Cheesy Pretzel Dipping Sauce

Total Time: 15 mins Preparation Time: 15 mins

Ingredients

  • 1/2 cup milk
  • 2 tablespoons unsalted butter
  • 8 ounces shredded sharp cheddar cheese (2 cups)
  • 4 ounces cream cheese, softened
  • 1/4 cup sour cream
  • 1 teaspoon deli-style prepared mustard
  • 1/8 teaspoon bottled hot pepper sauce (to taste)
  • salt & freshly ground black pepper
  • assorted pretzel, for dipping

Recipe

  • 1 in a large saucepan, bring the milk and butter to a boil; reduce heat. add cheddar cheese; whisk until smooth. remove from heat. add cream cheese, sour cream, mustard, and hot sauce; whisk until smooth. season to taste with salt and pepper.
  • 2 transfer sauce to serving dish. serve sauce warm with pretzels. if the sauce starts to cool and firm up, heat it in the microwave on low power, stirring frequently.

Christmas Meatballs

Ingredients

  • 2 eggs
  • 1 (1 ounce) envelope onion soup mix
  • 1/4 cup chopped dried cranberries
  • 1/2 cup seasoned bread crumbs
  • 2 tablespoons minced fresh parsley
  • 1 1/2 lbs lean ground beef
  • 1 (16 ounce) can whole berry cranberry sauce
  • 1/2 cup beef broth
  • 3 tablespoons brown sugar
  • 3/4 cup ketchup
  • 3 tablespoons finely chopped onions
  • 2 teaspoons cider vinegar

Recipe

  • 1 for meatballs:.
  • 2 combine eggs, soup mix, cranberries, bread crumbs and parsley in bowl. crumble in ground beef. mix. shape into 1-inch balls. arrange 12 to 14 meatballs on microwave-safe plate.
  • 3 cover with waxed paper. cook on high for 3 to 4 minutes, or until no longer pink. remove to paper towels to drain. repeat with remaining meatballs.
  • 4 for sauce:.
  • 5 combine cranberry sauce, broth, brown sugar, ketschup, onions and cider vinegar in microwave-safe 2 quart dish. cover and cook on high for 3 to 4 minutes, rotating once.
  • 6 gently stir in meatballs. cover and cook on high for 1 to 2 minutes, or until heated through.
  • 7 note: i'm just not wild about cooking meat in the microwave -- so i prefer to do these the old fashioned way. i have good luck with placing the formed meatballs on a rimmed baking sheet and placing them in the oven set at 350 for about 10 minutes -- just until they firm up. i them add them to a saucepan on the stove that i have made the sauce in and let them simmer on low heat until they are cooked through.

Biscuit-crusted Sausage-egg Pie

Ingredients

  • 1/2 extra virgin olive oil
  • 7 ounces pre-cooked breakfast sausage
  • 1/2 teaspoon dried oregano
  • 5 pieces refrigerated jumbo biscuit dough
  • 1 red onion, chopped
  • 3 ounces shredded mild cheddar cheese
  • 2 large eggs
  • 2 large egg yolks
  • 3/4 cup milk
  • 1/8 teaspoon salt
  • 1/8 teaspoon pepper

Recipe

  • 1 preheat the oven to 375 degrees.
  • 2 heat breakfast sausage in the microwave.
  • 3 grease a 9-inch pie pan with the olive oil. place 1 piece biscuit dough into a large resealable plastic bag and, using a rolling pin, roll into a 1/8-inch-thick disk. remove dough from the bag and transfer to the prepared pie pan. repeat with the remaining dough pieces, pinching the pieces together in the pan to form a crust.
  • 4 chop breakfast sausage and onion and combine in a large bowl. add oregano and cheese; spread evenly over the crust. in a medium bowl, beat the eggs, egg yolks, milk, salt and pepper. pour the egg mixture over the sausage mixture and bake until set, about 30 minutes. let cool for 10 minutes before serving.

Christmas Mice

  • 10 ounces maraschino cherries, with stems
  • 14 ounces oreo cookies
  • 11 ounces hershey chocolate kisses
  • 2/3 ounce red decorating gel
  • sliced almonds
  • 11 ounces semi-sweet chocolate chips
  • 2 teaspoons crisco shortening

Recipe

  • 1 drain cherries well and count them.
  • 2 unwrap an equal amount of chocolate kisses and carefully remove one side of the chocolate cookie from the oreo, leaving the cream filling on the other side. (save plain side for another use.).
  • 3 melt the chocolate chips and shortening in the microwave and stir till smooth.
  • 4 dip the cherries in the chocolate, shake to remove excess.
  • 5 set the cherry on the flat side of chocolate kiss, and then position them on cream side of the oreo with the stem hanging over the edge.
  • 6 position 2 sliced almonds for ears.
  • 7 use red gel for eyes.
  • 8 keep the chocolate warm by setting it in a bowl of warm water.
  • 9 line cookie sheet with wax paper to set the mice on as you put them together. when you get them all done, let them set for a few minutes before decorating.
  • 10 to make holly leaves - draw a "v" on each side of the red berry.
  • 11 for the leftover melted chocolate and plain half of oreos. dip each oreo in chocolate and either sprinkle coconut or chopped nuts on them.
  • 12 note: you could use cherries without stems and substitute chow mein noodles for the tail.

Chicken Spinach Artichoke Appetizer

  • 1 shallot
  • 3 garlic cloves
  • 2 tablespoons olive oil
  • 1 tablespoon heavy cream
  • salt
  • fresh ground pepper
  • 2 teaspoons paprika
  • 2 1/2 tablespoons parsley
  • 1/2 cup romano cheese
  • 1/2 cup parmigiano-reggiano cheese
  • 2 boneless skinless chicken breasts
  • 1 cup spinach (frozen or fresh)
  • 1/3 cup marinated artichoke (in a jar)
  • 1 pizza dough (i used the walmart brand roll) or 1 sheet puff pastry
  • 1 egg
  • 1 -2 tablespoon water

Recipe

  • 1 cut up shallot, garlic, artichokes, and chicken breasts and put in separate containers. thaw out spinach in microwave and coarsely chop with artichokes. sauté chicken, shallots and garlic in olive oil, once cooked add spinach artichoke mixture to pan. once all ingredients are mixed together add cream, salt, pepper, paprika, and cheeses and mix. take off heat.
  • 2 roll out pizza dough and cut vertically twice and horizontally twice or as small as needed. place even teaspoon amounts of mixture in the center of one square and brush edges with egg wash mixture and fold over into a triangle or you can roll (i rolled when enetertaining non family,it looks nicer). fold edges over the edges and use a fork to make a imprint around the edges to seal it close. brush the outside with egg wash and bake at 375 degrees for 10-15 minutes per batch.

Cheesy Rice And Broccoli Casserole

  • 2 cups grated old cheddar cheese
  • 1 1/2 cups minute rice
  • 1 1/4 cups milk
  • 1 (10 ounce) can cream of mushroom soup
  • 2 cups sliced mushrooms
  • 2 cups broccoli florets
  • 1 small onion, chopped
  • 1/2 cup slivered almonds

Recipe

  • 1 in a 2 litre casserole dish mix together rice, milk, soup, mushrooms, broccoli, onion and 1/2 the cheese.
  • 2 microwave on high for 10 minute.
  • 3 stir well after 5 min and continue cooking.
  • 4 after 10 min, add the remaining cheese and slivered almonds.
  • 5 let sit for 5 min before serving.

Bow Tie Pasta In An Asiago Cream Sauce

  • 6 ounces grilled chicken breasts
  • 3 slices applewood smoked bacon
  • 4 tablespoons butter
  • 4 tablespoons flour
  • 2 cups whole milk
  • 1/2 cup romano cheese
  • 1/4 cup ricotta cheese
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/4 purple onion, chopped
  • 5 -6 green onions, chopped
  • 1 (12 ounce) package bow tie pasta

  • 1 grill chicken breasts in olive oil.

  • 7 heat the milk and microwave and add to butter and flour, cook until smooth and thick.

  • 9 cook until the cheese are melted and the ingredients are combined.
  • 10 boil water for pasta, add salt.
  • 11 once boiling, add pasta.
  • 12 cook pasta as directed on package (about 10-12 minutes) then drain.
  • 13 return pasta to pan and add cream sauce.

  • 1 (32 ounce) bag frozen hash browns, southern style diced
  • 2 cups colby or 2 cups monterey jack cheese, shredded
  • 1 (16 ounce) package sour cream
  • 1 (10 3/4 ounce) can condensed cream of mushroom soup
  • 1/4 cup onion, chopped
  • 1/4 cup butter or 1/4 cup margarine, melted
  • 1 teaspoon salt
  • 1/4 teaspoon pepper
  • 2 tablespoons fresh parsley, chopped

Recipe

  • 1 preheat oven to 350 degrees.
  • 2 spray 13x9 glass baking dish with cooking spray.
  • 3 in a large bowl, microwave potatoes on defrost 12-15 minutes or until thawed, stirring once or twice.
  • 4 add remaining ingredients except parsley, stir.
  • 5 spread into baking dish.
  • 6 bake 30-45 minutes or until browned and bubbly around the edges.
  • 7 sprinkle with chopped parsley.
  • 8 note: if you would like this to be even creamier, substitute some cream cheese for the colby or monterey jack.

Choco Monkey Oatmeal

Ingredients

  • 1/3 cup regular oats (not instant)
  • 1 packet diet hot cocoa mix (25 calories)
  • 1/2 medium banana, mashed
  • 1/8 teaspoon cinnamon
  • 1 dash salt

Recipe

  • 1 pour cocoa mix into a glass with cinnamon, sweetener and salt. add 1/4 cup of hot water, and stir thoroughly.
  • 2 once cocoa mix has dissolved, add 1/4 cup of cold water and stir. place mixture in the fridge to chill. (make sure it is cold, or oatmeal may bubble over when cooking!)
  • 3 when ready, combine with mashed banana and oats in a medium-sized microwave-safe bowl, and mix well.
  • 4 microwave dish for 2 1/2 - 3 minutes (depending on how thick you like your oatmeal). give it a stir, and then allow oatmeal to cool and thicken. enjoy!

  • 1 cook bow tie noodles according to package and drain. chop your onion and in a separate small microwavable bowl heat the onion and butter until butter is melted.
  • 2 when the noodles are done, mix noodles, butter, onion and sauerkraut and heat throughly in microwave.

Biscuits With Roasted Pears And Almonds #rsc

Ingredients

  • 4 canned refrigerated buttermilk biscuits
  • 8 medium bartlett pears
  • 1/4 cup dark brown sugar
  • 2 teaspoons cinnamon
  • 4 teaspoons butter
  • 1/2 cup raw slivered almonds
  • 1 tablespoon honey
  • 1/8 teaspoon salt
  • 1 cup semi-sweet chocolate chips
  • 1/4 cup sour cream
  • reynolds wrap foil

Recipe

  • 1 1. bake biscuits according to the directions on the package. set aside to cool.
  • 2 2. set the oven temperature to 400°f.
  • 3 3. in the meantime, peel, core and slice pears. place them in a medium bowl, add brown sugar and cinnamon and toss it all together, so the pears are well coated.
  • 4 4. butter a 12 inch piece of reynolds wrap foil and place the pears on top. carefully close it to form a sealed packet. place it in the oven and bake for 20 minutes.
  • 5 5. in the meantime, mix together almonds and honey in a small bowl, until well coated. place them in a 6 inch piece of reynolds aluminum foil and place it the oven for 8 minutes, until golden brown.
  • 6 6. melt the chocolate chips in the microwave (make sure to check every 15-20 seconds to make sure they don't burn).
  • 7 7. to assemble, slice each biscuit in half. top each half with the roasted pears (including their juice), 1/2 tablespoon sour cream and honey caramelized almonds. drizzle with melted chocolate.

Ingredients

  • Servings: 6
  • 1 large eggplant, peeled and cut into chunks (10"-12-inch long)
  • 1 onion, chopped
  • 1 red bell pepper, chopped
  • 3 garlic cloves, minced
  • 3 zucchini, cut into chunks (6-inch long)
  • 2 roma tomatoes, chopped
  • 1/2 teaspoon italian seasoning
  • 1/4 cup olive oil
  • 1/4 cup seasoned dipping oil or 1/4 cup other seasoned oil
  • 1/8 cup red wine vinegar
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/4 cup shredded mozzarella cheese (optional)

Recipe

  • 1 in a big pot over medium high heat, add olive oil, garlic, onion, red bell pepper, zucchini, eggplant and italian seasoning.
  • 2 you may need to add more oil to coat the vegetables.
  • 3 don't worry, you will drain most of it off later.
  • 4 cook and stir until eggplant is tender.
  • 5 it will take 15 minutes or more.
  • 6 while still cooking, stir in seasoned dipping oil, or other seasoned/flavored oil plus vinegar and salt and pepper to taste.
  • 7 after eggplant is tender, turn off heat and then drain the mixture of all excess oil and blot with paper towels.
  • 8 spread mixture on a baking sheet in a single layer and bake at 325 degrees for 30 minutes.
  • 9 let cool slightly and then spoon into a casserole dish.
  • 10 top with mozarella.
  • 11 it can be refrigerated at this point to be served later.
  • 12 before serving, bake or microwave, covered, until it is hot (if it has been refrigerated) and cheese is melted.

Chock Full O' Goodness Muffins

Ingredients

  • 2 cups flour
  • 1/2 cup brown sugar, lightly packed
  • 2 1/4 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon cardamom
  • 1/4 cup candied ginger, finely minced
  • 1/4 cup walnuts, minced
  • 1/2 cup dried cranberries
  • 1 cup pineapple juice
  • 1 apple, cored and coarsely chopped
  • 1/3 cup carrot, grated
  • 1/4 cup oil
  • 1 egg, beaten

Recipe

  • 1 preheat oven to 400°f.
  • 2 spray muffin tins (6 jumbo, 12 regular, 24 mini) with baking spray, or grease and flour.
  • 3 combine dry ingredients in large bowl. combine wet ingredients, and pour into dry ingredients.
  • 4 gently stir and fold, just until all ingredients are incorporated into the batter.
  • 5 fill muffin tins 2/3 full with batter.
  • 6 bake for 16 minutes for jumbo (12 and 10 for regular and mini, respectively.).
  • 7 crack open oven door and turn oven to broil.
  • 8 broil for three minutes or until the tops of the muffins are browned.
  • 9 let tins sit on wire rack for a couple minutes, then flip out muffins and let them cool on rack, or split open and enjoy warm with a gob of butter!
  • 10 for freezing:.
  • 11 put muffins into sandwich or storage bags, according to servings needed. put those bags into freezer bag and seal tightly. let thaw overnight or slowly in microwave or oven.

Christmas Morning Biscuit Rolls

Ingredients

  • 2 (12 ounce) cans buttermilk biscuits
  • 4 tablespoons butter
  • 1 cup sugar
  • 1 tablespoon orange rind
  • 1 (6 ounce) jar maraschino cherries, without stems

Recipe

  • 1 place cherries in the bottom of a greased bundt cake pan.
  • 2 melt butter in a small bowl in the microwave.
  • 3 in a separate bowl, mix sugar and orange rind.
  • 4 roll biscuits in melted butter, then roll in sugar mix.
  • 5 set biscuits on edge around the bundt pan.
  • 6 bake at 350 degrees for 30 minutes.

Antipasto Crescent Bites

Total Time: 29 mins Preparation Time: 15 mins Cook Time: 14 mins

Ingredients

  • 2 ounces cream cheese (do not use reduced-fat or fat-free cream cheese)
  • 1 (8 ounce) package crescent roll dough
  • 1 egg, water, beaten
  • 1 tablespoon water, beaten
  • 4 slices roasted red peppers, 3x3/4 inch
  • 2 large marinated artichoke hearts, cut in half lengthwise
  • 1 slice genoa salami or 1 slice other salami, cut into 4 strips
  • 4 small stuffed green olives, cut into halves

Recipe

  • 1 preheat oven to 375°f.
  • 2 cut cream cheese into 16 equal pieces, about 1 teaspoon per piece; set aside.
  • 3 remove dough from package. unroll on lightly floured surface. cut each dough triangle in half lengthwise to form 2 triangles. brush edges of triangles lightly with egg mixture.
  • 4 wrap 1 red pepper strip around 1 piece of cream cheese. place on dough triangle; fold over and pinch edges to seal. place 1 piece of artichoke heart and 1 piece of cream cheese on dough triangle; fold over and pinch edges to seal. wrap 1 salami strip around 1 piece of cream cheese. place on dough triangle; fold over and pinch edges to seal. place 2 olive halves and 1 piece of cream cheese on dough triangle; fold over and pinch edges to seal. repeat with remaining red pepper strips, artichoke pieces, salami strips, olives, cream cheese and dough triangles. place filled triangles evenly spaced on ungreased baking sheet. brush with egg mixture.
  • 5 bake 12 to 14 minutes or until golden brown. serve warm.
  • 6 note: bites may be made ahead. cool and store in an airtight container in the refrigerator. to serve, reheat on baking sheet in preheated 325°f oven 7 to 8 minutes or until warmed through. do not microwave.

Carne Asada Tacos

Ingredients

  • 3 lbs flank steaks
  • 1/3 cup vinegar
  • 1/2 cup soy sauce
  • 4 garlic cloves, minced
  • 2 limes, juiced
  • 1/2 cup olive oil
  • 1 teaspoon salt
  • 1 teaspoon ground black pepper
  • 1 teaspoon pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon chili powder
  • 1 teaspoon dried oregano
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1 onion, chopped
  • 1/2 cup fresh cilantro, chopped
  • 1 lime, juiced
  • 2 large tomatoes, chopped
  • 2 jalapeno peppers, chopped
  • 1 onion, quartered
  • 4 garlic cloves, peeled
  • 4 dried red chile pods
  • 1 pinch salt
  • 1 pinch pepper
  • 1 (32 ounce) package corn tortillas
  • 2 cups cotija cheese, grated
  • 2 limes, cut into wedges

Recipe

  • 1 lay the flank steak in a large glass baking dish. in a medium bowl, whisk together the vinegar, soy sauce, 4 cloves of garlic, juice of two limes, and olive oil. season with salt, black pepper, pepper, garlic powder, chili powder, oregano, cumin and paprika. whisk until well blended, then pour over the steak in the dish. turn over once to coat both sides. cover with plastic wrap, and marinate in refrigerator overnight.
  • 2 in a small bowl, stir together 1 chopped onion, cilantro, and the juice of 1 lime. set aside to use as a relish for the tacos.
  • 3 heat a skillet over medium-high heat. toast chile pods in the skillet for a few minutes, then remove to a bowl of water to soak for about 30 minutes. preheat the oven to 450 degrees f (230 degrees c).
  • 4 place the tomatoes, 1 onion, jalapenos, and 4 cloves of garlic onto a baking sheet. roast in the oven for about 20 minutes, until toasted but not burnt. place the roasted vegetables, and soaked chile pods into a blender or food processor, along with salt and pepper. puree until smooth.
  • 5 heat vegetable oil in a large skillet over medium-high heat. cut the marinated flank steak into cubes or strips. cook, stirring constantly, until the meat is cooked through and most of the liquid has evaporated.
  • 6 warm the tortillas in a skillet for about a minute on each side to make them pliable. tortillas may also be warmed in a microwave oven. arrange two or three tortillas on a plate, and lay a generous amount of beef over them. top with a sprinkle of the onion relish and a large spoonful of the pureed salsa. add as much cheese as you like. garnish with lime wedges, and serve.

Baked Chimichangas

Total Time: 35 mins Preparation Time: 5 mins Cook Time: 30 mins

Ingredients

  • 1 lb ground turkey breast
  • 1 (1 1/4 ounce) packet taco seasoning
  • 0.5 (10 ounce) can rotel tomatoes (drained, only add more if you want it really spicy)
  • 0.5 (15 ounce) can black beans (drained)
  • 10 low-carb flour tortillas (i like mission carb control tortillas)
  • cheese sauce (queso) (optional)
  • sour cream (optional)
  • mexican blend cheese (optional)
  • lettuce (optional)
  • rotel tomatoes (optional)

Recipe

  • 1 pre heat oven to 350°f.
  • 2 coat a large skillet with cooking spray (non-stick pan recommended).
  • 3 cook turkey, breaking into small pieces as you go, until no longer pink.
  • 4 add rotel tomatoes, black beans. and taco seasoning to turkey. follow directions on the seasoning packet, cooking until there is no excess liquid in the meat mixture.
  • 5 spray baking pan with cooking spray (i line my pan with foil for easier clean up)
  • 6 warm tortillas in oven or microwave until slightly warm and pliable.
  • 7 place a small scoop of meat mixture on each tortilla (1/4 cup to 1/3 cup scoop). fold in sides then roll to enclose and lay in baking pan. if you want the chimichanga to be crispy all around, leave room between each one.
  • 8 bake for approximately 20 minutes or until the chimichangas feel crisp to the touch.
  • 9 serve with your favorite toppings.

Cheesy Potatoes W/ Corn Flakes

Total Time: 1 hr 15 mins Preparation Time: 15 mins Cook Time: 1 hr

Ingredients

  • Servings: 8
  • 1 (32 ounce) bag frozen hash browns (shredded or cubed)
  • 2 cups cheddar cheese (can be reduced fat)
  • 16 ounces sour cream (can be light)
  • 1 (10 3/4 ounce) can cream of chicken soup (can be 98% fat-free soup)
  • 3/4 cup butter or 3/4 cup margarine
  • 1 cup corn flakes (more if desired)

Recipe

  • 1 take hash browns out of freezer, keep in bag, set aside.
  • 2 in microwave, melt 1 stick of butter in large bowl; mix in sour cream, cheese and cream of chicken soup.
  • 3 in 9x13 pan (sprayed with pam), spread hash browns. spread sour cream, cheese, and soup mixture on top.
  • 4 melt 1/2 stick of butter on stovetop, mix in corn flakes, stir (smash them a little too) until butter is absorbed. you may need/want to add more corn flakes.
  • 5 sprinkle corn flakes on top of sour cream, cheese and soup mixture.
  • 6 bake 1 hour at 350.

Coconut Spinach

Total Time: 15 mins Preparation Time: 15 mins

Ingredients

  • Servings: 6
  • 2 (8 ounce) packages frozen spinach, defrosted and pressed as dry as possible

  • 1 carefully twist cookies apart; set aside the halves with the cream filling. save the plain halves for another use.
  • 2 melt chocolate chips and shortining in microwave (about 50-60 sec.) stir until smooth.
  • 3 holding each cherry by the stem, dip into the melted chocolate. place on the cookie and add the kiss, pressing the kiss into the cream of the cookie base. set the covered cherrie slightly off center, with the tail extending over the edge.
  • 4 for ears, place the slivered almonds between the cherry and the kiss.
  • 5 refrigerate until set.
  • 6 pipe green holly leaves on the cream and add red berries. pipe red eyes on each chocolate kiss.

  • 1 wash the potatoes carefully and pierce each side with a fork to release steam while cooking.
  • 2 bake for approximately 1 hour at 350 degrees or microwave approximately 13 minutes on high until they are soft on all sides.
  • 3 once removed from the oven or microwave, allow them to rest for 5-10 minutes until you can easily handle them.
  • 4 once they can be handled easily, slice off the flat side neatly and remove the potato carefully with a soupspoon, being careful not to rip the skin.
  • 5 place the hot potato into a mixing bowl.
  • 6 mash the potato with a hand masher, mixer or potato ricer and add the boursin cheese and butter.

A Better Chocolate Eclair Cake

  • 1 combine sugar, cornstarch and salt in a large saucepan. whisk milk in until smooth and bring to a boil, scraping the bottom with a rubber spatula over medium high heat. immediately reduce heat to medium low and cook, continuing to scrape bottom, until thick and large bubbles appear on the surface, 4-6 minutes. off heat, whisk in butter and vanilla. transfer pudding to a large bowl and place plastic wrap directly on the surface. refrigerate until cool, about 2 hours or overnight.
  • 2 stir water and gelatin together in a bowl and let sit until gelatin softens, about 5 minutes. microwave until mixture is bubbling around the edges and gelatin dissolves, 15-30 seconds. using a stand mixer fitted with a whisk, whip 2 cups cream on medium low speed until foamy, about a minute. increase speed to high and whip until soft peaks form, about 2 minutes. add gelatin mixture and whip until stiff peaks form, about a minute more.

  • 1 steam or microwave the cabbage leaves until tender. let cool. cut out a 2- to 3-inch wedge of the tough stalk from the bottom of the leaves, taking care to leave the rest intact. set aside.
  • 2 coat the bottom of a large dutch oven with olive oil and place over medium heat. add onions and toss to coat. cover and sweat the onions, stirring occasionally, until onions are soft and translucent. add tomatoes, quartered garlic cloves, and water. simmer about 15 minutes, stirring occasionally.
  • 3 meanwhile, combine ground beef, italian sausage, diced onions, salt, pepper, oregano, basil, pressed garlic, egg, tomato paste, and rice. divide meat mixture into 8 portions.
  • 4 place each meat portion at the curled tip of a cabbage leaf. fold the top of the leaf down over the stuffing, fold the sides of the cabbage leaves in toward the center, and roll up to enclose the filling.
  • 5 place cabbage rolls seam-side down in a deep, heavy skillet or dutch oven. top with the tomato sauce. cover and simmer over medium-low heat about 1 hour.

Baked Chimichangas

Recipe

  • 1 preheat oven to 400 degrees.
  • 2 mix the pulled chicken meat, sliced chipotle peppers, tomato sauce, red cabbage, cumin, chili powder, salt and pepper.
  • 3 heat up tortillas in microwave for about a minute, until soft.
  • 4 on each tortilla, place a small mound of the cheese blend in the middle.
  • 5 place the meat mixture on top of the cheese and roll to make a burrito.
  • 6 place the burrito on a greased cookie pan, folded side down, and brush olive oil on the top part of the burrito.
  • 7 place in oven for about 15 minutes, or until the tortilla has browned.
  • 8 serve on plate and garnish with sour cream, salsa or pico de gallo, and avocado.

Christmas Mice Cookies

  • 2 cups chocolate wafer crumbs, divided (about 40 wafers)
  • 1/3 cup sour cream
  • 36 red nonpareils
  • 1/4 cup sliced almonds
  • 18 pieces black licorice strings (2 inches long each)

Recipe

  • 1 place chocolate chips in a microwave-safe bowl and heat in microwave until almost completely melted, stopping to stir occasionally. stir until smooth.
  • 2 stir in 1 cup wafer crumbs and the sour cream.
  • 3 cover and refrigerate for 1 hour or until cooled enough to handle easily.
  • 4 to make each mouse, roll about 1 tablespoon chocolate mixture into a ball, tapered at one end to make a teardrop shape.
  • 5 gently roll in remaining wafer crumbs to coat.
  • 6 decorate with nonpareils for eyes, almond slices for ears, and licorice for the tail.

Cheesy Potato-topped Beef And Vegetable Shepherd's Pie

  • 1 preheat oven to 400°f butter a 13x9-inch glass baking dish.
  • 2 in a pot, combine potatoes, 1/2 teaspoons salt and 6 cups cold water; bring to a boil over high heat. reduce heat and boil gently for 15 minutes or until tender. meanwhile, heat 1 cup of the milk in a measuring cup in a microwave or in a saucepan over medium heat, just until steaming.
  • 3 drain potatoes well. return to pot; mash with hot milk, half the cheese, and 1/4 teaspoons each salt and pepper. set aside.
  • 4 meanwhile, in a large deep skillet over high heat, cook beef, garlic, onion and italian seasoning, breaking up beef with a spoon for about 10 minutes or until beef is no longer pink; spoon off any fat. sprinkle flour over beef mixture; stir to combine. gradually stir in remaining milk; boil, stirring, for 1 minute. stir in tomatoes and 1/4 cup of the barbecue sauce; return to a boil, breaking up the tomatoes. reduce heat and simmer, stirring often, for 10-15 minutes or until thick. stir in vegetables and hot pepper sauce; season to taste with pepper and more of the barbecue sauce, if desired.

  • 1 preheat oven to 170oc. grease a 6.5cm deep, 11cm x 21cm (base) loaf pan. line base and sides with baking paper, allowing a 2cm overhang at both long ends.
  • 2 combine coconut, sugar and flour in a large bowl. whisk sour cream, egg and vanilla together in a bowl. add bananas to egg mixture and stir until well combined. add banana mixture to coconut mixture. gently stir to combine.
  • 3 spoon mixture into prepared pan. smooth the surface. bake for 1 hour or until a skewer inserted into the centre comes out clean. stand loaf in pan for 15 minutes. lift onto a wire rack. allow to cool completely.
  • 4 to make passionfruit glaze, sift icing sugar into a bowl. add passionfruit pulp and stir to form a thick paste. microwave, uncovered, on high for 45 seconds or until warm and runny. pour glaze over loaf. serve.

Chicken Spinach Mexiwraps

  • 1 microwave spinach in bag (open) for 1 minute.

  • 5 mix chicken and remaining ingredients, except tortillas, in large bowl with spinach.
  • 6 spoon 1/12 of mixture down center of each tortilla, fold ends in and wrap sides around filling.
  • 7 place seam side down in 8 x 8 baking pan.
  • 8 spoon remaining filling over tortillas.
  • 9 bake at 350 for 1 hour.
  • 10 serve with more salsa and sour cream.

Chive-stuffed Potatoes

  • 4 large idaho potatoes
  • 1/4 cup margarine
  • 1 (3 ounce) packed light cream cheese

  • 1 scrub potatoes; pierce several times with a fork. wrap each potato in a microwave-safe paper towel; arrange potatoes 1 inch apart.
  • 2 microwave at high 12 to 14 minutes. let cool to touch. slice away skin from to of each potato; carefully scoop out pulp, leaving shells intact. mash pulp.
  • 3 combine margarine and cream cheese in a medium microwave-safe glass bowl. microwave at high 30 to 40 seconds, or until cream cheese is softened.
  • 4 add potato pulp, chives, milk, salt and pepper, mixing well. stuff potato shells with potato mixture.
  • 5 place stuffed potatoes on paper towels. microwave at high 3 minutes, or until thoroughly heated.

Chicken Spaghetti

  • 1 boil chicken with bell pepper and onion.
  • 2 reserve broth to cook spaghetti in.
  • 3 pick chicken off bone and put in large bowl.
  • 4 boil spaghetti in reserved broth.
  • 5 while spaghetti is cooking add canned soups and rotels to chicken.
  • 6 cube velveeta and melt in microwave. then add to chicken mixture.
  • 7 drain noodles and add to chicken mixture. mix well.
  • 8 you can either heat all on stove or bake in oven at 350 until bubbly. i always put mine in the oven in a 9x13 pan.

Cornish Hen Made Easy

  • 1 wash chickens with cold water inside and out. place on rack breast side up over shallow baking pan. salt and pepper cavities and place half of lemon in each cavity. soften butter in bowl till almost melted (10 seconds in microwave) brush or rub butter all over chickens. drizzle half of the olive oil (1/4 cup) over each chicken. salt and pepper outside of chickens. drizzle two tablespoons each of minced garlic over each chicken. shake or crumble about a teaspoon of fresh or dried parsley over each chicken. dust very lightly with red pepper--no more than 1/4 teaspoon over each chicken. tie up chicken legs (truss) bake at 375 for 1 hour or until leg juices run clear. brush off loose minced garlic from each chicken. let rest 10 minutes, remove trussing string and serve.

Asian-inspired Rice Noodle Soup (microwave)

Carne Asada Burrito, San Diego Style

  • 1 meat:.
  • 2 lay the meat out flat and season liberally with salt and pepper. cut meat into 1/4 inch pieces. place meat in a zip lock bag and add fine diced onions and lemon/lime juices. mix well and refrigerate for at least 30 min., up to 24 hours.
  • 3 pico de gallo:.
  • 4 fine dice all ingredients and mix well. cover and refrigerate, stir occasionally.
  • 5 guacamole:.
  • 6 place avocado meat in a bowl and mash well with a fork, season to taste by adding remaining ingredients. cover with plastic wrap, pressing plastic down on the guacamole to remove any air, and refrigerate. (this prevents browning).
  • 7 carne asada burritos:.
  • 8 warm the tortillas in a microwave under a wet paper towel, one at a time. (about 20-30 sec.) or wrap tortillas in foil and place in the oven at 350 for 10-15 minute you want them warm and pliable for wrapping.
  • 9 on high heat add a teaspoon of oil to a medium sized skillet. ( i prefer cast iron) when oil begins to smoke add 1/4 to 1/3 pound of carne asada meat and onions. sear the meat until brown on both sides. place the meat and onions in the center of a warm tortilla. add pico de gallo, guacamole, (and french fries and/or cheeses if desired) and fold in the sides to form a burrito. serve hot.
  • 10 note: meat seems to cook best in small batches, it gets chewy if cooked all at once. i cook enough for just one or two burritos at a time.

Coconut Rough Slice Bars

  • 125 g butter, chopped
  • 200 g milk chocolate, chopped
  • 1 cup shredded coconut
  • 150 g coconut macaroons, finely chopped
  • 1/2 cup red glace cherries, chopped

  • 1 lightly grease 20cm by 30cm lamington pan.
  • 2 place baking paper to cover base of the pan and to extend over the 4 sides.
  • 3 melt butter and milk chocolate in heat proof bowl over pan of simmering water (i do this in the microwave on low). stir in coconut and macaroons.
  • 4 press mixture firmly into prepared pan, top with cherries; press again firmly.
  • 5 drizzle with dark chocolate; refrigerate until firm.
  • 6 cut into slices and serve.

Cornmeal Banana Bread (healthier)

  • 1 first melt your bananas in the microwave if you have not already done so. set aside to cool to room temperature (this is important because otherwise your egg might curdle later on).
  • 2 then combine flour, cornmeal, oat flour, oats, baking powder, pumpkin pie spice and salt in a large bowl.
  • 3 in a second bowl combine bananas, almond butter, egg, milk and almond extract and mix well.
  • 4 combine dry and wet ingredients and mix until just combined. the dough should be rather thick, but not dry. if needed add a splash more milk or two.
  • 5 pour batter into a prepared loaf pan and bake in the pre-heated oven at 180 c/350 f for 35-40 minutes.
  • 6 remove to a wire rack to cool completely and enjoy!
