Moussaka Cottage Pie

Ingredients

  • 4 tablespoons olive oil, divided
  • 2 medium onions, cut into medium dice
  • 3 large cloves garlic, minced
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground cloves
  • 2 pounds lean ground beef or turkey
  • 2 cups canned crushed tomatoes
  • 1/3 cup dark or golden raisins
  • 1 pound eggplant, cut into 1/4-inch thick slices
  • salt and pepper
  • 1 (24 ounce) package refrigerated mashed potatoes, warmed in the microwave according to instructions

  • heat 2 tbs. oil in a 12-inch ovenproof skillet over medium-high heat. saute onions until tender, about 5 minutes. add garlic, cinnamon and cloves; cook about 1 minute. add meat, stirring to break it up, and cook about 5 minutes. stir in tomatoes and raisins; simmer 10 minutes.
  • arrange eggplant slices on a lipped cookie sheet. brush both sides with remaining oil, and season with salt and pepper. broil on upper oven rack, turning once with kitchen tongs, until golden brown, about 5 minutes per side.
  • reduce heat to 400 degrees. lay eggplant in a single layer over meat mixture. whisk egg into mashed potatoes; spread over eggplant. bake on lower rack until sauce is bubbly, about 20 minutes.

  • line a baking sheet with waxed paper.
  • place white chocolate in a microwave-safe bowl; heat in the microwave until melted, 60 to 90 seconds. stir until smooth.
  • place one gallon-sized resealable bag inside a second gallon-sized bag, creating a double-layered bag. place candy canes inside the inner bag and seal. crush the candy canes inside bag with a rolling pin. stir crushed candy canes into melted white chocolate.

  • 4 (9 inch) frozen pie crusts, thawed
  • 1 cup frozen corn
  • 1 cup frozen peas
  • 1 cup frozen diced carrots
  • 2 cups diced cooked turkey
  • 1 cup gravy
  • 1 cup diced leftover green beans
  • 1 tablespoon bacon bits
  • 1 teaspoon dried parsley
  • 1 teaspoon dried sage
  • 1 teaspoon dried thyme
  • ground black pepper to taste
  • 1 egg, beaten
  • 1 teaspoon water

  • preheat oven to 400 degrees f (200 degrees c). line 2 pie dishes with prepared pie crusts.
  • stir corn, peas, and carrots together in a microwave-safe glass or ceramic bowl and cover the bowl with plastic wrap. cook in the microwave until tender, 2 to 6 minutes.

  • 1/4 cup soy sauce

  • cut the ham in half lengthwise. place into a large pot, and fill with enough water to cover. bring to a boil and cook for 1 hour, replenishing water as needed. drain.

  • place the ham halves into a glass or ceramic baking dish with the cut sides facing up. cover the ham with the brown sugar mixture. cook in the microwave for 15 minutes. slice and serve.
