Christmas Haystacks

Ingredients

  • 10 ounces vanilla chocolate chips
  • 1 cup almonds, toasted,and coarsely chopped
  • 1/2 cup candied red cherries, quartered
  • 1/2 cup green glazed cherries, quartered
  • 1/2 cup sweetened flaked coconut

Recipe

  • 1 line a cookie sheet with wax paper.
  • 2 in a double broiler over low heat, or in the microwave, melt the chips until smooth.
  • 3 remove from the heat, and stir in the almonds and the red and green cherries.
  • 4 drop by tablespoons onto the prepared cookie sheet.
  • 5 sprinkle with the coconut.
  • 6 refrigerate until firm.
  • 7 store in an airtight container.

Chicken Cordon Bleu

Ingredients

  • Servings: 4
  • 1/4 cup reduced-sodium fat-free chicken broth
  • 5 teaspoons butter, melted
  • 1 large garlic clove, minced
  • 1 teaspoon lemon juice
  • flour, for dusting (optional but makes crispier)
  • 1/2 cup italian-style dry breadcrumbs
  • 1 tablespoon parmesan cheese
  • 1 teaspoon paprika
  • 4 (6 ounce) chicken breast halves, skinless, boneless flattened to 1/4-inch thickness
  • salt (1/4-1/2 teaspoon)
  • 4 thin slices prosciutto, can substitute thin sliced ham
  • 1/4 teaspoon fresh ground black pepper
  • 1/4 cup shredded mozzarella cheese (can use pre-sliced or cube)
  • cooking spray

Recipe

  • 1 place broth in a small microwave-safe bowl; microwave at high 15 seconds or until warm. stir in butter, garlic and lemon juice. combine breadcrumbs, paremsan and paprika in a medium shallow bowl; set aside.
  • 2 sprinkle both sides of chicken with salt and pepper. top each breast half with 1 slice of prosciutto and 1 tablespoon mozzarella. roll up each breast half jelly-roll fashion and secure with toothpick.
  • 3 if desired, lightly dust rolled breast with flour then dip each roll in chicken broth mixture, then dredge in breadcrumb mixture. place rolls, seam side down, in an 8-inch square baking dish coated with cooking spray. pour remaining broth mixture over chicken. bake at 350° for 28 to 35 minutes or until juices run clear and tops are golden.

Creamy Baked Apples

Ingredients

  • Servings: 4
  • 3 -4 granny smith apples
  • butter
  • cinnamon sugar
  • 1 1/2 tablespoons flour
  • 1/4 cup sugar
  • 1/2 cup milk
  • 1 teaspoon vanilla
  • cinnamon
  • nutmeg (optional)

Recipe

  • 1 peel& core apples, cut in eights.
  • 2 (i use my apple corer/slicer and then just peel the slices) place in a baking dish, and dot with butter.
  • 3 sprinkle generously with cinnamon-sugar.
  • 4 bake in microwave on high for about 10 minutes or until fork inserts easily, stirring at least once.
  • 5 remove from microwave and set aside.
  • 6 in saucepan bring flour, sugar and milk to a boil over medium heat (it will be thick) stirring constantly.
  • 7 remove from heat, add vanilla and stir well.
  • 8 pour over apples and sprinkle with cinnamon and nutmeg if you desire.
  • 9 serve hot or let cool some.

Cheesy Pizza Dip

Ingredients

  • Servings: 6
  • 1 (16 ounce) jar pizza sauce
  • 4 ounces cream cheese, softened
  • 1 1/4 cups mozzarella cheese, shredded
  • 1/4 cup parmesan cheese

Recipe

  • 1 mix the cream cheese & pizza sauce together in a glass bowl. then stir in the cheeses.
  • 2 heat in the microwave for 3 minutes at 50% heat. stir then reheat for 2-3 minutes or until hot.
  • 3 serve with bread sticks or garlic bread.

Creamy Baked Brussels Sprouts

Total Time: 55 mins Preparation Time: 10 mins Cook Time: 45 mins

Ingredients

  • Servings: 6
  • 3 cups brussels sprouts, frozen
  • 2 green onions or 1 small onion, chopped
  • 8 soda crackers, crumbled
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 (10 ounce) can cream of celery soup
  • 1/4 cup milk

Recipe

  • 1 defrost the brussels sprouts slightly in the microwave, just so you can cut them in half easily with a sharp knife.
  • 2 cut all brussels sprouts in half, if needed so they are all similar in size.
  • 3 in another bowl, mix the rest of ingredients, add the brussels sprouts and toss lightly until they are all coated.
  • 4 put into a greased casserole dish and bake about 1/2 hour in 325 degree oven until bubbly hot and the brussels sprouts are nice and tender.

Bedtime Oatmeal

Ingredients

  • 1/4 cup oatmeal
  • 1 -3 teaspoon instant malted milk powder (depends how strong you want it)
  • 1/2 cup water (or milk if you like it creamy, sometimes i add soya milk)

Recipe

  • 1 put oatmeal in a bowl and mix in malted milk powder.
  • 2 microwave for about 1 1/2 minutes, then stir.
  • 3 either eat right away or microwave again to the consistency you like. relax and enjoy!

Chicken Spaghetti

Total Time: 55 mins Preparation Time: 30 mins Cook Time: 25 mins

Ingredients

  • Servings: 6
  • 4 split chicken breast halves (boneless, skinless)
  • 2 (10 ounce) cans cream of mushroom soup
  • 1 (16 ounce) package thin spaghetti, broken in half
  • 1 (24 ounce) jar of your favorite pasta sauce
  • 8 ounces fresh mushrooms, sliced
  • 1 (16 ounce) package shredded cheese (any kind)

Recipe

  • 1 cut chicken into 2 inch cubes and boil until done.
  • 2 in a saucepan heat the soup, pasta sauce, mushrooms and half of the cheese, stirring frequently.
  • 3 remove chicken from the water, let cool.
  • 4 using the same water, cook spaghetti until al-dente.
  • 5 shred the chicken into bite-sized pieces and place in the bottom of a large casserole dish.
  • 6 drain spaghetti and place in the casserole dish.
  • 7 add sauce and stir until evenly distributed.
  • 8 sprinkle remaining cheese over mixture
  • 9 place casserole in 350 degree oven for aprox 25 minutes, or until cheese is melted.

Cheesy Potato Skins

  • 4 large potatoes (2 pounds)
  • 2 tablespoons butter or 2 tablespoons margarine, melted
  • 1 cup shredded colby-monterey jack cheese (4 ounces)
  • 1/2 cup sour cream
  • 8 medium green onions, sliced (1/2 cup)

Recipe

  • 1 heat oven to 375°f pierce potatoes to allow steam to escape. bake 1 hour to 1 hour 15 minutes or until tender. let stand until cool enough to handle. cut potatoes lengthwise into fourths; carefully scoop out pulp, leaving 1/4-inch shells. save potato pulp for another use.
  • 2 set oven control to broil. place potato shells, skin sides down, on rack in broiler pan. brush with butter.
  • 3 broil with tops 4 to 5 inches from heat about 5 minutes or until crisp and brown. sprinkle with cheese. broil about 30 seconds or until cheese is melted. serve hot with sour cream and onions.

  • 8 ounces semi-sweet chocolate chips
  • 3 ounces unsweetened chocolate, chopped (3 squares)
  • 1/2 cup butter, softened
  • 3 eggs
  • 1 1/4 cups sugar
  • 2 teaspoons vanilla
  • 2/3 cup flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 1/2 cups semi-sweet chocolate chips
  • 1 1/2 cups walnuts, chopped and toasted
  • 1 1/2 cups pecans, chopped and toasted
  • 1 1/2 cups semi-sweet chocolate chips (optional) or 1 1/2 cups chocolate chips (optional)
  • 1 tablespoon shortening (optional)

Recipe

  • 1 preheat oven to 325°f; spray 3 baking sheets with non-stick cooking spray or line them with parchment paper.
  • 2 melt 8 ounces semisweet chocolate chips, 3 ounces unsweetened chocolate, and butter in the microwave (about 1 1/2 minutes in my microwave) or over double broiler over simmering water. cool.
  • 3 beat eggs with sugar. beat in chocolate mixture and vanilla. in a separate bowl combine flour, baking soda, and salt. stir into chocolate mixture just until combined. stir in 1 1/2 cups semisweet chocolate chips and nuts. if desired, refrigerate dough until ready to bake.
  • 4 drop by teaspoonfuls 2 inches apart onto baking sheets. bake 7-8 minutes, until barely firm and tops are slightly cracked.

  • 6 after cookies have cooled, if you would like to make these cookies look extra special, dip them in melted chocolate: melt chocolate chips (either semi-sweet or ) along with shortening in a small bowl. dip 1 half of cookie in melted chocolate. lay onto waxed paper or a wire cookie rack to dry. sometimes i dip the cookies in semisweet chocolate and then drizzle them with melted chocolate.

Christmas Log

Ingredients

  • Servings: 10
  • 1 chocolate swiss roll
  • 50 g digestive biscuits, crushed
  • 2 tablespoons apricot jam
  • 1 tablespoon orange juice
  • 100 g dried mixed fruit
  • 75 g milk chocolate
  • 25 g butter, softened
  • 50 g icing sugar, sifted, plus extra for dusting
  • fondant
  • cocoa powder
  • edible green food coloring

Recipe

  • 1 crumble the swiss roll into the bowl and add the biscuit crumbs, jam, orange juice and dried fruit and mix together with your hands.
  • 2 place the mixture on a board and shape into a roll about the size of the original swiss roll, wrap in cling film and put in the fridge.
  • 3 using a potato peeler, scrape about 15g chocolate into shreds on to a plate.
  • 4 break the remaining chocolate pieces and put in a small bowl set over a saucepan of simmering water until melted, or melt in the microwave.
  • 5 beat the butter, then beat in the coated but still melted chocolate
  • 6 unwrap the log, and using a knife, spread with the icing, use a fork to make it look like tree bark and dust with icing sugar to resemble snow.
  • 7 put on a plate and sprinkle with chocolate shreds.
  • 8 if liked, make fondant icing mushrooms and dip the heads into cocoa powder, then colour some fondant icing green and cut out leaves.

Christmas Quinoa Muffins

Ingredients

  • 2 cups cooked quinoa, cooled
  • 1 1/2 cups whole wheat flour
  • 1/2 cup almond flour
  • 3/4 cup brown sugar
  • 1 1/2 teaspoons baking powder
  • 1 teaspoon kosher salt
  • 1/2 cup greek yogurt, with fruit on bottom (i used fage cherry)
  • 1 cup milk (i used almond)
  • 1 egg
  • 1 teaspoon vanilla
  • 1/4 cup vegetable oil (i used grapeseed)
  • 1/4 cup pumpkin seeds
  • 1 cup fresh cranberries (chopped)
  • 2 tablespoons unbleached cane sugar

Recipe

  • 1 preheat oven to 400 degrees.
  • 2 add cane sugar to chopped cranberries ( i find chopping frozen cranberries much easier).
  • 3 mix first 6 dry ingredients together.
  • 4 in a separate bowl whisk remaining wet ingredients (yogurt, milk, egg, vanilla and oil) together.
  • 5 fold wet ingredients into dry until just combined. do not overmix.
  • 6 fold in sugared cranberries and pumpkin seeds
  • 7 line muffin tins with parchment cups or grease with oil of choice. i used parchment.
  • 8 use regular size ice cream scoop to fill muffin cups.
  • 9 bake for 30 -40 minutes until tops are brown and toothpick comes out clean. toothpick will come out clean after 20 minutes but its worth waiting until muffins actually brown on top for better texture.
  • 10 notes: batter is fairly dense. adjust with milk to your liking. muffins are minimally sweet so adjust sugar as well. i love a just slightly sweet muffin and you can't beat fresh cranberries. enjoy!
  • 11 as with all healthier muffins these stay/store best in freezer in a ziploc freezer bag once they've completely cooled. perfect defrosted in microwave at power level 3 for 1 min (flipping it at 30 seconds).

Coconut-caramel Candy Bars

Ingredients

  • 1/2 cup butter
  • 1 1/2 cups brown sugar
  • 2 teaspoons vanilla extract
  • 1 large egg
  • 1 1/4 cups unbleached all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking powder
  • 1 1/2 cups toasted shredded sweetened coconut
  • 3/4 cup chopped chocolate (bittersweet or semisweet chocolate, or chocolate chips)
  • 1 cup caramel (from a block, or unwrapped candies)
  • 1/2 cup sweetened coconut (toasted)

Recipe

  • 1 preheat the oven to 350°f lightly grease a 9" x 13" or 11" x 11" pan.
  • 2 to make the crust: in a large mixing bowl, cream together the butter, brown sugar, vanilla, and egg.
  • 3 mix in the flour, salt, baking powder, and 1 1/2 cups of the coconut.
  • 4 spread the mixture in the prepared pan.
  • 5 bake for 30 minutes.
  • 6 remove the bars from the oven, and sprinkle with the chocolate.
  • 7 allow the chocolate to soften for about 5 minutes, then spread it evenly atop the bars.
  • 8 melt the caramel over low heat, or in the microwave, until it's pourable.
  • 9 drizzle it over the bars, and sprinkle the reserved coconut over the top.
  • 10 loosen the edges of the crust with a knife, then set aside to cool completely before cutting and serving.
  • 11 note: ok, i made these again with, um, a few changes to the crust. added 1/4c butter, reduced b. sugar to 1c, added 1/4c corn syrup, added 3/4c processes oats (whirled 1c oats in food processor until med-fine). the rest of the ingredients were as written. i baked it in a jelly roll pan so that it would be thinner for 16min. this pan was a little too big for my modified recipe and the dough was hard to spread evenly, so i would go back to the 9x13 pan and bake a couple minutes longer next time. loved it! the cookie base was easy to cut warm, but could still be cut once cooled. the base was firm but not difficult to bite. it had a slight toffee-like quality that i loved. unfortunately i can't say which changes were most important but love the end result and will make again!

Bedrock Easter Basket

Ingredients

  • Servings: 24
  • 1/4 cup butter or 1/4 cup margarine
  • 1 (10 1/2 ounce) package jet-puffed miniature marshmallows (6 cups)
  • 1 (13 ounce) package post fruity pebbles cereal (about 8-1/2 cups)

Recipe

  • 1 line 2-1/2 to 3-qt. bowl with foil, extending foil about 2 inches beyond edge of bowl. lightly grease foil; set aside.
  • 2 place butter in 4-qt. microwaveable bowl sprayed with cooking spray. microwave on high 45 sec. or until butter is melted.
  • 3 add marshmallows; stir to coat. microwave 1-1/2 minute or until marshmallows are completely melted and mixture is well blended, stirring after 45 sec. microwave an additional 4 min., stirring after 2 minute add cereal; mix well.
  • 4 place cereal mixture in foil-lined bowl; press firmly onto bottom and up side of bowl to form thick shell. let stand in cool dry place at least 4 hours or overnight until firm.
  • 5 remove cereal shell from bowl, using foil handles. carefully peel off foil. fill shell as desired.

Carnitas Simply Recipes

Total Time: 4 hrs 15 mins Preparation Time: 15 mins Cook Time: 4 hrs

Ingredients

  • 4 lbs lamb shoulder, cut into large cubes (remove as much fat as possible)
  • 1 quart beef broth
  • 2 cups chunky salsa
  • water
  • salt, to taste
  • 2 cups fresh salsa or 2 cups pico de gallo
  • 16 -24 corn tortillas

Recipe

  • 1 1 in a large, heavy saucepan over medium-high heat, combine lamb, broth, and salsa. add enough water to completely cover the meat. cover and bring to a boil. reduce heat to low and simmer, covered for 3 to 4 hours (or longer) until meat pulls apart easily. add salt to taste if needed.
  • 2 2 preheat oven to 400 degrees. remove meat from liquid in pot (discard the liquid) and spread the meat out in a roasting pan. break the meat into small chunks. roast meat for 15 to 20 minutes until brown and crispy.
  • 3 3 if you are using store-bought tortillas, heat the tortillas one-by-one either in a microwave or on a hot skillet. if you heat them on a skillet you may need to use a little butter or oil to help soften them. when air pockets form in the tortillas they are ready. to heat them in a microwave, place a paper towel on the floor of the microwave. lay one or two tortillas on the paper towel (whatever will fit so there is only one layer). microwave on high heat for 10 seconds per tortilla (some brands of tortillas require 20 seconds each). keep warm tortillas wrapped in a clean cloth towel for serving.
  • 4 to serve, double up the tortillas and place a few spoonfuls of the carnitas on them. top with salsa. serve with grated lettuce (that has been lightly salted and sprinkled with vinegar), beans, avocados, and/or grated cheese.
  • 5 to eat, remove half of the carnitas from one tortilla to another. take one tortilla at a time with the carnitas and salsa, fold it over and enjoy. or, keep them doubled up. your choice.

Chicken Cordon Bleu Casserole

Total Time: 1 hr 2 mins Preparation Time: 12 mins Cook Time: 50 mins

Ingredients

  • Servings: 6
  • 1 lb baby red potato, cut into 1 inch pieces
  • 1 lb chicken tenders
  • 1 (12 ounce) bag broccoli florets, approx 3 3/4 cups
  • 1 (10 3/4 ounce) can low-sodium condensed cream of chicken soup
  • 8 ounces ham, cooked and cut 1/2 inch cubes, can use deli ham as a substitute
  • 3/4 cup swiss cheese, shredded
  • 1/2 cup skim milk
  • 2 teaspoons dried parsley
  • 1 garlic clove, finely chopped

Recipe

  • 1 preheat oven to 350 degrees.
  • 2 in large microwave safe bowl, place potatoes and 2 tablespooons of water. cover the bowl, and microwave on high for 3 to 4 minutes or until potatoes are fork tender, stirring once.
  • 3 add chicken and all remaining ingredients to potatoes. toss well.
  • 4 transfer mixture to 9x13 baking dish.
  • 5 bake uncovered for 50-55 minutes or until chicken no longer shows pink and cheese is bubbly.
  • 6 note: spray casserole dish with cooking spray or foil line the casserole dish for easier clean up.____this can be assembled the night before and then cooked right before serving.

Bedrock Bars

Ingredients

  • Servings: 20
  • 13 ounces fruity pebbles cereal
  • 10 ounces marshmallows
  • 1/4 cup butter
  • pam cooking spray

Recipe

  • 1 in large microwaveable bowl, melt butter.
  • 2 spray 9x13 pan with pam.
  • 3 add marshmallows to bowl. microwave for 1 minute. stir. microwave additional 30 seconds if marshmallows haven't completely melted.
  • 4 pour cereal into bowl. mix well to make sure marshmallows and cereal are thoroughly combined.
  • 5 spread cereal mixture evenly into baking pan. let stand for a few hours/overnight to allow bars to firm up. cut into squares.

Bed & Breakfast Stuffed Potato Peels

Total Time: 20 mins Preparation Time: 10 mins Cook Time: 10 mins

Ingredients

  • Servings: 3
  • 1/3 cup cottage cheese
  • 3 tablespoons parmesan cheese (grated)
  • 1 tablespoon honey mustard (may use hot mustard)
  • 1 tablespoon lemon juice
  • 1 teaspoon horseradish
  • 2 cups chopped fresh broccoli or 1 (10 ounce) package frozen chopped broccoli
  • 1 chopped jalapeno pepper
  • 3 hot freshly baked potatoes, halved
  • paprika
  • black pepper
  • salt

Recipe

  • 1 steam (about 10 mins.) and drain broccoli.
  • 2 bake potatoes in the microwave (about 7-8 mins.) while broccoli is cooking.
  • 3 mix cottage cheese, parmesan cheese, lemon juice, mustard, and horseradish until smooth.
  • 4 stir in the broccoli and jalapeno.
  • 5 break up the potato interiors with a fork, but do not break up the peel skins.
  • 6 top each potato half with a pat of butter, or margarine, then the broccoli-cheese mix and sprinkle with paprika and black pepper.
  • 7 add salt to taste.
  • 8 serve the peels hot.

  • 1 put brown sugar and butter in baking dish and microwave on high for 2 minutes.
  • 2 add bananas and spoon the sauce over to coat well.
  • 3 microwave on high for 1 minute.
  • 4 serve with vanilla ice cream or cookies.

A Faster Egg Muffin

Ingredients

  • 1 english muffin, toasted & buttered
  • 1 egg
  • 1 slice deli ham (cut into bite-size pieces)
  • 1/4 cup cheese, shredded

  • 1 by the time it takes to read this, you can be done already! why wait in a drive through? need to eat healthy? use a whole grain muffin! feel like you must eat in your car? okay wrap it in a paper towel and drive.
  • 2 here's how to make:.
  • 3 use a 2 cup glass pyrex measuring cup (makes the perfect size)!
  • 4 break your egg into the pyrex and stir it up to break the yolk.
  • 5 top with deli ham.
  • 6 cook in microwave for 30 seconds on high.
  • 7 top with shredded cheese and cook for 15-20 seconds longer to melt cheese.
  • 8 with a butterknife loosen the cooked egg and guide it onto your muffin and place the top on it.
  • 9 go ahead eat it!

Chicken Cordon Bleu

Ingredients

  • 1 lb chicken breast, deboned
  • 1/4 lb ham, sliced
  • 1 cup breadcrumbs
  • 1/2 cup bechamel sauce
  • 2 eggs
  • 2 tablespoons butter
  • 2 ounces swiss cheese, sliced
  • 1 dash salt
  • 1 dash ground black pepper
  • 1 dash paprika

Recipe

  • 1 cut the chicken into four roughly equal parts, and then pound the chicken flat. place one ounce of ham and half an ounce of cheese onto each chicken cutlet. roll the cutlets with the ham and cheese inside and press flat.
  • 2 heat the butter for half a minute at 950 watts. beat the eggs and add to the butter. mix the bread crumbs and the spices. roll each cutlet in the egg and butter mixture, then roll each cutlet in the crumb and spices mixture.

  • 1 bread: grease and flour 1 loaf pan. mix together dry ingredients. cream butter and sugar until fluffy. add eggs one at time. scrape bowl. add dry ingredients, then fold in mashed banana. bake at 350 degrees for about 40 minutes. the outside of the bread will get quite dark, but test with a toothpick for doneness in the center. let cool in pan for 15 minutes then turn out of pan.
  • 2 ganach: while bread is baking. put chocolate chips in a small bowl. heat cream and sugar until just about to boil. pour over the chips and let set for 1 minutes. whisk together until all chocolate is melted. if the chocolate doesn't melt completely, microwave for 20 seconds and stir again. repeat until all is melted. set aside at room temperature.
  • 3 pineapple: while bread is baking. mix together, pineapple, vanilla and zest in a small bowl. set aside at room temperature.
  • 4 walnuts: at the end of the bread baking. bring the sugar and water to a boil. add the walnuts and let simmer for 5 minutes. drain the nuts and spread evenly on a cookie sheet. once bread is done, roast in the oven at 325 degrees, for about 20 minutes. stir one or twice. check often, to make sure they are not burning. the are done when they "snap" in the center. crunchy all the way through.
  • 5 assembly: peel bananas, and slice in half length ways. slice banana bread to desired thickness and place one plate or in bowl. lay a banana half over or next to bread. top with two or three small scoops of ice cream. top each scoop if ice cream with chocolate ganach, crushed pineapple, chopped candied walnuts, and whipped cream. enjoy!

  • 1 preheat oven to 350°f lightly coat a 9" x 13" baking dish with nonstick cooking spray and set aside.
  • 2 line the bottom of the baking dish with shredded chicken. next, layer ham slices. lay the swiss cheese on top of the ham.
  • 3 for the sauce: over medium heat, melt the butter in a large sauce pan. whisk in the flour until smooth. continue to whisk mixture while slowly adding milk — stir until sauce thickens, about 10 minutes, whisk continuously.
  • 4 time saving tip: to make the thickening process go faster, heat milk in the microwave until it boils (about 2-3 minutes). then slowly add to sauce pan, whisking as you pour.

  • 1/4 teaspoon salt
  • cider vinegar, if desired

  • 1 spray dutch oven with nonstick cooking spray.

  • 2 put the unsweetened and semisweet chocolates and butter in a medium microwave-safe bowl; heat at 75 percent power until softened, about 2 minutes. stir, and continue to microwave until completely melted, about 2 minutes more. (alternatively, put the chocolate and butter in a heatproof bowl. bring a saucepan filled with an inch or so of water to a very slow simmer; set the bowl over, but not touching the water, and stir occasionally until melted and smooth.)

Recipe

  • 1 steam cabbage in a vegetable steamer or cover and steam in a microwave. set aside but keep warm.
  • 2 in a small skillet, saute onions in olive oil until onions are translucent and tender. remove onions from oil add flour to the oil and stir; gradually add milk, dissolving the flour into the sauce.
  • 3 add the mustard; stir well. return the onions to the mixture; stir well, heating on low for two minutes. add tad more milk if too thick.
  • 4 place cabbage wedges in a serving dish, and pour sauce down the middle. sprinkle with pepper.

Black Bean Spirals

  • 6 (10 inch) soft flour tortillas
  • 8 ounces softened cream cheese
  • 1 cup shredded monterey jack cheese
  • 1/2 cup sour cream
  • 1/4 teaspoon onion salt
  • salsa (for dip)

  • 1 process beans until smooth and spread on warmed tortillas (i warm in microwave 25 seconds for easy rolling).
  • 2 place all else in processor until smooth and spread over beans.
  • 3 roll up tightly. refrigerate and when ready, serve with salsa, cutting spirals into 1/2 inch pieces.

Cheddar-mushroom Stuffed Potatoes

  • 6 russet potatoes, large
  • 2/3 cup heavy whipping cream
  • 1 cup cheddar cheese, shredded divided
  • 1/4 cup fresh mushrooms, chopped
  • 1/2-1 teaspoon garlic salt
  • 1/2 teaspoon dried basil
  • 1/2 teaspoon dried oregano
  • 4 slices bacon, cooked and crumbled, divided

  • 1 preheat oven to 375 degrees. bake potatoes for approximately one hour or until tender.
  • 2 when cool enough to handle cut a thin slice off the top of each potato. carefully scoop out pulp, place in mixing bowl, and leave a 1/4 inch shell, set aside.
  • 3 add cream to potato pulp and mash. stir in 3/4 cup of cheese, mushrooms, garlic salt, basil, and oregano. setting aside 2 tablespoons of bacon, add the remaining bacon to the potatoes.
  • 4 spoon mixture into potato shells and top with remaining cheese and bacon. microwave uncovered, on high for 3 to 4 1/2 minutes or bake uncovered, in a 375 degree oven for 25-30 minutes making sure potatoes are heated thru. serve immediately.

Butternut Squash & Leeks

  • 1 (2 1/2 lb) butternut squash, peeled, seeded & cubed
  • 4 large leeks, and light green parts
  • 4 leaves fresh rosemary (substitute sage or any of your favorite holiday herb)
  • coarse salt
  • coarse black pepper
  • 1/4 cup olive oil
  • roasted pecan pieces, for a twist

  • 1 preheat oven to 400.
  • 2 original recipe called for 400 - i think, like the one reviewer mentioned - may be too high. maybe 375? another thought is to maybe add the leeks a little into the cookiing -- the squash is definatly going to take longer to cook. just some tweaking going on here. thanks for looking, and cooking!
  • 3 in a large bowl, mix the squash, leeks, herb, salt, pepper, olive oil and pecans (if your are using them) together.
  • 4 place on a cookie sheet (may take 2) and cook for appx 1/2 hour.
  • 5 this is some really good stuff!
  • 6 cook time is 1/2 hour, prep time is going to vary - the squash does take time, but well worth it.
  • 7 edit to add that after peeling, seeding and halving/quartering the squash, put it in the microwave for 2 to 3 minutes. this will help with dicing of the squash and help even out the cooking time with the leeks.

Chicken Soup Casserole

  • 1 (10 1/2 ounce) can condensed cream of celery soup
  • 1 (10 1/2 ounce) can condensed cream of chicken soup
  • 180 ml mayonnaise
  • 10 g chopped onions
  • 140 g shredded boiled chicken breasts
  • 110 g buttery round crackers, crushed

Recipe

  • 1 preheat oven to 300 degrees f (150 degrees c).
  • 2 in a large bowl combine the cream of chicken soup, cream of celery soup, chicken soup, mayonnaise, onion and chicken meat. mix together well. pour mixture into a 10x10 inch casserole dish.
  • 3 sprinkle crushed cracker crumbs over the top.
  • 4 bake in the preheated oven for 30 to 35 minutes or until it starts to bubble.
  • 5 or if you wish to microwave: put in microwave for 20 minutes.
