chorizo breakfast burritos

Ingredients

  • Servings: 4
  • cooking spray
  • 3/4 pound chorizo sausage, casings removed and crumbled
  • 1/2 cup chopped red onion
  • 1 green chile pepper, seeded and diced
  • 4 eggs
  • 4 flour tortillas
  • 1 cup shredded cheddar cheese

  • generously coat a large frying pan with cooking spray. cook and stir chorizo over medium high heat until well browned and crumbled. add onion and chile pepper, and continue cooking until onion is tender.
  • beat eggs in a bowl, and add to chorizo mixture. reduce heat to medium-low, and continue cooking and stirring until eggs are scrambled and no longer runny.
  • warm flour tortillas in the microwave for 30 seconds. spoon mixture into the middle of each tortilla and top with shredded cheddar cheese. roll up like a burrito, and enjoy!

creamy basil jack o' pumpkin

Ingredients

  • 1/2 teaspoon vegetable oil
  • 1/2 white onion, chopped
  • 1 tablespoon crushed garlic
  • 1/2 teaspoon cracked black pepper
  • 4 cups peeled, cubed pumpkin
  • 1/2 (8 ounce) package cream cheese, softened
  • 2 tablespoons herb mayonnaise
  • 1/2 teaspoon basil puree

  • heat oil in a skillet over medium heat; cook and stir onion, garlic, and pepper in hot oil until onion is golden, 10 to 15 minutes. stir pumpkin into onion mixture and cook until pumpkin is tender, 15 to 20 minutes.
  • stir cream cheese, mayonnaise, and basil puree together in a microwave-safe bowl; microwave until warmed and smooth, about 1 minute. pour cheese mixture over pumpkin mixture and toss to coat; cook until warmed, about 5 minutes.

  • stir cream, milk, and chocolate-hazelnut spread together in microwave-safe bowl. microwave until chocolate hazelnut spread is melted, 1 to 2 minutes, stirring every 30 seconds. pour the mixture into ice pop molds and freeze until set, 3 to 4 hours.

Taco Lasagna

Ingredients

  • 11 ounces lasagna noodles
  • 1 pound lean ground beef
  • 24 ounces tomato sauce
  • 1/2 cup water
  • 1 (1 ounce) package taco seasoning mix
  • 8 cups shredded cheddar cheese
  • 1/2 cup crushed tortilla chips

  • bring a large pot of lightly salted water to a boil. add pasta and cook for 8 to 10 minutes or until al dente; drain.
  • meanwhile, in a large skillet, brown beef over medium heat until no longer pink; drain. add tomato sauce, water and taco seasoning. lower heat and simmer for 5 minutes.
  • in a 9x13 inch glass baking dish, layer noodles then meat mixture and cheese; repeat 2 more times. there will be 3 layers.
  • cover with plastic wrap and microwave for 10 minutes. remove from microwave, uncover and let stand for 5 minutes.
  • sprinkle tortilla chips over the top; serve.

Microwave Baked Potato

Ingredients

  • Servings: 1
  • 1 large russet potato
  • 1 tablespoon butter or margarine
  • 3 tablespoons shredded cheddar cheese
  • salt and pepper to taste
  • 3 teaspoons sour cream

  • scrub the potato, and prick several time with the tines of a fork. place on a plate.
  • cook on full power in the microwave for 5 minutes. turn over, and continue to cook for 5 more minutes. when the potato is soft, remove from the microwave, and cut in half lengthwise. season with salt and pepper, and mash up the inside a little using a fork. top the open sides with butter and 2 tablespoons of cheese. return to the microwave, and cook for about 1 minute to melt the cheese.
  • top with remaining cheese and sour cream, and serve.

Inside-out Pizza

Ingredients

  • Servings: 1
  • 2 6-inch flour tortillas
  • 1/4 cup grated cheddar cheese
  • 1/4 cup shredded mozzarella cheese
  • 2 (1 ounce) slices cooked deli turkey breast
  • 1 tablespoon pizza sauce
  • 1 tablespoon chopped tomato (optional)
  • 1 tablespoon sliced black olives (optional)
  • 1 tablespoon chopped green bell pepper (optional)

  • place one tortilla on a sheet of waxed paper sized to fit in your microwave. spoon 2 tablespoons each of cheddar and mozzarella cheeses over the tortilla. cover the cheese with turkey slices. spread 1 tablespoon of pizza sauce over the turkey, and top with 1 tablespoon each tomatoes, black olives, and green peppers. sprinkle with remaining cheddar and mozzarella cheeses, and place second tortilla on top. place on a microwave-safe plate, and cover with a sheet of waxed paper.
  • cook on high in microwave until the cheese melts, about 1 1/2 minutes. allow to cool 2 minutes before cutting into wedges.
