Classic Potato Salad

Total Time: 40 mins Preparation Time: 20 mins Cook Time: 20 mins

Ingredients

  • 1 cup mayonnaise
  • 1 tablespoon vinegar
  • 1 tablespoon fresh lemon juice (not from concentrate)
  • 1 teaspoon salt
  • 1 teaspoon sugar
  • 1/4 teaspoon pepper
  • 4 cups cooked cubed peeled potatoes (5 to 6 medium i cook the potatoes in the microwave with the skins on, let them cool and then peel)
  • 1 cup sliced celery
  • 1/2 cup chopped onion
  • 4 hard-boiled eggs, chopped

Recipe

  • 1 combine first 5 ingredients.
  • 2 add peeled and cubed potatoes.
  • 3 add remaining ingredients, adding chopped eggs last.
  • 4 cover and chill (i always sprinkle this with a little paprika before covering).

Canadian Lickin" Good Barbecued Chicken Legs

Ingredients

  • Servings: 3
  • 6 chicken legs
  • 2 large crushed garlic cloves
  • 1/2 cup water
  • 1/4 cup ketchup
  • 2 tablespoons soy sauce
  • 1 tablespoon liquid honey

Recipe

  • 1 place the drumsticks in a large nonstick frying pan. place over medium high heat. saute the chicken until lightly browned on all sides about 10 minutes, adding a little vegetable oil to the pan, if needed.
  • 2 reduce heat to low. stir the garlic into the fat in the pan, if needed. then, add the water, ketchup and soy sauce and stir until mixed. cover and simmer for about 30 minutes, turning the chicken about every 5 minutes, until the chicken feels springy to the touch. remove chicken to a platter.
  • 3 increase heat to medium. gently boil the sauce, uncovered, stirring often, until the sauce is thick enough to coat the chicken, about 5 minutes. stir in the honey. pour the sauce over the chicken and serve. serves 3 to 4. prep time: 20 minutes/cooking time: 45 minutes.
  • 4 runny honey: if liquid honey crystallizes, remove the lid and place the jar in a saucepan filled with several inches of hot water and heat gently until the honey melts, or warm the jar in a microwave.

Chele's Beer Cheese

Ingredients

  • 1 (16 ounce) sharp cheddar cheese, grated
  • 1 (32 ounce) box velveeta cheese, cubed
  • 1 (8 ounce) package cream cheese (at room temperature)
  • 1 (12 ounce) bottle beer
  • 1 tablespoon worcestershire sauce
  • 1 teaspoon tabasco sauce
  • 2 teaspoons garlic powder
  • 1 (16 ounce) hawaiian sweet bread

Recipe

  • 1 place velveeta and cheddar in a microwave safe bowl, and on medium power microwave 1 minute. take out and stir. continue at 30 second intervals until cheese is completely melted.
  • 2 add cream cheese and mix together well.
  • 3 add beer a bit at a time while continuing to stir until the mixture is creamy. it will look lumpy at first, like it is curdling or separating but it's fine. keep stirring and it will get creamy. you can reheat in small intervals if necessary if the cheese thickens up too much before all of the beer is incorporated.
  • 4 after the beer is incorporated and the mixture is creamy, add the garlic powder, worcestershire sauce and tabasco. of course spice is personal, so feel free to add more or less to suite your personal taste.
  • 5 to serve, cut a hole in the middle of the hawaiian bread to make a "bowl" for the cheese. keep the center of the bread and cut it into about 2" cubes to dip or put a spoon in the cheese, to encourage folks to spoon the cheese over the bread. if it's a large gathering, i usually cube the bread in a basket, and put the cheese on the side in a bowl or crock.

Ingredients

  • Servings: 4
  • 4 cups cauliflower florets (about 1/2 large head)
  • 1 (12 ounce) can nonfat milk, divided
  • 1/4 teaspoon salt
  • 3/4 cup shredded sharp cheddar cheese
  • 2 tablespoons all-purpose flour
  • 1 tablespoon chopped fresh chives
  • 1 teaspoon dijon mustard
  • 1/4 teaspoon pepper

Recipe

  • 1 microwave cauliflower according to your brand's directions (8-10 mins) and until desired tenderness. we like ours without any crunch.
  • 2 bring 1 1/4 cups milk and salt to a boil in a large sauce pan over medium-high heat. reduce heat.
  • 3 meanwhile, whisk flour and the remaining 1/4 cup milk in another small bowl until smooth; stir the mixture into the pan and cook, stirring, until thickened, about 1 minute. stir in the cheese, chives, mustard and pepper.
  • 4 stir microwaved cauliflower into cheese sauce and serve.
  • 5 optional: sprinkle with breadcrumb mixture (1/2 cup dry breadcrumbs, 1/4 cup cheese, 1 teaspoon oil). broil until the top is crispy and beginning to brown, 1 to 2 minutes.

Bruschetta (garlicky)

Ingredients

  • Servings: 4
  • 1 head garlic, minced
  • 3 fresh tomatoes, diced
  • 1 tablespoon balsamic vinegar
  • 1/4 cup extra virgin olive oil
  • 1/4 cup grated parmesan cheese
  • 4 slices french bread, toasted or 4 slices baguette or 4 slices italian bread, toasted or 4 slices baguette
  • 1/4 cup chopped fresh basil

Recipe

  • 1 cut 4 slices off of loaf of bread; place in 350°f oven for 2-3 minutes per side to toast.
  • 2 place garlic, tomatoes, basil, oil and vinegar in bowl and mix thoroughly (taste at this point, more vinegar may be needed). heat mixture in microwave for 2 minutes if cold (room temperature is fine).
  • 3 place toast on baking sheet.
  • 4 place mixture on toasted bread approximately 1/2 inch high covering all areas sprinkle top of tomato mixture with parmesan cheese.
  • 5 broil for 1 minute (until cheese is melted).
  • 6 serve.
  • 7 can be served on smaller pieces of a baguette for hors d'oeuvres.
  • 8 if you don't love garlic reduce garlic by half.
  • 9 to make mixture stronger, make it and place in the fridge for a few days (no more than 2).
  • 10 enjoy.

Apple Kugel - Microwave Dish

  • 8 ounces egg noodles, cooked & drained
  • 1/3 cup sugar
  • 2 medium apples, peeled, cored and finely chopped
  • 1/2 cup sour cream
  • 1/2 cup cottage cheese
  • 1 teaspoon cinnamon
  • 1/2 teaspoon salt
  • 2 tablespoons brown sugar
  • 3 eggs
  • 1/3 cup raisins
  • 2 tablespoons chopped walnuts
  • 2 tablespoons butter

Recipe

  • 1 beat eggs then combine all ingredients except brown sugar, walnuts and butter.
  • 2 mix well and pour into 8 inch square glass dish.
  • 3 microwave on medium high (70%) for 7 minutes.
  • 4 combine brown sugar, nuts and butter and sprinkle over top.
  • 5 microwave on medium high (70%) for 7 to 9 minutes longer or until firm in center.

Almond Apple Cream Cheese Tart

  • Servings: 8
  • 1 pie crust, to fit a 9-inch pan
  • 1 (7 ounce) box odense almond paste
  • 8 ounces cream cheese, room temperature
  • 1/4 cup sugar
  • 1 large egg
  • 1/2 teaspoon grated lemon rind
  • 1 pinch salt
  • 2 tart apples, peeled, cored and cut into thin slices
  • 1/4 cup brown sugar
  • 1/2 teaspoon cinnamon
  • 3 tablespoons apricot jam

Recipe

  • 1 preheat oven to 375°f.
  • 2 roll out pie crust to a line tart pan, carefully pressing into corners and up sides.
  • 3 between two sheets of wax paper, roll the almond paste into a 9-10 inch circle.
  • 4 lay the almond paste circle over the pie shell and gently press into it. with knife, remove any excess pie shell or almond paste from edge of tart pan, making it even.
  • 5 beat cream cheese, sugar, egg, lemon rind and salt until light and fluffy, and spoon evenly onto crust.
  • 6 in a bowl, toss together the sliced apples, brown sugar, and cinnamon. layer apple slices over cream cheese mixture.
  • 7 bake for 40-45 minutes or until cream cheese is set and slightly puffed. set pan on wire rack to cool.
  • 8 in a microwave or small saucepan, melt apricot jam with one tablespoon water. brush apples for a shiny beautiful glaze. unmold when cool. serve room temperature or chilled.

Chipotle Grilled Steak Sandwich

Ingredients

  • 2 large green plantains, about 10 inches long and 2-3 inches wide
  • 1 tablespoon vegetable oil
  • salt
  • fresh ground black pepper
  • 1 cup breadcrumbs
  • 1/2 teaspoon cayenne pepper
  • 1/2 teaspoon black pepper
  • 1 teaspoon salt
  • 1/4 cup paprika
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 24 ounces skirt steaks
  • 6 ounces salted butter, melted
  • 1 cup cajun spices
  • 1 cup mayonnaise
  • 1 teaspoon chipotle chili sauce
  • 1/2 cup all-purpose flour
  • 1 1/4 teaspoons salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1 pinch cayenne pepper
  • 1 large spanish onion
  • 2 cups shredded mexican blend cheese

Recipe

  • 1 peel plantains, and cut in half widthwise, then cut in half lengthwise.
  • 2 in a large pot or deep-fryer, preheat vegetable oil to 325°f.
  • 3 add the plaintains to the oil, and fry for 5 minutes.
  • 4 remove them and place on a flat surface.
  • 5 increase heat to 375°f.
  • 6 with a metal flat spatula, press down onto the plantains until they are flat, less than 1/4 of an inch.
  • 7 using a knife to help scrape the plantain off the spatula, deep-fry the plantains again for 3 minutes.
  • 8 pull them out and season with salt and pepper.
  • 9 combine the breadcrumbs, cayenne pepper, black pepper, salt, paprika, oregano, thyme, garlic powder, onion powder to create cajun spice.
  • 10 dip each piece of steak into 4 ounces melted butter and then into the cajun spice, covering both sides of the steak.
  • 11 spread the remaining melted butter onto a flat top or metal skillet, place the steak on top and cook on both sides until medium or preferred degree of doneness.

Ingredients

  • Servings: 6
  • 1 lb boneless skinless chicken breast (four 4 oz. pieces)
  • 2 cups water
  • 1/2 cup dry wine
  • 2 chicken bouillon cubes, crumbled
  • 2 medium carrots, chopped
  • 1 cup frozen green pea
  • 2 tablespoons olive oil
  • 1 medium onion, chopped
  • 3 tablespoons all-purpose flour
  • 5 ounces fat-free evaporated milk
  • 1 (15 1/4 ounce) can corn, drained
  • 6 pieces phyllo dough

Recipe

  • 1 place chicken, water, wine, and bouillon cubes in a medium pan. bring to a boil, lower heat and cook gently, uncovered for 15 minutes. remove from heat and allow to cool. set aside one cup of broth and chop chicken into chunks.
  • 2 preheat oven to 400°f coat a deep 8-inch pie dish with cooking spray.
  • 3 microwave carrots and peas for 2 minutes. drain. heat oil in a medium nonstick pan, add onions and cook until soft. stir in flour and cook over low heat for 2 minutes.

Apple Juice Sabayon And Berries

Ingredients

  • 2 pints strawberries (or other fresh berries)
  • 1 tablespoon lime juice, juice of 1/2 lime
  • 2 tablespoons sugar
  • 1 cup apple juice (juice of 4 apples)
  • 1 tablespoon lime juice, juice of 1/2 lime
  • 1/4 teaspoon cinnamon
  • 1 teaspoon vanilla
  • 4 egg yolks
  • 3 tablespoons sugar

Recipe

  • 1 hull and slice strawberries, cut lime in half and juice 1/2, pour over strawberries and toss with 2 tbsp sugar, set aside.
  • 2 juice 4 apples, or measure out 1 cup of ready made apple juice. heat in microwave until warm, around 30 to 45 seconds. add cinnamon and vanilla and stir to combine.
  • 3 separate eggs, and put egg yolks in large metal bowl, suitable for using as the top of a double boiler. put water on to boil, and when water comes to boil, put top bowl on top and lower heat to medium low to medium. don't want the mixture to cook too quickly.
  • 4 whisk egg yolks and sugar in bowl and whisk until light in colour. add apple juice mixture and put over top of boiling water. whisk continously. the mixture should approximately double in size. keep cooking until it is light and fluffy in colour and thickened.
  • 5 take off heat. put berries in dessert dishes and spoon warm sauce over top. you can eat this warm or cold. you can also sprinkle toasted nuts over top as a garnish.

Canadian Best Ever Pancakes And Pancake Mix

  • 9 cups sifted cake-and-pastry flour
  • 1 cup skim milk powder
  • 1/2 cup granulated sugar
  • 1/4 cup baking powder
  • 1 tablespoon salt
  • 2 teaspoons baking soda
  • 1 lb shortening
  • 1 cup water
  • 1 egg, lightly beaten
  • 1/4 teaspoon nutmeg
  • melted butter

Recipe

  • 1 best pancake mix: in large bowl, stir together flour, milk powder, sugar, baking powder, salt and baking soda. using pastry blender, cut in shortening until in fine crumbs.

  • 2 cups broccoli, cuts
  • 6 ounces cheez whiz (can use salsa flavored for added zest)
  • 10 1/2 ounces cream of mushroom soup
  • 1 cup rice (measured uncooked)
  • 1/2 cup butter
  • salt and pepper
  • 1 small onion, chopped

Recipe

  • 1 preheat oven to 350 degrees.
  • 2 cook rice, set aside.
  • 3 while rice is cooking -- place broccoli, butter, onion and salt and pepper in bowl. microwave for 10 minute stir then microwave for 5 more minutes.
  • 4 microwave cheese wiz to melt.
  • 5 grease 9 x 13 baking pan.
  • 6 mix rice, cream of mushroom soup, cheese wiz and broccoli mixture together. spread in pan.

Chicken Pizza Pasta For One!

  • 4 ounces chicken breasts, 1 frozen fillet
  • 2 slices pepperoni, minced
  • 3 black olives, coarsely chopped
  • 1/3 cup pineapple chunk, diced

  • 2 ounces whole wheat penne, wholegrain hodgeson's mill, good

Recipe

  • 1 nuke frozen chicken in microwave however you usually do it. i leave mine in it's plastic wrapper for 4 minutes.
  • 2 boil penne to your degree of oneness, drain and return to pot.
  • 3 dice chicken and add to penne -set aside.
  • 4 heat pizza sauce on stove, adding minced pepperoni, chopped olive and chopped pineapple.
  • 5 when chicken and pasta are both done, add to the heated sauce.
  • 6 top with parmesan or feta cheese (optional and not included in calorie count).
  • 7 enjoy!

Chipotle And Green Chile Chicken Enchiladas

Ingredients

  • 3 tablespoons vegetable oil
  • 1 1/2 lbs boneless skinless chicken breasts
  • salt and pepper
  • 2 teaspoons cumin powder
  • 2 teaspoons garlic powder
  • 1 teaspoon mexican seasoning
  • 1 red onion, chopped
  • 2 garlic cloves, minced
  • 1 cup frozen corn, thawed
  • 5 canned whole green chilies, seeded and coarsely chopped
  • 4 canned chipotle chiles, seeded and minced
  • 1 (28 ounce) can stewed tomatoes
  • 1/2 teaspoon all-purpose flour
  • 16 corn tortillas
  • 1 1/2 cups enchilada sauce, canned
  • 1 cup shredded cheddar cheese, and jack cheeses
  • chopped cilantro leaf
  • chopped scallion
  • chopped tomato
  • sour cream

Recipe

  • 1 coat large saute pan with oil. season chicken with salt and pepper. brown chicken over medium heat, allow 7 minutes each side or until no longer pink. sprinkle chicken with cumin, garlic powder and mexican spices before turning. remove chicken to a platter, allow to cool.
  • 2 saute onion and garlic in chicken drippings until tender. add corn and chiles. stir well to combine. add canned tomatoes, saute 1 minute.
  • 3 pull chicken breasts apart by hand into shredded strips. add shredded chicken to saute pan, combine with vegetables. dust the mixture with flour to help set.
  • 4 microwave tortillas on high for 30 seconds. this softens them and makes them more pliable. coat the bottom of 2 (13 by 9-inch) pans with a ladle of enchilada sauce. using a large shallow bowl, dip each tortilla in enchilada sauce to lightly coat. spoon 1/4 cup chicken mixture in each tortilla. fold over filling, place 8 enchiladas in each pan with seam side down. top with remaining enchilada sauce and cheese.
  • 5 bake for 15 minutes in a preheated 350 degree f oven until cheese melts. garnish with cilantro, scallion, sour cream and chopped tomatoes before serving. serve with spanish rice and beans.

  • 3 cups apples, peeled and chopped
  • 1/2 cup sugar
  • 1 teaspoon cinnamon
  • 1 teaspoon nutmeg
  • 2 tablespoons lemon rind
  • 1/3 cup rum
  • 2 cups sliced almonds
  • 1 -2 tablespoon flour
  • 1 cup flour
  • 1/3 cup sugar
  • 1/3 cup butter or 1/3 cup margarine
  • 1/2 teaspoon cardamom
  • 1 1/4 lbs ricotta cheese
  • 1/3 cup sugar
  • 1 tablespoon flour
  • 1 tablespoon lemon juice
  • 2 teaspoons vanilla
  • 2 eggs
  • 8 ounces apple jelly
  • 1/2 teaspoon ginger

Recipe

  • 1 apples: in a saucepan, combine apples, 1/2 cup sugar, cinnamon, nutmeg, 2 tablespoons lemon juice, rum and 1 cup sliced almonds. cook over medium heat until apples are soft but not saucy. add 1 tablespoons of flour; mix well. add another tablespoons of flour if liquid is present. set aside.
  • 2 base: in a bowl, combine 1 cup flour, and 1/2 cup sugar. cut in butter with a pastry blender or two knives, until small crumbs form. sprinkle on cardamom. lightly pat mixture into a well-greased 10-inch springform pan.
  • 3 filling: in a mixer, combine ricotta cheese, 1/2 cup sugar, 1 tablespoons flour and 1 tablespoons lemon juice. beat until smooth. stir in vanilla. add eggs, one at a time; beat well. pour evenly onto base.
  • 4 spoon apple mixture over filling; sprinkle with remaining almonds. bake in 475f oven for 15 minutes. reduce heat ot 350f and bake for another 30-40 minutes, until golden brown and firm. cool in pan for 30 minutes.
  • 5 glaze: heat apple jelly until bubbles form (about 1 minute on high in microwave). add ginger; mix well. cool and pour over cooled cake while still warm in the pan. allow to set for 20 minutes before removing the ring.

  • 1 preheat the oven to 350 degrees, and take the pastry out of the freezer to thaw slightly.
  • 2 heat a sauté pan over medium heat with a little oil and sweat the celery and onion with a little salt.
  • 3 while that is softening, toss the veg medley with some canola oil, spread on a baking sheet, and roast in the oven.
  • 4 push the celery and onion off to the side of the pan and add the butter, flour, and curry powder. stir together until smooth and cook for 2 minutes.
  • 5 heat the broth and milk in the microwave until close to boiling. pour into the pan and bring to a boil (about 1 minute).
  • 6 add the veggies and the chicken to the pan and stir.
  • 7 move the mixture to a casserole dish, packing the mixture down to eliminate air bubbles.
  • 8 open the puff pastry sheet, and seal the seams from the folds by pressing with your fingers, then roll out the sheet with a rolling pin.
  • 9 using a fork, poke holes all over the dough, and then cut out rounds w/ a biscuit cutter (press straight down through the dough before turning the cutter). space the rounds about 1 inch inches apart on the top of the casserole.

  • 2 cups applesauce
  • 2 cups gumdrops
  • 1 cup nuts, chopped (optional)

Recipe

  • 1 remove black gumdrops if you don't like them (i use them). toss gumdrops in a little flour before using. this keeps them from dropping to the bottom of the cake.
  • 2 warm the applesauce in the microwave until just a bit hot, not really hot. stir in the baking soda and allow it to dissolve. allow to cool a bit.
  • 3 cream together: butter/margarine, sugars and eggs. mix in applesauce with baking soda.
  • 4 in separate bowl, combine flour, allspice, cinnamon and baking powder. add to creamed mixture along with floured gumdrops and nuts and stir in until incoporated.
  • 5 grease two loaf pans or one bundt pan (9 inches at least). add batter and bake in preheated 300 degree oven for 1.5 to 2 hours until done. cake is done when a toothpick inserted in center comes out with little specks of cake, but not doughy.

  • 1 in a microwavable bowl, melt the butter.

  • 3 once it's all melty and smooth, put the bowl into a larger bowl filled with ice so it can cool down and firm up.

Almond And Raisin Pilaf

  • 1 heat oil in large non-stick frying pan. add onions and fry over moderate heat soft.
  • 2 at the same time in a medium pan bring a small amount of salted water to boil. cook pasta until tender (about 3 min) drain thoroughly, and rinse with cold water. empty into a bowl for later.
  • 3 add raisins and rice to the onions and saute 2-3 minutes (add oil as needed). when finished transfer to the now empty medium pan. add the vegetable stock and bring to boil. cover and reduce to a very low heat for 10 minutes or until water is absorbed.
  • 4 in the now empty frying pan add a bit more oil and brown the almonds over moderate heat. after the first few are going dark brown and most are at least golden empty onto a paper towel and pat dry.
  • 5 if needed add more oil and add the vermicelli and fry. you want small clumps of toasted noodles ideally. it adds a nice texture to the meal.
  • 6 if the rice finishes first leave covered but remove from heat. when ready stir almonds and vermicelli into rice and serve.
  • 7 if you know you're not going to eat it all at once. serve the rice on the plate and then stir in a portion of the almonds and vermicelli. refrigerate the left over rice, store the almonds and vermicelli seperately.
  • 8 to reheat: add a tablespoon of water to the portion and reheat in microwave stirring frequently. when hot add almonds and vermicelli.

Cashew Truffles

  • 8 ounces confectioners' sugar (powdered)
  • 1/3 cup instant powdered milk (dry)
  • 1/4 cup pasteurized egg

  • 36 petit four paper cups (1-inch)
  • 6 ounces semi-sweet chocolate chips

  • 1 in a food processor with a steel blade, process cashews until finely ground
  • 2 add confectioners sugar and powdered milk and continue processing until completely combined
  • 3 add egg product, lemon juice and madeira, and process until stiff dough forms
  • 4 scrape into a bowl, cover airtight and refrigerate at least 8 hours or up to 2 days
  • 5 when ready to make the truffles, form the dough into 1-inch balls (slightly dampen your hands to minimize stickiness) and put on waxed paper
  • 6 refrigerate while melting the chocolate
  • 7 bring about 1 inch of water to just below simmering in a small skillet
  • 8 put semisweet chocolate chips in a 2-cup heatproof glass measure
  • 9 place glass measure in the water and stir the chips until melted
  • 10 leave glass measure in the simmering water while dipping
  • 11 remove dough balls from the refrigerator, and using a toothpick or small skewer, quickly swirl a ball in chocolate until completely coated
  • 12 let excess chocolate drip back into the glass measure

  • 15 if undipped balls get sticky, return them to fridge for a few minutes

  • 3 tablespoons butter or 3 tablespoons margarine

  • 4 -6 slices crisp bacon, crumbled (optional)

Recipe

  • 1 put all liquid ingredients and butter or margarine in pot on med-low heat and stir occasionally to make sure everything gets blended.
  • 2 while this is cooking, put frozen broccoli in a glass dish. cover with plastic or saran wrap, and microwave for 2-4 minutes, (just long enough to defrost but not to over-cook). drain broccoli. if you want to steam the broccoli on the stovetop instead you can, just don't overcook it til it gets too soft.
  • 3 as the cream mixture heats up to a slow bubble, check the consistency. once the ingredients are completely melted and slightly bubbly, add broccoli, cover & simmer on low heat for 10-15 minutes, stirring occasionally. if it looks too thick, add more milk. if it looks too thin or watery, add a tablespoon or two of flour.
  • 4 a minute or two before you serve, add the shredded cheese and stir until melted.
  • 5 serve with a nice caesar or garden salad and crusty bread.

Classy Baked Beans

  • 1 lb dried navy beans
  • 1 cup chopped onion
  • 6 slices bacon
  • 2 tablespoons brown sugar
  • 2 teaspoons worcestershire sauce

  • 1 tablespoon dry mustard
  • 1 teaspoon curry powder
  • 1 1/2 teaspoons salt
  • 1/2 cup dark rum
  • 12 ounces v8 vegetable juice

  • 1 soak the dry beans overnight.
  • 2 drain.
  • 3 cook three of the bacon strips (in the microwave is quick and easy) and crumble.
  • 4 mix beans, crumbled bacon, and the next 9 ingredients. mix well.
  • 5 pour into a dutch oven or bean pot.
  • 6 cut up remaining three strips of bacon into 2 inch lengths and place on top of beans.
  • 7 cook at 275 degrees for 7 hours or until beans are tender.
  • 8 stir in additional v8, molasses or water as needed during the cooking time (check after 3 hours, then every 2 hours after.).
  • 9 serve with classic brown bread cooked in the can.

Apple Martinis

  • 1 combine water and sugar in a glass measuring cup. microwave at high for 2 minutes or until sugar dissolves, stirring once; cool. combine sugar mixture, vodka, juice and liqueur ina pitcher; stir to combine.
  • 2 place crushed ice in a martini shaker. add vodka mixture to the shaker in batches; shake well to chill. strain about 1/2 cup vodka mxture in shaker into each of 10 galsses; repeat procedure with remaining vodka mixture, refilling ice as necessary. serve immediately.

Classic Potato Gratin

  • 2 lbs yukon gold potatoes or 2 lbs russet potatoes, peeled
  • 3 cups whipping cream or 3 cups heavy cream
  • 1 teaspoon coarse salt
  • 1/8 teaspoon fresh ground black pepper
  • 1 pinch of freshly grated nutmeg
  • 2 cloves garlic, peeled and smashed
  • 3/4 cup finely shredded gruyere cheese or 3/4 cup emmenthaler cheese or 3/4 cup comte cheese

Recipe

  • 1 heat the oven to 400°f.
  • 2 using a very sharp knife, a mandoline, or th slicing blade on a food processor, cut the potatoes into uniform 1/8-inch slices (no thicker).
  • 3 put the potatoes in a large heavy-based saucepan and add the cream, salt, pepper, nutmeg, and garlic.
  • 4 cook the mixture over medium-high heat until the cream boils, stirring occasionally (very gently with a rubber spatula so you don't break up the slices).
  • 5 when the cream boils, pour the mixture into a 2 1/2- or 3-qt.
  • 6 baking dish.
  • 7 if you don't want a tender but garlicky surprise mouthful, remove and discard the garlic cloves (i leave them in, they're delicious!).
  • 8 shake the dish to let the slices settle and then sprinkle the cheese on top.
  • 9 bake until the top is deep golden brown, the cream has thickened and bubbled, and the potatoes are extremely tender when pierced with a knife, about 40 min.
  • 10 don't worry if the dish looks too liquidy at this point; it will set up as it cools a bit.
  • 11 before serving, let the potatoes cool until they're very warm but not hot (at least 15 min.) or serve them at room temperature.
  • 12 note: this is also great for breakfast, barely re-warmed in the microwave.

Couscous Onigiri

  • 1 dash cinnamon
  • 1 dash maple syrup or 1 dash honey or 1 dash sugar

  • 1 combine all ingredients in microwave-safe bowl. microwave one minute, stir. microwave for another 30 seconds to one minute, until soy milk starts foaming.
  • 2 remove from microwave and let cool. press into onigiri molds and place in fridge for one hour. gently remove from the molds. done!
  • 3 i made these the night before, and they kept their shape overnight and had a wonderful, soft texture when eaten cold the next day.
  • 4 note 1: you can vary the flavours significantly by using different types of soy or rice milk, and bu changing the seasoning a little. i made these with vanilla soy milk and cinnamon, but you could use other flavours too.
  • 5 note 2: if you do not have onigiri molds, you can use small plastic containers to shape the onigiri, or you can improvise a mold using a cookie cutter, in this fashion:.
  • 6 place the cookie cutters on a plate. press the couscous into them as you would for a mold, packing the mixture very tightly. cover the plate with plastic wrap or with a dish cover. refrigerate as you would for a mold, and proceed as above.

Chicken Pillows

  • 3 large chicken breasts
  • 1 (8 ounce) package cream cheese
  • 2 cups italian seasoned breadcrumbs
  • 1/4 cup butter (melted)
  • 2 (8 count) packages crescent rolls
  • 1/2 cup sour cream
  • 1 (10 3/4 ounce) can cream of mushroom soup

Recipe

  • 1 boil chicken for about 20-25 min until cooked throughout. shred chicken like cheese (i just cut it really small). microwave cream chz for 30 sec in large bowl. add chicken to cream chz and mix. in 2 small bowls (like a cereal bowl) melt butter in one and fill the other 3/4 of the way with the italian bread crumbs. take one croissant and place about 2 tbs. of the chicken and cream chz mix. fold dough over all the mix like a little pillow of dough. dip pillow into the butter making sure to coat completely then place in bread crumbs. repeat. bake 350 for 25-30 minute.
  • 2 topping: in sauce pan add can of cream of mushroom soup, sour cream, and milk. heat until warm
  • 3 when its all done baking just top with sauce like gravy to biscuits. its delicious you will love it.

Chipotle Cream Sauce

  • pepper, to taste

Recipe

  • 1 melt the butter in a skillet over medium-high heat and sauté the shallot and garlic for 2 to 3 minutes; add the broth and wine and sauté another 3 minutes.
  • 2 reduce heat to medium-low and whisk in the sour cream, then the pureed chipotle.
  • 3 simmer for a couple of minutes to heat through and season to taste with salt and pepper.
  • 4 serve over chicken and/or pasta; makes about 2 servings.
  • 5 for an interesting twist, substitute vodka for the wine.

Broccoli Jicama Salad

  • 1 cook the broccoli with a small amount of water in a steamer or in the microwave until crisp-tender, about 5 minutes.

  • 3 meanwhile, place cranberries in a small bowl; add boiling water to cover.

Classy Spinach Bundles With Pistachio Dressing

  • 1/3 cup all-purpose flour
  • 3/4 cup heavy whipping cream

  • 4 cups chicken, cooked and cubed into bite size pieces
  • 1 tablespoon celery seed
  • 1/2 teaspoon poultry seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper

Recipe

  • 1 preheat oven to 450 degrees.
  • 2 in large skillet, over medium heat, add flour and cream, whisk together until well blended.
  • 3 slowly whisk in chicken broth until mixture is smooth.
  • 4 add cooked chicken, frozen vegetables (still frozen), celery seed, poultry seasoning, salt and pepper. heat to warm temperature, stirring often so it doesn't burn.
  • 5 put bottom crusts into two 8 inch pie plates that have been lightly sprayed with nonstick cooking spray.
  • 6 fill with chicken/vegetable mixture.
  • 7 put on top crusts. press edges to seal. cut three or four one inch slits in the dough so that steam can escape during cooking.
  • 8 bake for 16-18 minutes or until crust in golden brown.
  • 9 let the pie set for about 15 minutes before serving.
  • 10 note: instead of making two pies, you can freeze the filling for the second pie. then when you are ready to make another chicken pot pie, just thaw the mixture in the refrigerator and fill a pie crust. bake according to the above directions.
  • 11 to cut preparation time--use leftover chicken or turkey. another timesave is to buy the cook chickens at the grocery store deli.
  • 12 can reheat leftover pot pie in the microwave on a low power setting. my microwave has a reheat setting that i use for this.

  • 4 tablespoons cheese whiz

  • 1 steam broccoli in microwaveable bowl with 1/4 cup water, for about 3-5 minutes. cool a bit, mash with a fork.
  • 2 in a small saucepan, melt oil and butter.
  • 3 saute onion on low heat, with salt and pepper for 2 minutes, add garlic, stir in flour to make a roux. slowly add milk, stirring constantly. add mashed up broccoli.

  • 2 place bottom pie crust in pie plate.
  • 3 layer chicken, sugar snap peas, and carrots.
  • 4 mix soup with 3/4 can of milk.

  • 6 top with about 1 cup of 4-cheese mix and 1 cup mozzarella cheese.

  • 2 in a large stock pot melt butter on medium low heat and add cream of mushroom soup, salt, pepper and mix well. add both cheeses and stir until well melted. stir in the onions, mushrooms, and sour cream. gradually add the thawed hashbrowns mixing well. once mixed add to the greased casserole dish and bake at 350 degees for 45 minute.

  • 7 top with reserved cake mixture.
