. place in another large baking dish coated with cooking spray. spoon about 2 tablespoons spaghetti sauce onto each chicken breast and sprinkle with the remaining cheese.
  • 5 5. bake for 25 minutes, or until a thermometer inserted in the thickest portion registers 160°f and the juices run clear.

Chocolate Water Glaze

  • 12 ounces semisweet chocolate or 12 ounces bittersweet chocolate, chopped. (2 cups)
  • 6 tablespoons very hot water, more if needed.

Recipe

  • 1 double boiler method: melt chocolate in a pan set over hot (not boiling) water.
  • 2 stir until smooth.
  • 3 microwave method: melt chocolate in a microwave-safe bowl.
  • 4 microwave at low or med for 30 sec.
  • 5 remove and stir.
  • 6 if not completely melted, continue microwaving.
  • 7 stir until smooth.
  • 8 once chocolate is completely melted and smooth, whisk in the hot water all at once (not slowly or the chocolate may seize) until the mixture is satiny smooth.
  • 9 it will have consistency of softly whipped cream.
  • 10 if you wish the glaze to be thinner, whisk in another tb (or more) of hot water.
  • 11 glaze the cake- tilt it to help glaze flow and/or use a spatula to spread.
  • 12 let the glaze set.
  • 13 if the weather is too warm, refrigerate the cake to let glaze set.
  • 14 the gloss disappears in hot weather but returns at room temperature.
  • 15 beware of fingerprints on the glaze; they show.

Brownie "martinis"

  • 1 pint vanilla ice cream

  • 1 fill the bottom of a double-boiler half full of hot water. place over medium-high heat and bring to a boil. pour the hot fudge sauce into the top half and stirring occasionally, heat long enough to melt. do not bring to a simmer.
  • 2 one at a time, dip each martini glass into the chocolate to coat the rim and twirl several times to coat. allow the excess to drip off. place each glass on a small serving saucer and set aside at room temperature. stir the kahlua into the remaining hot fudge sauce.
  • 3 cut each brownie into 4 small pieces and place on a microwave-plate. when you are ready to finish off the desert, heat the brownies just along enough to warm. place 2 pieces in each glass and top first with a small scoop of ice cream or gelato and then the warm fudge sauce.

  • 1 make sure butter is at room temperature. if not, microwave for 20 seconds, taking it out to check it every 5 seconds. you want it to be soft, not melted.
  • 2 using the back of a spoon, mash the butter until it's smooth and creamy.
  • 3 add the cinnamon, sugar and brown sugar to the butter. make sure the brown sugar is not in clumps when you add it to the butter.
  • 4 mix well, until everything is combined. serve chilled or at room temperature on bread or toast.

Baked Potato Soup

  • 1/4 cup onion, chopped

  • 1 bake potatoes in microwave until tener.
  • 2 melt butter in medium saucepan. slowly blend in flour with a wire whisk until thoroughly mixed.
  • 3 gradually add milk, salt, and pepper whisking constantly.
  • 4 let simmer, but stir often.
  • 5 shop bacon and saute until crisp, but no over done.
  • 6 cut potatoes in half, lengthwise, scoop out potato meat and set aside. chop two of the skins and discard the remainder.
  • 7 when milk mixture is very hot, whisk in potato meat. add potato peels.
  • 8 whisk well and add french onion dip, onion, and bacon.
  • 9 heat thoroughly.
  • 10 add cheese a little at a time until it is all melted inches.

Chicken Parmesan On Angel Hair Pasta

  • 3 ounces ribs and chicken dry rub seasonings
  • 2 tablespoons butter
  • 2 cups spaghetti sauce
  • 4 ounces angel hair pasta
  • 2 teaspoons olive oil
  • 4 ounces fresh parmesan cheese, grated

Recipe

  • 1 wash and thoroughly dry the chicken breasts. sprinkle some of the rub over each and work it into the skin well. melt the butter in a plastic contaner and carry outside to the grill with your favorite wish. cook the breasts on the grill for 5 minutes or until the chicken starts to firm up. each time you turn the breasts, baste them with some of the melted butter. do not overcook as we will be cooking them a little more in the kitchen. when done, set the breasts aside for later.
  • 2 put the spaghetti sauce in a pan, cover it, and heat it on a medium setting.
  • 3 cook the angel hair pasta as usual, add the olive oil to the pot to keep the noodles from sticking together. about 2 minutes before the noodles are done, cover the chicken breasts with grated parmesan cheese and heat them on a plate in the microwave for about 45 seconds or until the parmesan is about halfway melted. strain the noodles and scoop onto the serving plates. put a chicken breast on top of the noodles and cover with the spaghetti sauce. serve immediately.

Brooke's Portabellas

  • 2 whole portabella mushroom caps
  • soy sauce
  • worcestershire sauce
  • kitchen bouquet, liquid
  • mccormick's spicy mccormick's montreal brand steak seasoning
  • fresh minced garlic
  • 2 -4 teaspoons margarine or 2 -4 teaspoons butter
  • 1 yellow onion
  • 1 cup water

Recipe

  • 1 take the portabello caps, wash them, and let dry for about 10 mins or blot dry with towel. you want them dry enough to absorb all of the flavors.
  • 2 i make separate pouches with foil and toss them in the oven or straight onto the edge of the grill outside. if you do this, use 2 sheets of foil per pouch and after you've stuffed them, fold them up like a burrito. you can put it all into a baking dish though. just make sure that the dish is small enough that the mushrooms are at least part of the way covered in liquid after they get hot. i would line the dish with foil and cover with foil as well though. you do not want the liquid to burn off.
  • 3 i do this on the stove top with great results all of the time too. so, grab a pan if you wanna. just be sure to cover it and stir often until the mushrooms are done to your desired tenderness.
  • 4 first, slice the mushrooms thickly, about as thick as your ring finger (beside your pinky). put into your pouch or dish and set aside.
  • 5 cut your onion whichever kind you like. i love yellow with this. i use large chunks but, chop as desired. then, top your mushrooms with it.
  • 6 depending on how spicy you like your food, cover mushroom and onion with the mccormick's seasoning. i use a lot . i mean a l o t! :).
  • 7 you can sub. mccormick's for coarse black pepper, but it won't do it justice.
  • 8 next, put on your garlic. i use about 1/2 of a teaspoon minced for 2 mushroom caps. it seems like a lot but, keep in mind, that it has to "stand up" to the sauces that you are about to add, which are all powerful by themselves.
  • 9 in a bowl, mix 10 shakes of soy sauce ( use low sodium soy sauce or reduce the amount if you aren't a salt lover), 5 shakes of worcestershire sauce, 5 shakes of kitchen bouquet, and 2-4 tablespoons of margarine or butter. i use 3 teaspoons per cap. then, add about 1/4 cup of water and microwave until melted.
  • 10 stir well and pour mixture over the mushrooms, cover with foil or close pouches, and bake in the oven for about 15-20 mins at 350°f if you like them firmer, go 10 or 15.
  • 11 if you like wetter and softer like me, go 20.
  • 12 *if you do foil pouches on the grill, check them every 5 minutes or they will shrivel into nothing!
  • 13 *everyone in my house is addicted to these and we never ever grill without them. so, let me know if you like them too. =).
  • 14 if you don't like them my way, after you try it, experiment with adding more or less of any item to find your perfect flavor. though i've never seen anyone scrape this to the side of the plate. hehehee.

Cajun Red Beans And Rice

  • 1 translation:.
  • 2 wash dried beans.
  • 3 remove any foreign matter, such as stems, etc.
  • 4 place in a large 4 to 6 quarts (4 to 6-liter) saucepan or dutch oven. add 4 to 5 quarts (4 to 5 liters) water, ham, onion, garlic and seasonings. simmer slowly for about 3 hours until beans are soft and gravy is thick.
  • 5 to serve: cook up some rice. warm red bean soup in oven, on the stove top or in the microwave until nice and warm. serve over cooked rice, with tabasco sauce if you like it hot.

Crab Cake Stuffed Baked Potato

  • 1/4 cup fresh lump crabmeat
  • 1/4 cup mayonnaise
  • 1 tablespoon spicy brown mustard
  • 1 dash lemon juice
  • 1/8 teaspoon garlic powder (or to taste)
  • 1 dash salt and pepper
  • 1 tablespoon butter (i use smart balance light)
  • 1/8 cup crushed potato chips

Recipe

  • 1 scrub, then bake the potato in the microwave, about five minutes.
  • 2 while potato is baking, chop crabmeat into small pieces; add mayo, mustard, lemon juice, garlic, salt and pepper (and horseradish, if you like; could also use sour cream in there as well).
  • 3 mix the crab mixture well.
  • 4 when potato is done cooking, cut out top portion, scooping out insides of potato (leave about 1/4" potato to help shell remain stable) and placing them into the crab mixture bowl.
  • 5 mush the potato into the crab mixture, stirring well.
  • 6 melt 1 rounded tablespoons butter and stir into crab and potato mixture.
  • 7 pile crab and potato mixture into empty potato shell.
  • 8 sprinkle crushed potato chips on top.
  • 9 bake at 350* for about 15 minutes, or until potato chips start to brown.

Creamy Lemony Green Beans

  • 1 1/2 teaspoons lemon juice
  • 1 1/2 tablespoons olive oil

  • 1/2 teaspoon minced garlic (1 clove)
  • 1/3 cup shelled walnuts

  • 1 steam the green beans to their desired consistency (chewy or tender.).
  • 2 drain them and rinse with cold water to shock them into a vibrant hue.
  • 3 pat the greenbeans dry then put them in a mixing bowl.
  • 4 in a small bowl, make the sauce by blending the lemon curd, lemon juice olive oil, mustard, and garlic. microwave for about 30-40 seconds, just enough to heat it but make sure your microwave doesn't totally kill it.
  • 5 pour the sauce over the greenbeans, and toss well to coat.
  • 6 top with walnuts for crunch and pizazz.

Crab Butter

  • 1 preheat oven to 350°.
  • 2 combine first 5 ingredients in a bowl, stirring until blended.
  • 3 combine juice and cherries in a small bowl. microwave at high for 30 seconds; let stand 10 minutes.
  • 4 drain and coarsely chop cherries. stir cherries into cheese mixture.
  • 5 spoon 3 tablespoons cheese mixture in the center of each crepe; fold sides and ends of crepe over.

  • 7 cover and bake at 350° for 15 minutes or until blintzes are thoroughly heated. sprinkle with powdered sugar. serve immediately.

Cherry Almond Granola Bars

  • 1 1/2 cups old fashioned oats
  • 1 1/2 cups quick oats
  • 1 cup almonds, chopped (raw)
  • 1/2 cup dried cherries, chopped into smaller pieces
  • 2 tablespoons ground flax seeds
  • 1/2 cup honey
  • 3/4 cup almond butter
  • 1 teaspoon almond extract
  • butter (to coat pan)

Recipe

  • 1 pre-heat the oven to 350.
  • 2 spread the oats and almonds on a baking sheet and toast in the oven for about 10 minutes, stirring them occasionally to make sure nothing burns. when they're nice and nutty-smelling and light brown, remove from the oven and let them cool until they're cool enough to be touched. leave the oven on, you'll be using it again soon!
  • 3 add oats and almonds to a large mixing bowl along with the cherries and flax seed. drizzle the honey over the dry mixture and stir until just combined.
  • 4 warm the almond butter in the microwave or in a double boiler until it is melty. pour the almond butter into the oat mixture, add the almond extract, and stir to combine everything. the mixture should be moist and crumbly, but not soggy or dry. if you find it too wet, add some oats or flax seed. if it's too dry, add honey or almond butter a teaspoon at a time.
  • 5 once you've got the texture right, butter a 9x13 pan and press the mixture into it. i coat my hands with some oil so that i can really pack the oats down without anything sticking to my hands.
  • 6 bake for approximately 20 minutes. the bars are done when the top is a light golden-brown and the edges are slightly darker.
  • 7 allow to cool to room temperature, then cut into squares or bars. enjoy!

Brownie Cookies

  • 4 (1 ounce) bakers unsweetened chocolate squares
  • 3/4 cup margarine
  • 2 cups sugar
  • 3 eggs
  • 1 teaspoon vanilla
  • 2 cups flour

  • 1 preheat oven to 350 degrees.
  • 2 microwave chocolate and marg in a plastic container on high for 2 minutes.
  • 3 or until margarine is melted.
  • 4 stir until chocolate is completely melted.
  • 5 stir in sugar, then blend in eggs and vanilla.
  • 6 add flour and mix well.
  • 7 refridgerate for 15 minutes or until dough is a little stiff.
  • 8 drop by teaspoonfuls, or if you want a round shaped cookie, roll into 1" balls.
  • 9 place about 2" apart on a greased cookie sheet.
  • 10 bake for 8 minutes or just until set. do not over bake!
  • 11 let stand on a baking sheet for 1 minute, then transfer to a wire rack and cool completely.

Cherry And Chocolate Brownies

  • 200 g dark cooking chocolate
  • 150 g butter, chopped
  • 1 cup brown sugar (200g)
  • 3 eggs, lightly beaten
  • 1 cup plain flour (150g)
  • 1 cup desiccated coconut (85g, see suggested variation above)
  • 425 g black cherries, pitted, drained

Recipe

  • 1 preheat oven to 180°c; lightly grease a 16cm x 26cm pan and line it with non-stick baking paper.
  • 2 place the chocolate and butter in a microwave-safe dish (a microwave tupperware jug is ideal for this purpose); microwave on medium/50% power, stirring once, for 2 minutes or until the chocolate and butter have melted.
  • 3 stir the sugar into the chocolate mixture, stirring well to thoroughly dissolve any lumps; stir in the eggs, flour and coconut; once these ingredients are well combined, add the cherries.
  • 4 pour the mixture into the prepared pan and bake for 40 minutes; leave in the pan to cool; then cut into squares to serve.

  • 1 preheat oven to 350°.
  • 2 in a large mixing bowl combine eggs, sugar, oil, and vanilla, mix well.
  • 3 in microwave melt 2 tbsp butter-add cocoa powder, mix well, and cool.
  • 4 grate zucchini.
  • 5 add zucchini and cocoa powder mix to the bowl, mix well.
  • 6 in another bowl add flour, baking soda, cinnamon, salt.

Baked Potato Soup

  • 1/4 teaspoon pepper
