Cranberry Carrots

Total Time: 13 mins Cook Time: 13 mins

Ingredients

  • Servings: 4
  • 6 carrots, sliced
  • 1/4 cup butter
  • 1/4 cup jellied cranberry sauce
  • salt

Recipe

  • 1 peel and cook sliced carrots in microwave on high (max power) for 7-9 minutes in 1 tablespoon water.
  • 2 set aside.
  • 3 place butter in 1 1/2 to 2 quart microproof casserole.
  • 4 cook, covered, on high (max power) 1 minute, or until butter is melted.
  • 5 add cranberry sauce. cook, covered, on high 1 minute.
  • 6 stir and mix in cooked carrots.
  • 7 cook on hi 2 minutes.
  • 8 season to taste.

Almond Kisses

Total Time: 25 mins Preparation Time: 15 mins Cook Time: 10 mins

Ingredients

  • 1 1/2 cups butter (3 sticks)
  • 2 cups granulated sugar
  • 1 teaspoon vanilla
  • 1 teaspoon almond extract
  • 1/8 cup molasses (2 tbsp.)
  • 1 1/2 teaspoons baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon salt (if you are using salted almonds, cut the salt to 1/2 tsp.)
  • 1 1/2 cups ground almonds (measure after grinding)
  • 2 eggs
  • 4 cups flour
  • 13 ounces hershey chocolate kisses

Recipe

  • 1 microwave the butter in your mixing bowl to melt it.
  • 2 add the sugar, vanilla, almond extract and molasses.
  • 3 stir until blended.
  • 4 add the baking soda, baking powder and salt.
  • 5 mix well.
  • 6 grind up the almonds. add them to the bowl and mix.
  • 7 beat the eggs, then pour in and stir.
  • 8 add the flour and mix all the ingredients until thoroughly blended.
  • 9 let dough firm up for a few minutes.
  • 10 form into walnut-sized balls and arrange on a greased cookie sheet, 12 to a standard sheet.
  • 11 cut the hershey's kisses in half so that each has a point and a base. press the halves in the middle of your cookie balls, cut side down.
  • 12 bake at 350 degrees for 10 minutes.
  • 13 cool on the cookie sheet for 2 minutes and then remove to a wire rack to finishe cooling.

Apple Wedges With Cinnamon Cream

  • 1 small apple, cored and cut into wedges
  • 1/2 teaspoon fresh lemon juice
  • 1/2 cup nonfat sour cream
  • 1/3 cup fat-free cream cheese, softened
  • 1 teaspoon ground cinnamon
  • 1 teaspoon splenda sugar substitute (or a natural sugar substitute)

Recipe

  • 1 toss the apples in the lemon juice to keep them from turning brown.
  • 2 whisk together the sour cream, cream cheese, cinnamon, and sugar substitute. microwave for 30 seconds.
  • 3 place the apple wedges on plates with the cinnamon cream. dip and enjoy!

Almond Glazed Popcorn

  • 8 cups popped popcorn
  • 1 1/4 cups powdered sugar
  • 1 1/2 teaspoons almond extract
  • 1/4 cup water

  • 1 pop popcorn in microwave and place in a large mixing bowl.
  • 2 stir powdered sugar and almond extract together in a small bowl.
  • 3 gradually add enough water til the mixture is thin.
  • 4 pour glaze over popcorn.

Chocolate Nut Dainties

Ingredients

  • 3/4 cup butter or 3/4 cup margarine, softened
  • 3/4 cup sugar
  • 1 large egg
  • 2 teaspoons vanilla extract
  • 2 1/4 cups flour
  • 1/2 teaspoon salt
  • 1 cup miniature semisweet chocolate chips
  • 1 (12 ounce) package semisweet chocolate morsels
  • 2 cups finely chopped walnuts

Recipe

  • 1 beat butter and sugar at medium speed with an electric mixer until light and fluffy. add egg and vanilla, beating until blended. add flour and salt, beating well. stir in mini morsels.
  • 2 turn dough out onto a lightly floured surface. shape dough into 2x1/2" logs(bout 1 heaping teaspoons each). place logs on ungreased baking sheets.

  • 1 lb small red potato
  • 1 medium vidalia onion, 1/4-inch wedges
  • 3/4 teaspoon lemon pepper

Recipe

  • 1 preheat oven to 350ºf.
  • 2 pierce potatoes with a fork; arrange on paper towels in microwave oven.
  • 3 microwave at high for 5 to 6 minutes, turning once.

  • 1 (12 ounce) can tomatoes and green chilies, chopped
  • 1 (4 ounce) can green chilies, chopped

Recipe

  • 1 combine the cheese, undrained tomatoes, undrained chiles, and tabasco sauce in a microwave-safe dish or in a sauce pan.
  • 2 microwave on high for 5 minutes, stir, and microwave for 3-5 minutes until the cheese melts or cook on medium heat on the stove until the cheese melts. stir occassionally to distribute the heat.

Ingredients

  • 12 ounces chocolate chips
  • 2/3 cup cashews (whole, halved or chopped)
  • 2/3 cup craisins

Recipe

  • 1 melt chocolate chips in microwave for about 2 minutes.
  • 2 chips will not appear melted.
  • 3 however, stir them to distribute the heat and get them melted.
  • 4 add nuts and craisins, stirring until well coated.
  • 5 drop teaspoonfuls onto a wax-paper lined cookie sheet.
  • 6 place into refrigerator for about 1 hour.
  • 7 note: if doubling the recipe, microwave time does not double.
  • 8 check chips at about 2 1/2 minutes and add small amounts of time until chips are melted.
  • 9 it takes a bit under 3 minutes for a double recipe in my microwave.

Creamy Vanilla Ice Cream (no Eggs)

  • 4 cups half-and-half cream (i use fat free)
  • 1 cup agave syrup
  • 1/2 cup sugar

Recipe

  • 1 in microwave heat 4 cups of the heavy whipping cream (about 3 minutes) in microwave safe dish.
  • 2 add agave syrup and sugar to heated cream and stir until dissolved. stir in salt and vanilla.
  • 3 in large pan or bowl mix the heated cream mixture with the remaining heavy cream and all of the half and half (you can also do this right in your ice cream tin).

Awesome Potato Broccoli Cheese Soup

  • 2 baking potatoes
  • 4 tablespoons butter
  • 5 -6 tablespoons flour
  • 1 small yellow onion
  • 1/2 teaspoon dry mustard
  • 1/2 teaspoon hot sauce
  • 12 ounces frozen broccoli florets (steam in the bag kind)
  • 2 cups chicken broth
  • 2 cups heavy cream
  • 1 cup milk
  • 8 ounces sharp cheddar cheese
  • salt and pepper, to taste

Recipe

  • 1 bake potatoes prior to making soup: bake at 400 deg. for 1 hour. when cool enough, scoop out insides of potatoes and roughly chop. set aside to add to soup later.
  • 2 melt butter in large sauce pot and add onion. cook over medium heat until soft, about 5 minutes—stirring often.
  • 3 add flour and stir for a minute.
  • 4 gradually whisk in chicken broth, heavy cream, and milk until smooth. add dry mustard and hot sauce.

  • 2 cups semi-sweet chocolate chips, divided
  • 1/2 cup walnuts, chopped

Recipe

  • 1 preheat oven to 350°f.
  • 2 grease two 9x5-inch loaf pans.
  • 3 combine flour, sugar, baking powder, baking soda and salt in large bowl.
  • 4 combine eggs, milk and vegetable oil in medium bowl.

  • 1 1. melt all chips together in a double boiler or microwave.
  • 2 2. blend in marshmallows and honey; will melt into liquid.
  • 3 3. in a separate bowl, combine remaining ingredients.
  • 4 4. add chocolate mixture and mix well. may need to mix with your hands.
  • 5 5. pour into a 9 x 13 inch pan coated in vegetable oil cooking spray and pat down.

  • 1 1/2 cups all-purpose flour
  • 1/2 cup cocoa powder
  • 1/2 teaspoon baking soda

  • 3/4 cup sugar
  • 1/2 cup brown sugar
  • 2 eggs
  • 2 teaspoons vanilla
  • 1 cup semi-sweet chocolate chips

Recipe

  • 1 preheat oven to 350 f degrees grease cookie sheet and set aside. place cranberries and orange juice in a microwave safe bowl. cover with celephane. microwave until warm, 1-2 minutes.
  • 2 in another bowl mix flour and cocoa, baking soda and salt.
  • 3 on a large bowl, beat butter and both sugars until mixed. beat in eggs an vanilla. add flour mixture until just mixed. stir in chocolate chips and the cranberry mix.

Chocolate Mug Cake - Gluten Free

Ingredients

  • 2 tablespoons rice flour
  • 2 tablespoons tapioca flour
  • 1/4 teaspoon guar gum (optional, i have made it without and it's fine) (optional) or 1/4 teaspoon xanthan gum (optional, i have made it without and it's fine) (optional)
  • 4 tablespoons sugar
  • 2 tablespoons cocoa
  • 1 egg
  • 3 tablespoons milk or 3 tablespoons soymilk
  • 3 tablespoons oil
  • 3 tablespoons chocolate chips (optional)
  • 3 drops vanilla essence (optional)

Recipe

  • 1 required:.
  • 2 1 large coffee mug.
  • 3 add dry ingredients to mug and mix well.
  • 4 add egg, mix thoroughly.
  • 5 add milk and oil, mix again.
  • 6 add chocolate chips and vanilla, mix.
  • 7 cook for 3 to 3 1/2 minutes in the microwave. cake will rise over the top of the mug!
  • 8 this may serve 2 as a dessert depending on your appetite.
  • 9 variation: in the bottom of another mug place 2 tablespoons of jam. mix the cake up and pour over the jam. when cooked, tip out for a chocolate dessert with jam sauce topping.
  • 10 second variation: make as for jam variation but leave out cocoa replacing it with same amount of rice flour. add grated orange rind to mixture.

Candy Bar Cookies

Ingredients

  • 1/2 cup sugar
  • 1/2 cup brown sugar
  • 1/3 cup butter, softened
  • 1/3 cup shortening
  • 1 teaspoon vanilla
  • 1 egg
  • 1 1/2 cups flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 4 1/2 ounces nestle crunch bars, chopped into tiny chunks
  • 1/2 cup chocolate chips
  • 1 tablespoon shortening

Recipe

  • 1 heat oven to 375 degrees.
  • 2 beat with an electric mixer on medium speed the sugars, butter, 1/3 c shortening, vanilla, and egg in a large bowl. stir in flour, baking soda, and salt. stir in the candy.
  • 3 drop dough by heaping teaspoonfuls about 2 inches apart onto ungreased cookie sheets. bake 8-10 minutes or until light brown. cool cookies for 1 minute, then remove to wire rack to cool completely.
  • 4 cover the cookie sheets with wax paper. in the microwave, heat chocolate chips and 1 t shortening for 1 minute; stir until smooth.
  • 5 dip about 1/3 of each cookie into the chocolate. place on waxed paper. sprinkle with additional candy bar, finely chopped, if desired. refrigerate about 3 minutes or until chocolate is set.

Broccoli And Cheese Breakfast Melts

  • 1 cup frozen small broccoli floret
  • 2 english muffins, halved
  • 2 slices ham, halved or 2 tablespoons bacon bits
  • 4 slices tomatoes
  • 1 cup shredded cheddar cheese or mozzarella cheese

Recipe

  • 1 thaw broccoli in microwave oven or at room temperature, drain well on paper towels.
  • 2 place muffins on baking sheet, broil turning once, until lightly toasted.
  • 3 remove and turn cut side up.
  • 4 top each with slice of ham and tomato, top with broccoli.
  • 5 sprinkle with cheese.
  • 6 broil for 3 minutes or until cheese is melted and bubbly.

Ingredients

  • 1 (1 lb) bag simply potatoes® shredded hash browns
  • 3/4 cup shredded medium cheddar
  • 1 tablespoon cornstarch
  • 1 1/2 teaspoons sea salt
  • cooking oil

Recipe

  • 1 preheat oven to 425°f.
  • 2 place one bag of simply potatoes shredded hash browns in a large bowl and defrost in a microwave. stir the potatoes once every minute so that the potatoes thaw evenly. remove the potatoes from the microwave once they are thawed. add the cheddar cheese, corn starch, and sea salt. combine the mixture thoroughly with a fork.
  • 3 generously spray a 17 ½ x 13 inches cookie sheet with cooking oil.
  • 4 roll the potato mixture with your hands and form small 1 inch logs. place the logs onto the cookie sheet and repeat until all of the potatoes are gone. spray the tops of the tater tots with cooking oil and then place in the center of the preheated oven.
  • 5 bake for 15 minutes, remove cookie sheet, and flip over all of the tater tots. return to the oven for an additional 10 minutes. serve hot.

Chocolate Nutella Fudge

Ingredients

  • 1 (11 1/2 ounce) bag milk chocolate chips
  • 0.5 (13 ounce) jar nutella
  • 1 (14 ounce) can sweetened condensed milk
  • 1 dash salt
  • 2 teaspoons vanilla
  • 1 cup walnuts, toasted and coarsely chopped (optional)

Recipe

  • 1 butter an 8" square pan.
  • 2 optional step: spread walnuts out on a sheet of foil and pop into 350* oven for 5-8 minutes, until nuts are golden and fragrant. coarsely chop nuts and set aside.
  • 3 in a 1 quart glass bowl, combine the chocolate chips, nutella, sweetened condensed milk, and salt in a bowl.
  • 4 microwave (high) mixture for 3 minutes, taking it out halfway through and stirring well and returning it for the remaining time. i needed the whole 3 minutes.
  • 5 carefully remove hot bowl and stir in vanilla and nuts(if desired).
  • 6 pour mixture into prepared pan. chill for 2 hours. it sets up almost immediately.
  • 7 after it's been chilled, score and cut fudge into bite size pieces. enjoy!

Bulgur (broken Wheat) Salad

Ingredients

  • Servings: 5
  • 1 cup bulgar wheat (soaked in water for 15-20 minutes)
  • 1 (10 ounce) package frozen baby lima beans, cooked according to directions and cooled
  • 1 small red bell peppers or 1 small green bell pepper, sliced very thinly
  • 1 clove garlic, chopped or 1 teaspoon garlic powder (optional)
  • 1/3 cup tomato juice
  • 3 tablespoons fresh lime juice
  • 1 1/2 tablespoons olive oil
  • 2 tablespoons chopped fresh cilantro
  • 1 teaspoon ground cumin
  • 1/2 teaspoon tabasco sauce

Recipe

  • 1 in a medium sauce pan, bring 2 cups of water to boil and add wheat with one teaspoon of salt.
  • 2 microwave for 10 minutes or cook until just tender,8 to 10 minutes.
  • 3 drain and rinse under cold water, pressing to remove excess moisture.
  • 4 transfer wheat to a salad bowl and add lima beans, red pepper, ¼ tsp salt, and garlic.
  • 5 in a small bowl whisk tomato juice, lime juice, olive oil,cilantro, cumin, oregano, and tabasco.

  • 1 set oven to 350 degrees.
  • 2 grease and flour a 12-cup bundt pan.
  • 3 in a large bowl cream butter and sugar until fluffy (about 3 minutes).
  • 4 add in the vanilla and lemon zest; mix to combine.
  • 5 add in the eggs; beat until light and fully incorporated (about 5 minutes, there should be no sugar granules remaining in the batter).

  • 2 prepare cake mix with water, eggs and oil according to package directions.
  • 3 add half cranberry sauce, mix, until well blended.

  • 5 bake about 30 minutes or until a toothpick inserted in center comes out clean. cool completely on wire rack.
  • 6 meanwhile, place whipped topping in a medium sized bowl. sift cocoa over whipped topping, fold mixture until well blended.
  • 7 when cake has cooled, place remaining cranberry sauce in small microwaveable bowl, microwave on high 15 seconds or until softened. spoon over cake, spread evenly. top with whipped topping mix.

  • 1 place oven rack in lower position in oven. preheat oven to 375 degrees fahrenheit.
  • 2 lightly sprinkle counter with flour.
  • 3 place puff pastry dough on top.
  • 4 dust rolling pin with flour.
  • 5 roll pasty into a rectangle about 16 x 10 inches. pastry will be very thin and the edges will be uneven.
  • 6 place on a large ungreased baking sheet.
  • 7 sprinkle half of the cheese and half of the rosemary along the edges of dough, forming a narrow border. fold edges over to completely cover and press down to seal.
  • 8 slice apples into thin wedges and place in a large bowl.

  • 13 to glaze apples, discard any chunky pieces of fruit from jam.
  • 14 place jam in a small bowl and microwave on medium high until melted, about 30 seconds.
  • 15 brush glaze over warm apples, let stand 10 minutes before cutting.

Cranberry Chili Sauce For Meatballs

  • 1 break candy canes into 2 or 3 pieces and place in a plastic bag and close top; smash with kitchen mallet to take out your frustrations and pulverize the candy.
  • 2 in a small bowl, melt chocolate in microwave oven with medium-low power, checking every 30 seconds or so; chocolate burns easily even in the microwave so better safe than sorry.
  • 3 cover a cookie sheet with wax paper.
  • 4 stir candy cane crumbs into melted chocolate and stir well to combine.
  • 5 pour chocolate mixture onto wax paper, spreading thin with a spatula.
  • 6 stash cookie sheet in fridge about an hour or until it hardens.

  • 1 put the tomatoes and enough water to equal twice the amount of rice into a microwave safe bowl/vessel.
  • 2 microwave the liquid for approximately 7 minutes (until really hot).
  • 3 while the liquid is cooking, heat a small amount of olive oil a pot.
  • 4 add the rice to the heated olive oil and stir. some of the rice kernels will pop and turn , but not all of them.

  • 1 preheat oven to 350°.

  • 3 start by spreading coconut on a microwave-safe plate. microwave the coconut in 30-second bursts, gently stirring to redistribute each time. when the coconut is as brown as you like – stop. it’s done. it took me 7 1/2 minutes to get to this point, but depends on the wattage of your microwave.

  • 5 beat together sugar, oil, eggs, and coconut extract until well mixed.
  • 6 in a separate bowl, mix together buttermilk, baking powder, and baking soda.
  • 7 beat together the buttermilk mixture into the sugar, oil, and egg mixture until well blended.
  • 8 gradually beat the flour mixture into the wet mixture until well mixed.
  • 9 fold in the coconut and almonds.
  • 10 pour into a greased baking pan and bake for about 30-45 minutes or when a toothpick is inserted into the center comes out clean. (i used a greased bundt pan).
  • 11 combine drizzle ingredients in a medium saucepan over medium-high heat until all the ingredients are incorporated.
  • 12 once the bread comes out of the oven, poke holes all over the bread and immediately pour drizzle over the bread and let soak inches.
  • 13 once the cake has cooled, pour on the glaze and sprinkle with toasted coconut.
