Cake Balls

Ingredients

  • 1 (18.25 ounce) package chocolate cake mix
  • 1 (16 ounce) container prepared chocolate frosting
  • 1 (3 ounce) bar chocolate flavored confectioners coating

  • prepare the cake mix according to package directions using any of the recommended pan sizes. when cake is done, crumble while warm into a large bowl, and stir in the frosting until well blended.
  • melt chocolate coating in a glass bowl in the microwave, or in a metal bowl over a pan of simmering water, stirring occasionally until smooth.
  • use a melon baller or small scoop to form balls of the chocolate cake mixture. dip the balls in chocolate using a toothpick or fork to hold them. place on waxed paper to set.

Avocado And Black Bean Dip

  • 1 avocado - peeled, pitted, and mashed
  • 1/2 (15 ounce) can black beans, drained and rinsed
  • 1 tablespoon lime juice
  • 1 clove garlic, minced, or more to taste
  • 1/3 cup shredded cheddar cheese
  • sea salt to taste (optional)

  • mix avocado, black beans, lime juice, and garlic together in a microwave-safe bowl. sprinkle with cheddar cheese.
  • microwave dip on high until cheese is melted, about 1 minute. season with sea salt if desired.

Chocolate-covered Oreo Cookie Cake

  • 1 (18.25 ounce) package devil's food chocolate cake mix
  • 4 (1 ounce) squares baker's semi-sweet chocolate
  • 1/4 cup butter
  • 1 (8 ounce) package philadelphia cream cheese, softened
  • 1/2 cup sugar
  • 2 cups thawed cool whip whipped topping
  • 12 oreo cookies, coarsely crushed

  • heat oven to 350 degrees f.
  • prepare cake batter and bake in 2 (9-inch) round pans as directed on package. cool cakes in pans 10 min. invert onto wire racks; gently remove pans. cool cakes completely.
  • microwave chocolate and butter in small microwaveable bowl on high 2 min. or until butter is melted. stir until chocolate is completely melted. cool 5 min. meanwhile, beat cream cheese and sugar in large bowl with mixer until blended. gently stir in cool whip and crushed cookies.
  • place 1 cake layer on plate, spread with cream cheese mixture. top with remaining cake layer. spread top with chocolate glaze; let stand 10 min. or until firm. keep refrigerated.

Microwave Popcorn

  • 1/2 cup unpopped popcorn
  • 1 teaspoon vegetable oil
  • 1/2 teaspoon salt, or to taste

  • in a cup or small bowl, mix together the unpopped popcorn and oil. pour the coated corn into a brown paper lunch sack, and sprinkle in the salt. fold the top of the bag over twice to seal in the ingredients.
  • cook in the microwave at full power for 2 1/2 to 3 minutes, or until you hear pauses of about 2 seconds between pops. carefully open the bag to avoid steam, and pour into a serving bowl.

Creamed Spinach With Onions And Bacon

Ingredients

  • 4 slices bacon (optional)
  • 4 tablespoons butter, divided
  • 1 medium onion, chopped
  • 2 (10 ounce) packages frozen chopped spinach, thawed and squeezed dry
  • 2 tablespoons all-purpose flour
  • 1/2 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon ground black pepper
  • 1 cup milk

  • wrap bacon in a paper towel, and set on a plate. cook the bacon in the microwave oven until crisp, about 1 minute per slice.
  • melt 1 tablespoon of butter in a large skillet over medium heat. add the onion; cook and stir until transparent. add the spinach and cook, stirring frequently, until most of the liquid has evaporated.
  • in a separate skillet, melt the remaining butter over medium heat. sprinkle the flour over the butter and whisk in using a fork until smooth. season with garlic powder, salt and pepper; cook and stir until thick. gradually stir in the milk so that no lumps form, and simmer until thickened. add the spinach mixture to the cream sauce, and mix until coated. crumble bacon over the top and serve.
