  • 1 in a microwave safe bowl mix sour cream and chili together,.
  • 2 then cut up and add both cheeses to the mixture.
  • 3 place in microwave on high for about 15 min.

  • 2 teaspoons baking powder
  • 11 ounces cream cheese, softened
  • 2 cups confectioners' sugar
  • 1 (12 ounce) carton frozen whipped topping, thawed, divided

Creamy Herbed Parmesan Pasta Sauce With Bacon And Mushrooms

Ingredients

  • Servings: 2
  • 1/2 lb bacon, cut into pieces
  • 1/4 cup chopped onion
  • 1 cup canned mushroom stems and pieces, drained (or 1 cup chopped fresh mushrooms)
  • 3 garlic cloves, minced
  • 1 teaspoon basil
  • 1 teaspoon tarragon
  • 1/2 teaspoon oregano
  • 1 -2 teaspoon flour
  • 1 cup milk
  • 1/4 cup grated parmesan cheese
  • salt
  • fresh cracked pepper

Recipe

  • 1 place bacon pieces in a large frying pan and fry until about halfway cooked. (or you can do this step in the microwave).
  • 2 drain (but don't blot off all the fat) and add chopped onions, mushrooms, and garlic. fry until onion is soft.
  • 3 add flour and seasonings and stir until you can't see the flour. gradually add milk while stirring.
  • 4 simmer until thickened. (this probably won't take more than a minute or two, depending on what kind of pan you're using.) add parmesan cheese and stir until cheese is melted.
  • 5 add to cooked pasta, toss to coat and serve.

  • 1 cup agave nectar
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 2 ounces unflavored gelatin
  • 6 tablespoons cold water
  • 1/4-1/2 cup cornstarch
  • cooking spray

Recipe

  • 1 place first 3 ingredients in stand mixer with whip attachment on high.
  • 2 * marshmallows are approx 80% air. if a stand mixer or handheld (that has a very high speed setting) is not used, i cannot vouch as to the results.
  • 3 meanwhile, dissolve the gelatin in cold water.
  • 4 lightly spray 8 x 8 inch pan with cooking spray.
  • 5 * i use a silicon pan as it's much easier to remove the marshmallows.
  • 6 sprinkle half of the cornstarch in the greased pan, tilting to coat evenly.
  • 7 once the gelatin has dissolved, microwave on high for approx 30 seconds, in 10 second intervals, stirring after each.
  • 8 add gelatin mixture to agave mixture and continue to whip on high for 10-20 minutes until fluffy and .
  • 9 spread evenly in pan with lightly greased spatula and let set for 3-4 hours or overnight.
  • 10 dust top of marshmallows with remaining cornstarch, cut into squares, remove from pan and dust again.

  • 2 cups oats
  • 2 cups whole wheat flour
  • 2/3 cup brown sugar
  • 1 (3 1/2 ounce) can unsweetened coconut
  • 1/2 cup sunflower seeds

  • 1/4 cup honey
  • 1 cup unsalted butter

  • 2 combine first six ingredients in a large bowl.
  • 3 melt honey & butter together in microwave; set aside.

  • 1 preheat oven to 180°c.
  • 2 melt chocolate and butter by placing both in a heatproof bowl and standing over a pan of boiling water. stir until melted and well combined. (i actually use the microwave on low for this step.)
  • 3 beat flour sugar and eggs until and doubled in bulk, this will take about 5 minutes.

  • 5 grease a lamington tin and scatter cherries over base of tin.
  • 6 pour chocolate mixture over the top and bake in preheated oven for 30-35 minutes, or until a skewer comes out clean when tested.

  • 1 cup butter, softened
  • 1/2 cup sugar, plus
  • 2 tablespoons sugar
  • 3/4 teaspoon almond extract
  • 1/2 teaspoon coconut extract
  • 2 cups all-purpose flour

  • 1/4 teaspoon baking powder

  • 2 cups cauliflower florets, coarsely chopped
  • 2 cups broccoli florets, coarsely chopped
  • 2 cups peas
  • 2 cups potatoes, boiled/microwaved and cubed
  • 2 cups carrots, finely chopped
  • 2 cups green onions, finely chopped
  • 1 packet vegetable soup mix
  • 1 tablespoon extra virgin olive oil
  • 1 1/2 tablespoons soy sauce
  • 1 teaspoon black pepper

  • 1 prepare mix vegetable soup as per instructions on the packet and keep aside.
  • 2 heat oil in a non stick skillet/pan and add black pepper powder.
  • 3 add all the vegetables with ginger garlic paste and soy sauce.

  • 5 turn off the heat and transfer the ingredients to a salad bowl.

Brownie Caramel Walnut Pie

Ingredients

  • 9 inches graham cracker pie crust (prepared)
  • 3/4 cup walnuts (chopped)
  • 20 caramels (unwrapped)
  • 1 (14 ounce) can sweetened condensed milk (divided)
  • 1 egg (beaten, room temp)
  • 4 tablespoons butter (melted and divided)
  • 6 ounces semi-sweet chocolate chips (melted) or 6 ounces milk chocolate chips (melted)

Recipe

  • 1 preheat oven to 325 degrees.
  • 2 brush 2 tbsp of melted butter onto pie crust, moistening crust.
  • 3 sprinkle nuts into pie shell.
  • 4 in a bowl, melt caramels with 2/3 cup condensed milk in microwave on high one 1 minute increments, stirring after each as to not to burn until fully melted.
  • 5 pour caramel sauce over walnuts, completely covering.
  • 6 in bowl, combine egg,remaining butter and remaining condensed milk; mix well.
  • 7 melt chocolate chips in microwave on high on 1 minute increments, stirring each time until fully melted and slighlty cool.

  • 10 bake 35 minutes or until center is set(dip tester into brownie layer and only a few moist crumbs should cling to tester).

Creamy Green Chili Chicken Enchiladas

  • 1/4 cup butter
  • 1/4 cup flour
  • 2 cups chicken broth
  • 8 ounces sour cream
  • 2 (4 ounce) cans green chilies, undrained
  • 1/4 teaspoon cayenne pepper
  • 1/4 teaspoon cumin
  • 1/4 teaspoon chili powder
  • 4 tablespoons cilantro, chopped
  • 1 tablespoon olive oil
  • 1 small onion, finely chopped
  • 1 tablespoon lime juice
  • 3 cups cooked chicken, shredded
  • 1/4 cup salsa
  • 3 cups cheese, shredded (i used a mixture of pepper jack and colby jack)
  • 12 small corn tortillas

Recipe

  • 1 in a medium sauce pan, melt the butter, stir in flour, mix and cook until bubbly. slowly stir in the chicken stock, cook slowly, until thickened.
  • 2 remove from the heat and add the sour cream, cilantro, green chilies, cayenne, cumin and chili powder. remove from heat.
  • 3 in a small pan, saute the onion in 1 tablespoon olive oil. add to a bowl with the cooked chicken, salsa, lime juice, and 3/4 cup of the cooked sauce. stir well.
  • 4 in a greased oblong baking dish, add 1 cup sauce to the bottom of the pan. soften each tortilla for a few seconds in the microwave, and fill each tortilla with 2 tablespoons chicken mixture and 1 tablespoon cheese. put seam side down in the baking dish. pour the remaining sauce on top.
  • 5 bake 1/2 hr at 350, covered.
  • 6 take off cover and add the remaining cheese, and a bit of salsa or chopped tomato. bake another 5- 10 minutes until the cheese is melted.

Baked Polenta With Cheese And Jalapenos (bon Appetit)

Ingredients

  • 1 -2 medium jalapenos or 1 -2 medium serrano chili, stemmed
  • 8 ounces piece monterey jack cheese, halved
  • 3 cups water
  • 3 tablespoons olive oil
  • 1 1/4 teaspoons salt
  • 1 cup yellow cornmeal
  • fresh ground pepper

Recipe

  • 1 steel knife: with machine running, drop chili through feed tube and mince. remove from work bowl.
  • 2 shredder: arrange cheese in feed tube and shred using light pressure.
  • 3 generously grease 8-inch square pan. bring water, 2 tablespoons oil and the salt to boil in large heavy saucepan. reduce heat to low. add cornmeal in thin, steady stream, whisking constantly. cook until mixture is very thick and film forms on bottom of pan, stirring frequently, about 9 minutes. (or to microwave: combine water, 2 tablespoons oil, salt, and cornmeal in 3-quart microwave casserole. cover and cook on high 4 minutes. uncover; whisk until smooth. cover and cook until very thick, about 6 minutes.) add chili, half of cheese and pepper and stir until smooth. transfer mixture to prepared pan. smooth top with spatula. cool completely. (can be prepared 3 days ahead. cover and chill.).
  • 4 position rack in center of oven and preheat to 425 degrees. grease large baking sheet. cut polenta into eight rounds using 2 1/2-inch biscuit cutter. transfer to prepared sheet. brush tops of rounds with remaining 1 tablespoon oil. sprinkle with remaining cheese. bake until cheese is golden, 10 to 12 minutes. (or to microwave: arrange 4 polenta rounds in circle on microwave plate. brush with oil and sprinkle with cheese. cook uncovered on medium 7 minutes. repeat with remaining polenta, oil, and cheese. serve hot.

  • 1/4 cup butter

  • 2 cups flour
  • 2 tablespoons cream of tartar
  • 2 tablespoons oil
  • 1 cup salt
  • 2 cups water
  • 3 drops glycerine
  • food coloring

  • 1 mix dry ingredients together in a microwavable bowl.
  • 2 add water, oil and food colouring and stir well.
  • 3 microwave on high for between 3-6 minutes (30 seconds each if divided into ramekins for different colours). stir well at 2 minute intervals until a consistency similar to that of mashed potato is achieved.
  • 4 allow to cool sufficiently before kneading well.

  • 1/2 cup sugar
  • 2 tablespoons butter or 2 tablespoons margarine
  • 2 tablespoons water
  • 2 cups semi-sweet chocolate chips, divided (12 oz. pkg.)

  • 2/3 cup flour
  • 1/4 teaspoon baking soda

  • 1 cup pecan pieces
  • 25 caramels
  • 1/4 cup butter or 1/4 cup margarine
  • 2 tablespoons milk

Recipe

  • 1 preheat oven to 350°f.
  • 2 line a 9 inch square baking pan with foil, extending foil over edges of pan.
  • 3 grease and flour foil.
  • 4 in a medium saucepan, combine sugar, butter and water; cook over low heat, stirring constantly, until mixture boils.
  • 5 remove from heat.
  • 6 immediately add 1 cup chocolate chips; stir until melted.

Caulinana Salad

Ingredients

  • 1 small cauliflower
  • 2 bananas
  • 2 tablespoons lemon juice
  • 1 1/2 cups fresh sliced peaches (or drained canned peach slices)
  • 1/4 cup toasted almonds
  • 1/2 cup plain yogurt
  • 1/2 cup mayonnaise (best foods is good)

Recipe

  • 1 trim and wash the cauliflower.
  • 2 place whole in a saucepan of boiling water and cook 5 minutes.
  • 3 (or steam or microwave) drain well and cut into florets.
  • 4 leave to cool.
  • 5 peel bananas.
  • 6 slice ino 2cm pieces on the diagonal.
  • 7 toss in lemon juice.

  • 1 preheat oven to 350 degrees and grease a large cookie sheet (or cover it with parchment, that's always my choice).
  • 2 cream together the butter and sugar until smooth, then add the eggs one at a time, beating after each addition.

  • 1 pre heat oven to 350 degrees.

  • 3 in food processor pulse walnuts until fine. add remaining dry ingredients and process briefly to blend. drop in margarin in small pieces - pulse until mixture starts to look "moist", 15-30 seconds.
  • 4 pour into a 10" spring form and press evenly to cover bottom and "seam". bake @ 350 degrees for about 12-15 minutes. let cool completely.
  • 5 melt chocolate in microwave, being careful not to boil and stirring occasionally. let cool to room temperature (it should not get cold and stiff, but needs to be comfortably cool).

  • 1 slice the french bread in half lengthwise and crosswise.

  • 2 place a rack in the center of the over and preheat to 375 degrees. lightly grease the insides of 3 soup cans. place the cans on a piece of parchment paper and trace the circumference of each. cut out 3 rounds of parchment and line the bottom of each can with a round. place the prepared cans on a baking sheet and set aside.

Aussie Version Fried Rice

  • 1/2 lb bacon, use a good cut so to avoid too much grease

  • 1 cook the rice with the peas according to package directions. i use a microwave rice cooker, works great. i also put in 1 chicken boullion for flavor.
  • 2 while this is cooking chop up the bacon and fry with onion in fry pan. i use kitchen shears to cup up bacon. i like to brown the bacon well, it seems to add extra flavor.
  • 3 add the cooked rice, peas, and soup to the pan. original recipe didn't call for it, but i add a bit of water at this stage and 1-2 t butter if getting dry looking. cook for 15 minutes. helps to put lid on skillet i find. it helps to soften the noodles from the soup mix. need to keep an eye on the prevent sticking. add 2 scrambled eggs, cook through. enjoy!

  • 1 place chocolate, butter and juice in a microwave suitable bowl. microwave until just melted.

  • 4 meanwhile, in another bowl, beat the cream until soft peaks form – set aside.

  • 1/2 cup dried cherries
  • 1/2 cup dried cranberries
  • 1/2 cup golden raisin

Recipe

  • 1 mix the oats and almonds in a large bowl.
  • 2 preheat the oven to 250 degrees.
  • 3 mix the rest of the ingredients (except the fruit) in a microwave safe bowl. heat for 60 seconds and stir until smooth. microwave for an additional 30 seconds to make the mixture easier to fold into the oats.
  • 4 pour the chocolate mixture into the large bowl and stir until all of the dry ingredients are evenly covered. use no more than 1/4 cup of water to get as much of the chocolate mixture out of the bowl as possible.
  • 5 spread evenly in two 9x13 baking pans and cook for one hour, stirring every 15 minutes.
  • 6 remove from the oven and stir half of the fruit into each pan until evenly distributed. put the pans back in the oven for an additional 5 minutes.
  • 7 remove the pans from the oven, let cool completely, then store in a plastic bag.

Chocolate Whiskey Ice Cream

  • 10 ounces bittersweet chocolate
  • 8 egg yolks
  • 3 tablespoons sugar
  • 2 cups heavy cream
  • 2 cups milk
  • 6 -8 tablespoons whiskey (to taste)

Recipe

  • 1 chop chocolate and melt in the microwave or on the stove.
  • 2 beat egg yolks and sugar by hand until the mixture is thick and pale yellow (should be 2-3 minutes).
  • 3 scald the cream and milk in a large saucepan.
  • 4 pour about 1/4of the cream into the yolks and whisk; then return yolks to the saucepan.
  • 5 cook at low heat (keep stirring!) until the mixture coats the back of a spoon.
  • 6 strain into a bowl and add melted chocolate and whiskey.
  • 7 stir until the mixture is well-blended, then chill thoroughly.
  • 8 freeze in an ice cream maker.

Creamy Macaroni 'n' Cheese

  • 1/3 cup finely chopped onion
  • 3 1/2 cups cooked elbow macaroni
  • 1 3/4 cups shredded low-fat cheddar cheese
  • 2 teaspoons minced fresh parsley
  • 1/2 cup fat-free evaporated milk
  • 1 3/4 cups 2% fat cottage cheese
  • 1 teaspoon dijon mustard
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper (fresh ground makes it really good)

Recipe

  • 1 in a microwave-safe bowl, cover and microwave onion on high for 2 minutes or until tender; drain.
  • 2 you could just caramelize the onions in a skillet on the stove top if you don't want to stink up the microwave.
  • 3 add the macaroni, cheddar cheese and parsley.
  • 4 in a bowl mix the milk, cottage cheese, mustard, salt, and pepper.
  • 5 mix until it is well combined and somewhat smooth.
  • 6 stir into macaroni mixture.
  • 7 pour into a 1 1/2 quart casserole coated with nonstick cooking spray.
  • 8 bake, uncovered at 350°f for 20- 25 minutes or until lightly- browned.
  • 9 burnt cheese bits are good.

Brownie Bottom Pie

  • 1/4 cup margarine or 1/4 cup butter
  • 3/4 cup sugar
  • 2 eggs
  • 1 teaspoon vanilla (i use mexican vanilla)
  • 1/2 cup flour
  • 1/2 cup chopped nuts
  • 2 1/2 cups cold milk
  • 2 (3 1/2 ounce) packages jello chocolate flavor instant pudding and pie filling mix
  • cool whip or whipped cream

Recipe

  • 1 heat oven to 350 (325 for glass pie plate).
  • 2 grease bottom and sides of 9 inch pie plate.
  • 3 microwave chocolate and butter in a large microwave bowl for about 2 minutes.
  • 4 stir until chocolate is melted.
  • 5 stir in sugar, eggs, and vanilla.
  • 6 mix in flour, then nuts.
  • 7 spread in pan.
  • 8 bake 25 to 30 minutes.
  • 9 cool.
  • 10 pour milk into a large bowl.
  • 11 add pudding mixes.
  • 12 beat well with wire whisk.
  • 13 let stand 2 minutes.
  • 14 spread over brownie pie.
  • 15 top with cool whip or whipped cream.
  • 16 garnish with grated bakers chocolate.
  • 17 refrigerate until ready to serve.

Cocoa Chocolate Chip Cookies

  • 1 cup salted butter (8 ounces)
  • 3/4 cup dark brown sugar, packed
  • 1/4 cup cocoa
  • 1 teaspoon vanilla extract
  • 2 cups cake flour
  • 2 cups semi-sweet chocolate chips

Recipe

  • 1 place butter in a microwave safe bowl and microwave on high for 15-30 seconds, or until just melted.
  • 2 stir in brown sugar, cocoa and vanilla. mix well.
  • 3 stir in cake flour.
  • 4 stir in chocolate chips.
  • 5 cover with plastic wrap and chill 1 hour, or until firm.
  • 6 preheat oven to 350°f
  • 7 break off small pieces of dough and form into balls.
  • 8 place on ungreased baking sheets.
  • 9 bake for 12-15 minutes, or until firm but not browned.
  • 10 cool on baking sheets 5 minutes, then remove to rack to cool completely.

Best Cocoa Brownies

  • 10 tablespoons unsalted butter
  • 1 1/4 cups sugar
  • 3/4 cup plus 2 tablespoons unsweetened cocoa powder
  • 1/4 teaspoon salt
  • 1/2 teaspoon pure vanilla extract
  • 2 large eggs, cold
  • 1/2 cup all-purpose flour
  • 1/2 cup walnut pieces (optional)

Recipe

  • 1 position a rack in the lower third of the oven and preheat the oven to 325°f line the bottom and sides of an 8×8-inch square baking pan with parchment paper or foil, leaving an overhang on two opposite sides.
  • 2 combine the butter, sugar, cocoa, and salt in a medium heatproof bowl and set the bowl in a wide skillet of barely simmering water. stir from time to time until the butter is melted and the mixture is smooth and hot enough that you want to remove your finger fairly quickly after dipping it in to test. remove the bowl from the skillet and set aside briefly until the mixture is only warm, not hot. it looks fairly gritty at this point, but don’t fret — it smooths out once the eggs and flour are added. [note, many people who have tried this recipe have found that this step works just fine in the microwave. couldn't test this because we don't have one, but it sounds like it would work.].
  • 3 stir in the vanilla with a wooden spoon. add the eggs one at a time, stirring vigorously after each one. when the batter looks thick, shiny, and well blended, add the flour and stir until you cannot see it any longer, then beat vigorously for 40 strokes with the wooden spoon or a rubber spatula. stir in the nuts, if using. spread evenly in the lined pan.
  • 4 bake until a toothpick plunged into the center emerges slightly moist with batter. the recipe in the book calls for 20 to 25 minutes but it took me at least 10 minutes longer and i was cursing my oven as i have been suspecting it does not bake accurately at 325. i checked deb's site and she had the same problem so be sure to check these often and get them after they set. let cool completely on a rack. i also took deb's tip and and threw them in the fridge for a while to get them to cut with clean lines.
  • 5 lift up the ends of the parchment or foil liner, and transfer the brownies to a cutting board. cut into 16 or 25 squares.
