Chocolate Lobster

Ingredients

  • 1 medium (1 1/2 pound) fresh lobster
  • 4 (1 ounce) squares semisweet chocolate, chopped
  • 1/2 cup milk
  • 1 tablespoon butter

  • preheat your oven's broiler. split the lobster down the back shell, remove the vein from the lobster's tail, and the sac that is behind the eyes. insert a long skewer into the tail to keep from curling.
  • broil the lobster about 5 inches from the heat for about 5 minutes on each side, or until the meat is opaque. remove skewer from tail.
  • while the lobster is cooking, make the chocolate sauce. in a small glass bowl, combine the chocolate, milk, and butter. microwave on high, stirring every 15 to 20 seconds until melted and smooth. pour chocolate sauce over lobster, and serve.

  • 2 cups graham cracker crumbs
  • 2 cups confectioners' sugar
  • 1 cup peanut butter
  • 1 1/2 cups semisweet chocolate chips
  • 4 tablespoons peanut butter

  • in a medium bowl, mix together the butter or margarine, graham cracker crumbs, confectioners' sugar, and 1 cup peanut butter until well blended. press evenly into the bottom of an ungreased 9x13 inch pan.
  • in a metal bowl over simmering water, or in the microwave, melt the chocolate chips with the peanut butter, stirring occasionally until smooth. spread over the prepared crust. refrigerate for at least one hour before cutting into squares.

erik's cheesy cauliflower casserole

  • 1 head cauliflower, cut into florets
  • 8 slices turkey bacon
  • 1 (8 ounce) package fat-free cream cheese, softened
  • 1/2 cup reduced-fat sour cream
  • 1/4 cup lowfat cottage cheese
  • 1 1/2 cups shredded reduced-fat cheddar cheese, divided

  • preheat oven to 350 degrees f (175 degrees c).
  • fill a large pot with lightly salted water and bring to a rolling boil. add cauliflower, bring back to a boil, and cook over medium heat until tender, 10 to 12 minutes. drain and transfer to a bowl.
  • line a microwave-safe plate with paper towels; arrange turkey bacon on the paper towels. top with more paper towels. microwave on high until bacon is crisp, 1 to 2 minutes. cool and crumble.
  • mix cauliflower with crumbled bacon, cream cheese, sour cream, cottage cheese, and 1/2 cup cheddar cheese using an electric mixer until evenly combined. transfer to a 9x13-inch baking dish; top with remaining 1 cup cheddar cheese.
  • bake in the preheated oven until cheese is melted on top, 15 to 20 minutes.

Chocolate Dipped Bing Cherries

Ingredients

  • 1 cup white sugar
  • 1 1/2 teaspoons vanilla extract
  • 8 ounces semisweet chocolate, chopped
  • 24 bing cherries with stems

    Ready Time: 2 hrs

  • pour the sugar into a shallow dish. drop two drops of vanilla at a time into the dish in 24 separate places to form lumps of vanilla sugar. set aside to allow the lumps to harden.
  • pit the cherries carefully from the bottom. i use a small curved dental tool. make sure the stem stays intact.
  • when the lumps of sugar have hardened, insert them into the cherries where the pits were; set aside. melt chocolate in the microwave, stirring every 30 seconds until melted and smooth.
  • hold cherries by the stem and dip into the chocolate leaving the very top uncovered. set on waxed paper to dry. refrigerate overnight to allow the sugar lumps to dissolve.

  • 2 1/2 cups vanilla wafer crumbs
  • 1/2 cup confectioners' sugar
  • 1 cup chopped pecans
  • 2 cups semisweet chocolate chips
  • 3 tablespoons light corn syrup
  • 1/4 cup

  • place the sugar in a shallow bowl, and set aside. combine the vanilla wafer crumbs, confectioners' sugar, and pecans in a bowl, and mix well.
  • place the chocolate chips in a microwave-safe bowl, and microwave on high for 1 to 2 minutes to melt the chips. stir the melted chips until smooth, and beat in the corn syrup and whiskey. scrape the chocolate mixture into the crumb mixture, and stir well to mix.
  • form the dough into 1-inch balls, and roll each ball in sugar. place the finished bourbon balls on a cooling rack to finish setting up.

hot pizza dip

Ingredients

  • Servings: 16
  • 1 (8 ounce) package cream cheese, softened
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon dried parsley
  • 1/4 teaspoon dried basil
  • 1 cup shredded mozzarella cheese
  • 1 cup grated parmesan cheese
  • 1 cup pizza sauce
  • 2 tablespoons chopped green bell pepper
  • 2 ounces pepperoni sausage, chopped
  • 2 tablespoons sliced black olives

  • in a small bowl, mix together the cream cheese, oregano, parsley, and basil.
  • spread mixture in the bottom of a 9 inch pie plate, or a shallow microwave-safe dish. sprinkle 1/2 cup of the mozzarella cheese and 1/2 cup of the parmesan cheese on top of the cream cheese mixture. spread the pizza sauce over all. sprinkle with remaining cheese, then top with green pepper, pepperoni and olive slices. cover, and microwave for 5 minutes. serve hot.

Inside-out Pizza

Ingredients

  • 2 6-inch flour tortillas
  • 1/4 cup grated cheddar cheese
  • 1/4 cup shredded mozzarella cheese
  • 2 (1 ounce) slices cooked deli turkey breast
  • 1 tablespoon pizza sauce
  • 1 tablespoon chopped tomato (optional)
  • 1 tablespoon sliced black olives (optional)
  • 1 tablespoon chopped green bell pepper (optional)

  • place one tortilla on a sheet of waxed paper sized to fit in your microwave. spoon 2 tablespoons each of cheddar and mozzarella cheeses over the tortilla. cover the cheese with turkey slices. spread 1 tablespoon of pizza sauce over the turkey, and top with 1 tablespoon each tomatoes, black olives, and green peppers. sprinkle with remaining cheddar and mozzarella cheeses, and place second tortilla on top. place on a microwave-safe plate, and cover with a sheet of waxed paper.
  • cook on high in microwave until the cheese melts, about 1 1/2 minutes. allow to cool 2 minutes before cutting into wedges.
