Caramel Bars

Total Time: 35 mins Preparation Time: 10 mins Cook Time: 25 mins

Ingredients

  • 1 1/2 cups flour
  • 1 cup brown sugar
  • 1 1/2 cups oatmeal (either kind)
  • 1 cup butter (melted) or 1 cup margarine (melted)
  • 1/4 teaspoon salt
  • 3/4 teaspoon baking soda
  • 1 (14 ounce) bag caramels
  • 8 tablespoons milk or 8 tablespoons cream
  • 1 cup chocolate chips

Recipe

  • 1 mix above ingredients together (flour through baking soda) and press into bottom of 9 x 13" cake pan. reserve about 1 1/3°c of crumbs for top.
  • 2 bake at 350 degrees for 10 - 15 minutes (i bake for 10 minutes) until light brown.
  • 3 meanwhile: unwrap and melt 1 bag of caramels with 8 tbs. of cream (i use milk) in microwave on medium - low temperature
  • 4 sprinkle 1 - 1 1/4°c chocolate chips over baked crust (no need to cool) and pour caramel mixture over top.
  • 5 add reserved crumbs by sprinkling over and bake at 350 degrees for 15 - 20 minutes (i bake for 15 minutes) more.
  • 6 cool before cutting.

Chicken Wraps (ww)

Ingredients

  • Servings: 4
  • 2 tablespoons cajun seasoning
  • 1 tablespoon flour
  • 1 teaspoon paprika
  • 3/4 lb boneless chicken breast, cut into strips
  • 1/4 teaspoon salt
  • 1/8 teaspoon pepper
  • 4 teaspoons fat-free mayonnaise (i used regular and added 1/2 point)
  • 1 1/2 teaspoons lemon juice
  • 4 whole wheat tortillas
  • 1/2 red onion, sliced
  • 1 tomato, chopped

Recipe

  • 1 in a pie pan combine first 3 ingredients (seasoning - paprika).
  • 2 season chicken with salt and pepper and then dredge chicken in seasoning, turning to coat.
  • 3 spray a large skillet with pam and set over medium high heat.
  • 4 add chicken pieces and cook, turning until cooked through (5 minutes). remove from pan and set aside.
  • 5 in a small bowl combine dressing ingredients (mayonnaise and lemon juice).
  • 6 warm tortillas in microwave (1 minute) and then spread each tortilla 1 teaspoon of dressing, 1/4 of the chicken, tomato and onion and also mixed greens if desired. roll up and serve.

Cream Cheese Jalapeño Dip

  • 1 (8 ounce) package neufchatel cheese
  • 1 (4 1/2 ounce) can chopped green chilies
  • 1 cup shredded monterey jack pepper cheese
  • jalapeno pepper, sliced
  • tortilla chips

Recipe

  • 1 beat first three ingredients in medium bowl until creamy. spread in microwave-safe pie plate.
  • 2 microwave on high 3-4 minutes or until edges are bubly and center is hot.
  • 3 garnish with jalapeño peppers.
  • 4 serve with tortilla chips.

Caramel Brownies

Total Time: 46 mins Preparation Time: 20 mins Cook Time: 26 mins

Ingredients

  • Servings: 24
  • 18 ounces german chocolate cake mix
  • 2/3 cup evaporated milk, separated
  • 1 cup semi-sweet chocolate chips
  • 12 ounces caramels
  • 1/2 cup butter, melted
  • 1 cup chopped nuts

Recipe

  • 1 mix cake with butter and 1/3 cup evaporated milk, divide in 1/2.
  • 2 place half in a greased 13x9 greased pan.
  • 3 bake @ 350 for 6 minutes.
  • 4 in microwave, melt caramels with 1/3 cup evaporated milk.
  • 5 sprinkly chocolate chips evenly on baked cake mix, cover with melted caramels.
  • 6 top with the remaining half of cake mix. (i flatten it in my hand and piece it together on the top, a few cracks are ok).
  • 7 bake @ 350 for 20 minutes.
  • 8 enjoy!

Buttermilk Chocolate Swirl Bread

Ingredients

  • Servings: 12
  • 2 cups all-purpose flour
  • 1 cup sugar
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 3/4 cup buttermilk
  • 2 large eggs
  • 1 large egg
  • 1/4 cup canola oil
  • 2 teaspoons vanilla extract or 2 teaspoons rum extract
  • 4 ounces bittersweet chocolate, broken up
  • confectioners' sugar, for garnish

Recipe

  • 1 heat oven to 350 degrees f; coat an 8 1/2 x 4 1/2-inch loaf pan with nonstick spray and flour lightly.
  • 2 mix flour, sugar, baking powder, baking soda and salt in a large bowl.
  • 3 whisk buttermilk, eggs, egg , oil and extracts in medium bowl; stir into flour mixture just until blended.
  • 4 melt chocolate in microwave on high about 1 minute, stirring every 15 seconds; stir in 1 1/3 cups batter.
  • 5 working quickly (chocolate batter will become firm and hard to swirl if you let it stand too long), pour some of the batter over bottom of pan, then dollop with chocolate batter.
  • 6 fill pan by alternating dollops of and chocolate batter.
  • 7 pull knife through batter to swirl.
  • 8 bake 1 hour or until pick inserted in center comes out clean.
  • 9 cool in pan on wire rack for 10 minutes.

Buttermilk Chocolate Cookies

  • 2 cups flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup butter
  • 3/4 cup cocoa powder
  • 2 cups sugar
  • 1 teaspoon vanilla extract
  • 2/3 cup buttermilk
  • 2 cups chocolate chips

Recipe

  • 1 preheat oven to 350°f line a baking sheet with parchment paper.
  • 2 in a medium bowl, whisk together flour, baking soda, and salt.
  • 3 melt butter in the microwave.
  • 4 in a large bowl, combine the warm melted butter with the cocoa powder. whisk until smooth.
  • 5 whisk in sugar, vanilla extra, and buttermilk.
  • 6 gradually stir in the flour mixture until no streaks of flour remain.
  • 7 stir in chocolate chips.
  • 8 drop dough in 1-inch balls onto prepared baking sheet, leaving about 2 inches between cookies to allow for spreading.
  • 9 bake 10-12 minutes until cookies are set around the edges.

Company Cauliflower

  • 1 medium cauliflower, head
  • 1/4 cup water
  • 1/2 cup mayonnaise
  • 1 teaspoon onion
  • 1 teaspoon mustard

Recipe

  • 1 steam cauliflower by putting it in a covered dish with the water and microwave for 9 minutes
  • 2 combine rest of ingredients - spread over cauliflower (like frosting).
  • 3 return to microwave for about 1 - 1 1/2 minutes.

Buttermilk Chocolate Cake

  • 1 cup water
  • 1/2 cup vegetable oil
  • 1/4 cup cocoa
  • 2 cups flour
  • 2 cups sugar

Recipe

  • 1 sift flour and sugar together.

  • 5 add vanilla and baking soda to batter.
  • 6 bake at 400* for 20 minutes or until toothpick inserted into center of cake comes out clean.

Bacon-wrapped Dates

Ingredients

  • 12 slices bacon
  • 24 pitted dates

Recipe

  • 1 cut each bacon slice in half crosswise.
  • 2 place bacon on paper toweling on a microwave-safe plate, cover with another paper towel.
  • 3 microwave on high 4 minutes.
  • 4 roll up each date in a piece of bacon, place bacon-wrapped dates on clean toweling on microwave-safe plate, cover with another paper towel.
  • 5 microwave on high 2 minutes, until bacon is crisp.

Bread Machine Almond Poppy Bread With Cheesy Lemon Spread

  • 2 cups bread flour
  • 1 tablespoon dry milk
  • 1/2 teaspoon salt
  • 1 tablespoon butter

  • 1/4 cup almonds, sliced and toasted
  • 2 teaspoons lemon peel, dried
  • 2 tablespoons poppy seeds
  • 1 teaspoon lemon extract

  • 3 cups bread flour

  • 1 for the cheesy lemon spread: in heavy pan mix eggs, juice, butter, sugar and salt. bring to a boil while stirring over low heat, then cook 3 minutes more.

Bread Machine Buttermilk Bread

Ingredients

  • 1 cup buttermilk
  • 1 large egg, beaten
  • 4 tablespoons vegetable oil or 4 tablespoons butter
  • 2 tablespoons sugar
  • 1 1/2 teaspoons fast rising yeast
  • 1 teaspoon salt
  • 3 cups bread flour

Recipe

  • 1 put all ingredients in bread machine according to manufacturer instructions for your brand of bread machine.
  • 2 i warm the milk in the microwave for 30 sec. then stir the beaten egg into the buttermilk. this helps with rising.
  • 3 using butter makes a nice buttery crust.
  • 4 can be stirred up in the bread machine and baked in a conventional oven at 350 degrees for 35 minutes.
  • 5 for cinnamon bread add 1 1/2 to 2 teas. cinnamon. this makes really good french toast.

Black Eyed Pea Quesadillas

Ingredients

  • Servings: 1
  • 1 whole wheat tortilla
  • 1/3 cup black-eyed peas, already cooked
  • 1/4 cup shredded cheddar cheese
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/4 teaspoon garlic
  • 2 slices summer sausage, cut into chunks
  • 2 tablespoons chopped red onions

Recipe

  • 1 microwave the black eyed peas alone, to get some of the juices out: around 30 seconds.
  • 2 using a slotted spoon, ladle the peas onto the tortilla.
  • 3 sprinkle on the spices, cheese, onion, summer sausage chunks. you can use any spice combo you like, as well as any additional veggies or meat. the ingredients are just what i used.
  • 4 keeping tortilla flat, microwave on high for 1 minute.
  • 5 fold the tortilla over and eat with knife and fork. fold up for a burrito if your peas aren't too juicy.

Caramel Bars

  • 1 teaspoon baking soda
  • 1/4 cup whipping cream
  • 1 cup margarine or 1 cup butter, melted
  • 1 cup brown sugar
  • 2 cups quick oatmeal
  • 12 ounces caramels
  • 3/4 cup whipping cream

Recipe

  • 1 pre heat oven to 350 degrees.
  • 2 mix the 1st 6 ingredients together in mixer until crumbly -- grandma says mix like pie crust.
  • 3 pat all but approximately 1 1/2 cups of batter into a 9 x 13 cake pan.
  • 4 bake for 10 minutes.
  • 5 while this is baking, melt the caramels with the 3/4 cup whipping cream. a double boiler is recommended, but you could use the microwave if you stop and stir often to make sure the caramels do not burn.
  • 6 spread caramel mix over the 1st layer when it has baked.
  • 7 use the remaining 1 1/2 cups of batter and pat down in small sections over the caramel mix.
  • 8 return to oven and bake for about 15 minutes or longer -- til they are done.
  • 9 remove from oven and cool.

  • 11 *pointer-can use caramel bites that are now available in the baking aisle at the grocery store rather than having to unwrap all the caramels. also, grandma says that 1/2 and 1/2 could be used rather than cream if you would like.

Cheese-crusted Flat Bread

  • 2 1/2-3 cups all-purpose flour
  • 1 tablespoon sugar
  • 1 (1/4 ounce) package active dry yeast or 2 1/4 teaspoons active dry yeast
  • 3/4 cup milk
  • 1/4 cup water
  • 2 tablespoons butter or 2 tablespoons margarine
  • 1/4 cup butter, melted
  • 2 tablespoons chopped onions
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon paprika
  • 1/4 teaspoon garlic salt
  • 1/4 teaspoon celery seed
  • 4 ounces cheddar cheese, grated (1 cup)

Recipe

  • 1 in large bowl, combine 2 cups flour, sugar, salt and yeast; mix well.
  • 2 in 2-cup glass measuring cup, combine milk, water and 2 tablespoons butter.
  • 3 microwave just until water is very warm (120 to 130°f) (not much more than a minute should do it).
  • 4 add warm liquid to flour mixture; mix well.
  • 5 stir in remaining 1/2 to 1 cup flour to form a stiff dough.

Company Chicken Marsala With Fettucine

Ingredients

  • Servings: 8
  • 3/4 cup flour
  • 1 1/2 teaspoons kosher salt
  • 1 teaspoon ground black pepper
  • 2 teaspoons italian seasoning
  • 1 teaspoon dried oregano
  • 8 chicken breasts, skinless, boneless, pounded 1/4 inch thick
  • 1/2 cup butter
  • 8 tablespoons olive oil
  • 3 cups sliced mushrooms
  • 3 cups marsala wine
  • 1 cup cooking sherry
  • 1/2 cup butter
  • 4 tablespoons olive oil
  • 9 garlic cloves, minced
  • 1/2 cup half-and-half or 1/2 cup heavy cream
  • 1 bunch green onion, chopped
  • 2 lbs fettuccine pasta

Recipe

  • 1 in a shallow dish or bowl, mix together the flour, salt, pepper, italian seasoning and oregano.
  • 2 coat chicken pieces in flour mixture.
  • 3 in a large skillet, melt butter in oil over medium heat. place chicken in the pan, and lightly brown. (i do this in 3 batches for about 6-7 mnutes each).
  • 4 remove chicken and microwave 5-10 minutes to be sure it is cooked through if needed.
  • 5 rinse saucepan, add 1/2 cup butter and 4 t olive oil and garlic.
  • 6 add marsala, sherry, and mushroom.
  • 7 bring to boil.
  • 8 simmer a bit to reduce liquid, then add cream or half and half.
  • 9 thicken with cornstarch and cold water if needed.
  • 10 place chicken back to pan and simmer on low while pasta is cooking.

Cream Cheese Fruit Tart

Total Time: 15 mins Preparation Time: 15 mins

Ingredients

  • Servings: 10
  • 1 single pie shell, baked
  • 1 (8 ounce) package cream cheese
  • 1/2 cup granulated sugar
  • 1 teaspoon lemon, rind of, grated
  • 1 tablespoon lemon juice
  • fresh strawberries, halved
  • kiwi fruit, peeled and sliced
  • 1 (11 ounce) can mandarin oranges, drained
  • 1 (11 ounce) can crushed pineapple, drained
  • 1/4 cup apple jelly, melted (microwave is great for this!)

Recipe

  • 1 in small bowl combine the cream cheese, sugar, lemon peel and juice.
  • 2 beat at medium speed with an electric mixer until light and fluffy, scraping sides of bowl often, about 1 to 2 minutes.
  • 3 spread over baked pie crust.
  • 4 chill at least 1 hour.
  • 5 several hours before serving, arrange fruit on filling.
  • 6 i like to use the strawberries nearest the rim of the pie shell, then a ring of overlapping kiwi slices, then a ring of mandarin oranges followed with a "bull's-eye" of the crushed pineapple in the center.
  • 7 brush the fruit with the melted apple jelly and serve.
  • 8 you may substitute whatever your favorite fruit or berries are for the topping.

Cream Cheese Frosting / Icing For Cookies

Ingredients

  • 3 tablespoons cream
  • 2 tablespoons butter
  • 2 tablespoons cream cheese, softened
  • 3 cups powdered sugar

Recipe

  • 1 soften cream cheese for a few seconds in microwave if necessary. heat cream, butter, and cream cheese in a small pot, just until the butter and cream cheese melt into the cream. (stir frequently to avoid burning.).
  • 2 remove the pot from the stove, and stir in the 3 cups of powdered sugar. you will have a goopy mess. beat it with your electric mixer, until it changes color slightly (3-4 minutes.)
  • 3 spoon, paint, or spread it on your cooled cookies. it will still be pretty thin and goopy, but it should spread in a nice, even coat. (i used the back of my spoon to spread it.)
  • 4 let the icing 'set' for 1 1/2 - 2 hours, until it hardens. it won't harden completely, but it will form a nice soft frosting layer that squishes only slightly when pressed, similar to a slice of cheese.
  • 5 i modified a regular icing recipe to make this, and was very disappointed with the results at first, but after i left the cookies on the counter for two hours, i was glad i saved them. the icing is perfect for transporting, and has a very good flavor, just right for carrot cake cookies.

Artichoke Dip

Total Time: 10 mins Preparation Time: 5 mins Cook Time: 5 mins

Ingredients

  • Servings: 2
  • 16 ounces artichoke hearts, chopped
  • 1 cup parmesan cheese
  • 1 cup mayonnaise
  • 1 dash salt and pepper

Recipe

  • 1 mix all in a microwave safe bowl.
  • 2 microwave until all ingredients mix smoothly.
  • 3 put on your favorite cracker!
  • 4 i like to add some finely diced onions and a little tony chachere's creole seasoning to taste.
  • 5 you can put more or less artichoke hearts in this recipe - depends on your liking!

Cream Cheese Marshmallow Fondant

Total Time: 10 mins Preparation Time: 10 mins

Ingredients

  • 16 ounces mini marshmallows
  • 2 tablespoons water
  • 4 ounces cream cheese
  • 1 1/2-2 lbs powdered sugar
  • shortening

Recipe

  • 1 combine the marshmallows, water, and cream cheese in a microwave safe bowl. heat on high for 1 minute, stir, and continue heating and stirring in 30 second intervals until everything is melted and smooth.
  • 2 in the bowl of a stand mixer, use the dough hook on low speed to combine the marshmallow/cream cheese mixture with half the powdered sugar. add powdered sugar gradually until you have a smooth, workable fondant.
  • 3 roll it out on a shortening greased counter to about 1/8" thickness.
  • 4 can be tinted with whatever food coloring you choose, simply knead it into to fondant, or mix it with the dough hook.

Cream Cheese Fudge

Total Time: 20 mins Preparation Time: 15 mins Cook Time: 5 mins

Ingredients

  • 1/4 cup butter
  • 2 ounces unsweetened chocolate (2 squares)
  • 1 cup sugar substitute
  • 1 teaspoon vanilla extract
  • 8 ounces cream cheese (not fat free)
  • 1/2 cup chopped nuts (optional)

Recipe

  • 1 bring the creamed cheese to room temperature (softened).
  • 2 melt butter over low heat (or microwave).
  • 3 add chocolate squares and stir until melted.
  • 4 remove from heat and stir in sugar substitute and vanilla.
  • 5 combine the chocolate mixture with the creamed cheese.
  • 6 beat with electric mixer until smooth and creamy.
  • 7 stir in nuts, if you are using them.
  • 8 spread mixture in a lightly greased 8" square pan.
  • 9 refrigerate until firm.
  • 10 cut into 64 pieces, 1" square.

Cheese-filled French Toast With Strawberry Sauce

Ingredients

  • Servings: 6
  • 1 (8 ounce) package reduced-fat cream cheese, softened
  • 1/4 cup low-fat sour cream
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon lemon juice
  • 1 (12 ounce) jar strawberry preserves, divided
  • 1 tablespoon water
  • 6 large eggs
  • 1 1/2 cups milk
  • 1 pinch salt
  • 1 teaspoon ground cinnamon
  • 12 slices whole grain bread

Recipe

  • 1 in a mixing bowl, whisk together the cream cheese, sour cream, vanilla, lemon juice & 1/4 cup of the preserves until well blended, then set aside.
  • 2 in a microwave-safe bowl, combine remaining preserves & the tablespoon of water, then microwave on high for 30 seconds. stir & microwave for another 30 seconds or until melted, then set aside.
  • 3 in a shallow dish, whisk together the eggs, milk, salt & cinnamon. dip bread slices into this egg mixture, then set them on a platter.
  • 4 spread half of the slices with the cream cheese mixture, then top each spread slice with a slice of dipped bread, making 6 'sandwiches.'.
  • 5 in a large skillet, heat 1/8 inch of vegetable oil over medium-high heat until oil is hot but not smoking. working in batches, transfer 'sandwiches' to the skillet & cook about 90 seconds or until lightly browned, then turn them over & cook another 60 seconds or until deep golden brown & slightly puffy.
  • 6 remove the filled french toast & allow them to drain briefly on several layers of paper towels.

Banana Nut Snack Bars

  • 1 spray 13x9-inch pan with cooking spray. in large microwavable bowl, microwave margarine uncovered on high 30 to 45 seconds or until melted. add marshmallows; toss until coated. microwave uncovered on high 1 minute 15 seconds to 1 minute 45 seconds, stirring every 30 seconds, until mixture can be stirred smooth.
  • 2 stir in cereal and sunflower nuts until well blended. press evenly in pan.
  • 3 in small microwavable bowl, microwave chocolate chips and oil uncovered on high 45 to 60 seconds, stirring very 15 seconds, until melted and smooth. drizzle over bars.

Chocolate Chip Cookies

  • 30 g cocoa, sieved
  • 1 teaspoon bicarbonate of soda

  • 75 g light brown sugar
  • 50 g sugar
  • 1 teaspoon vanilla extract
  • 1 egg, cold from the fridge
  • 2 (350 g) bags semisweet chocolate morsels or 2 (350 g) bags dark chocolate chips

Recipe

  • 1 preheat the oven to 170°c/gas mark 3. melt the 125g dark chocolate either in the microwave or in a heatproof dish over a pan of simmering water.
  • 2 put the flour, cocoa, bicarbonate of soda and salt into a bowl.
  • 3 cream the butter and sugars in another bowl. (i use my freestanding mixer, itself an odd source of comfort to me.) add the melted chocolate and mix together.
  • 4 beat in the vanilla extract and cold egg, and then mix in the dry ingredients. finally stir in the chocolate morsels or chips.
  • 5 scoop out 12 equal-sized mounds - an ice cream scoop and a palette knife are the best tools for the job - and place on a lined baking sheet about 6cm apart. do not flatten them.
  • 6 cook for 18 minutes, testing with a cake tester to make sure it comes out semi-clean and not wet with cake batter. if you pierce a chocolate chip, try again.
  • 7 leave to cool slightly on the baking sheet for 4-5 minutes, then transfer them to a cooling rack to harden as they cool.

Cream Cheese Mashed Potatoes

  • 5 lbs potatoes (yukon gold or red if you are leaving skins on, otherwise russet or all purpose are fine)

  • 1 cook potatoes by boiling. when cooked, peel or leave skins on. roughly break up potatoes.
  • 2 add butter or margarine, salt, and pepper. mix with a hand mixer until large lumps are gone.
  • 3 add both packages of softened (not melted - i have used cream cheese straight from the fridge and it's fine). mix on medium speed until cream cheese is integrated into potatoes well. mix longer if you want smoother mashed potatoes.
  • 4 if mashies get a bit cool from the addition of cream cheese, microwave them for a couple minutes to bring them up to your desired temperature.
  • 5 these mashed potatoes hold up well for hours in a crock pot on warm setting for big family dinners.

Cheese-stuffed Sweet Potatoes

  • 2 small sweet potatoes (between 5 and 6 ounces each)
  • 2 ounces soft fresh goat cheese
  • 1/4 cup fat-free cottage cheese

  • 1 green onion, sliced
  • paprika, to taste

  • 1 scrub potatoes, prick lightly with a fork and microwave for six minutes, or until done. (or, bake in oven at 400 degrees f for one hour or until done.) when cool enough to handle, cut the potatoes lengthwise and scoop out the insides into a small mixing bowl. set aside potato skins.
  • 2 mash the cooked potatoes with the three cheeses and salt and pepper. distribute the potato mixture evenly among the potato shells. top each with the sliced green onion and sprinkle paprika on top.
  • 3 return potatoes to the microwave (one minute on high) or oven (10 to 15 minutes at 350 degrees f) or until hot. wrap or store in a portable container to bring to work or the gym; microwave on high for 1 1/2 to two minutes on high before eating.

Chicken, Basil And Sun-dried Tomato Pasta

  • 3 heat oil in a large pan, add onion and tomatoes; stir over heat until onion is soft.
  • 4 add wine, bring to boil, reduce heat; simmer, uncovered for 1 minute
  • 5 add tomato paste, sugar and fresh basil; stir until smooth.
  • 6 add cream and chicken; stir over low heat until heated though.
  • 7 spoon over freshly cooked pasta; garnish with basil.
  • 8 enjoy.

Cinnamon Creamy Pears On A Pita

  • 1 in small microwaveable bowl, combine pear chunks, syrup and cinnamon. microwave on medium power for 3 minutes or until pears are soft and mixture becomes syrupy.
  • 2 meanwhile, toast mini pita in toaster.
  • 3 stir cream cheese into pear mixture and spoon on top of warm pita.
  • 4 enjoy!

Bread En Casserole

Ingredients

  • 2 (1/4 ounce) packets dry yeast
  • 2 cups warm milk
  • 3 tablespoons butter, melted
  • 2 tablespoons sugar
  • 2 teaspoons salt
  • 3 cups whole wheat flour
  • 1 cup flour

Recipe

  • 1 in a warm large bowl, dissolve yeast in warm milk. (milk can be warmed gently in a sauce pan on range top or in microwave, but not to scalding or you will kill the yeast.).
  • 2 slowly add sugar, butter, salt, stirring to dissolve.
  • 3 add the flour, one cup at a time, and mix thoroughly with a wooden spoon. the dough should be soft and sticky.
  • 4 lightly butter the sides and bottom of the casserole and pour the dough into it.
  • 5 cover casserole with a warm cloth, place in a warm place, and allow it to rise until double in size or until it reaches the top of the casserole.
  • 6 bake at 325 f for about 45 minutes or until the bread sounds hollow when tapped with a finger.
  • 7 remove from the casserole and allow to cool on a wire rack, or cool it off by placing casserole in an empty sink with drain plugged. very carefully, allow water to trickle into sink and rise very slowly. take casserole out of water before it reaches the top of the casserole. serve bread in the casserole dish.
