Chocolate Cayenne Truffles

Ingredients

  • 9 ounces semisweet chocolate
  • 3/4 cup butter
  • 4 teaspoons cayenne pepper
  • 6 tablespoons cream
  • 1 1/4 cups powdered sugar
  • 1/3 cup powdered sugar
  • 2 tablespoons cocoa powder
  • 2 teaspoons ginger
  • 1 teaspoon cinnamon

Recipe

  • 1 melt chocolate, butter and cayenne in a double boiler, or a bowl in the microwave. stir well.
  • 2 remove from heat. mix in cream and 1 1/4 cups powdered sugar. stir well. (the sugar will stick together in small lumps if you aren't vigorous about it.).
  • 3 cover, and chill overnight.
  • 4 create a mixture of 1/3 cup powdered sugar, the cocoa powder, ginger, and cinnamon.
  • 5 scoop out the chocolate, one tablespoon at a time. mold it into balls. (this is messy; get used to it.) roll the balls in the powder mixture to coat them.
  • 6 put them back in the fridge, until serving time.

Chicken Taco Lunch (oamc)

  • 6 chipotle pepper tortillas, cut in strips
  • 3 cups cooked long-grain rice
  • 4 cups cooked chicken breasts, shredded
  • 16 ounces tomato sauce
  • 1 (1 1/4 ounce) envelope taco seasoning
  • 2 (15 ounce) cans low-fat refried black beans (with jalapenos)
  • 2 cups cheddar cheese, grated
  • 1 (15 ounce) can diced tomatoes
  • 1 (15 ounce) can black beans
  • 1 cup frozen corn
  • 2 jalapenos, minced

Recipe

  • 1 mix taco seasoning and jalapenos into tomato sauce and stir chicken in to coat.
  • 2 line (1) 9x13 and (1) 8x8 pan with tortilla strips.
  • 3 spread rice evenly on tortillas.
  • 4 spread chicken mixture evenly over rice.
  • 5 combine black beans, corn, and diced tomatoes. spread evenly over chicken.
  • 6 spread refried beans over corn mixture.
  • 7 sprinkle cheese over the top and slightly press into refried beans.
  • 8 place pans in freezer for approx 45 minutes. remove from freezer; cut into individual size servings. place servings in sandwich zipper top bags and return to freezer.
  • 9 to reheat: remove from bag, place on microwave safe bowl or plate, cover loosely. heat on high until heated through (approx. 4-6 minutes). let sit 1 minute.

Coconut Mashed Potato Candy #sp5

Ingredients

  • 3/4 cup simply potatoes traditional mashed potatoes, cold
  • 4 cups confectioners' sugar, sifted
  • 4 cups shredded coconut
  • 1/2 teaspoon vanilla
  • 4 ounces semisweet chocolate or 4 ounces bittersweet chocolate, finely chopped

Recipe

  • 1 combine cold mashed potatoes and confectioner's sugar in a large bowl. thoroughly combine. mixture will begin as a stiff dough and loosen up as the sugar mixes with the potatoes. add the coconut and vanilla and mix thoroughly.
  • 2 form into triangular peaks, using about 1 rounded teaspoon of mixture for each. put on waxed paper lined cookie sheet. let dry for 20 minutes.
  • 3 melt chocolate in bowl over simmering water (or in microwave in one minute intervals until melted).
  • 4 dip base of each candy in chocolate. let stand on waxed paper to set.
  • 5 store in covered tin in the refrigerator.

Chocolate Carrot Cake

  • 2 cups packed light brown sugar
  • 1 1/2 cups vegetable oil
  • 4 extra large eggs
  • 2 teaspoons baking soda
  • 4 teaspoons ground cinnamon
  • 3/4 teaspoon ground nutmeg
  • 1/4 cup cocoa powder, plus
  • 1 tablespoon cocoa powder
  • 1 3/4 cups all-purpose flour
  • 1 lb carrot, peeled and grated
  • 1/2 lb chopped walnuts
  • 4 ounces chocolate

Recipe

  • 1 preheat oven to 350°.
  • 2 grease and flour a ten inch tube pan.
  • 3 combine brown sugar,oil, and eggs, stirring until smooth. sift together baking soda, cinnamon, nutmeg, salt, cocoa powder, and flour. beat dry ingredients into liquid, mixing well. fold in carrots and walnuts. pour batter into prepared pan and bake for 45 to 50 minutes or until a cake tester inserted near center of ring comes out clean.
  • 4 cool in pan on rack for 15 minutes. turn out cake and let cool completly.
  • 5 melt chocolate in the top half of a double boiler or in a microwave and pour over top of cooled cake.
  • 6 if desired, garnish with melted dark chocolate driizzled over cake and fresh fruit such as strawberries.

Cheesy Bacon Microwave Potatoes

  • 2 tablespoons butter or 2 tablespoons margarine or 2 tablespoons bacon drippings
  • 2 cups chopped onions
  • 1/2 cup hot water
  • 12 medium potatoes, cut into 1/2 inch cubes
  • salt and pepper, to taste
  • 4 slices crumbed bacon
  • 1/4 cup milk or 1/4 cup cream
  • 2 cups grated cheddar cheese (old preferred)

Recipe

  • 1 in a 1-1/2 quart casserole, combine butter or marg, hot water and chopped onion.
  • 2 microwave on high for 2-3 minutes.
  • 3 stir in potatoes, salt and pepper.

  • 1 cup butter
  • 3/4 cup powdered sugar
  • 1 teaspoon vanilla
  • 2 cups sifted flour
  • 3/4 cup chopped macadamia nuts
  • 1 cup milk chocolate chips or 1 cup semi-sweet chocolate chips
  • 1 1/2 teaspoons vegetable shortening

Recipe

  • 1 in large mixing bowl, beat butter, sugar and vanilla until light and fluffy. gradually stir in flour until well blended.
  • 2 stir in macadamia nuts.
  • 3 place dough on wax paper and shape into a roll two inches in diameter.
  • 4 wrap in paper and foil and chill at least two hours or overnight.
  • 5 preheat oven to 300 degrees.
  • 6 cut roll into slices approximately 1/4 to 1/2 inch thick.

  • 1 teaspoon light corn syrup

  • holiday candy sprinkles or colored crystal sugar, to decorate

Recipe

  • 1 in a microwave, melt the bittersweet chips, shortening, and corn syrup; stir until smooth. stir in confectioners' sugar and enough coffee to achieve a glaze consistency.
  • 2 dip pretzel rods into glaze; allow excess to drip off. place on waxed paper; decorate with holiday sprinkles or colored sugar; allow glaze to set.

  • 1 in small mixing bowl beat butter, sugar, egg yolk, milk and vanilla until blended. in separate bowl, stir together flour, cocoa and salt. blend into butter mix. refrigerate dough 1 hour.

  • 3 beat egg slightly. shape dough into 1 inch balls. dip each ball into egg and roll into pecans. place on lightly greased cookie sheet. press thumb gently in center of ball. bake 10-12 minutes or until set. while baking, prepare caramel.
  • 4 cook caramels and whipping cream on low heat until melted, stirring a lot. mix should be smooth.

Chicken Tacos With Charred Tomatoes

Ingredients

  • 2 plum tomatoes, cored
  • 8 ounces chicken breasts, boneless, skinless trimmed of fat
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
  • 2 teaspoons canola oil, divided
  • 1/2 cup onion, finely chopped
  • 1 garlic clove, minced
  • 1 small jalapeno pepper, seeded and minced
  • 2 teaspoons lime juice, plus lime wedges for garnish
  • 2 teaspoons fresh cilantro, chopped
  • 2 scallions, chopped
  • 6 small corn tortillas, heated (see tip)

  • 1 heat a medium skillet over high heat until very hot. add tomatoes and cook, turning occasionally with tongs, until charred on all sides, 8 to 10 minutes. transfer to a plate to cool slightly. cut the tomatoes in half crosswise; squeeze to discard seeds. remove cores and chop the remaining pulp and skin.
  • 2 cut chicken into 1-inch chunks; sprinkle with salt and pepper. add 1 teaspoon oil to the pan and heat over high heat until very hot. add the chicken and cook, stirring occasionally, until it is browned and no longer pink in the middle, 3 to 5 minutes. transfer to a plate.

  • 1 1/2 tablespoons margarine or 1 1/2 tablespoons butter, softened
  • 3/4 cup wheat germ, any flavor
  • 2 (8 ounce) packages cream cheese, softened
  • 3/4 cup sugar
  • 1/3 cup unsweetened cocoa powder
  • 1 teaspoon vanilla
  • 2 eggs
  • 36 small pecan halves
  • 6 tablespoons caramel ice cream topping

Recipe

  • 1 heat oven to 350.
  • 2 with paper towel, generously coat muffin cups with margarine.

  • 3 cups crushed chocolate graham crackers
  • 1/2 cup butter, melted
  • 4 (8 ounce) packages cream cheese, softened

  • 1 teaspoon instant coffee granules
  • 1 teaspoon vanilla extract
  • 4 large eggs
  • 4 (1 ounce) bittersweet chocolate squares

  • 1 in a bowl, stir the crushed graham crackers and butter together; press mixture into bottom and up sides of a 9-inch springform pan coated with cooking spray.

Cheesy Bacon Wrapped Date Yummies

Ingredients

  • 40 pitted dates
  • 1/2 lb sharp cheddar cheese
  • 1 lb bacon

Recipe

  • 1 cut cheese into small narrow slices to fit inside a pitted date hole.
  • 2 inside of each date, insert cheese.
  • 3 cut bacon into thirds.
  • 4 wrap each date with enough bacon to cover the date.
  • 5 fasten with a toothpick.
  • 6 place each date on a wire cooling rack, placed over a pan to catch bacon drippings.
  • 7 bake at 375 degrees for approximately 15-20 minutes until bacon is crisp.
  • 8 transfer to a serving plate or store covered.

Ingredients

  • 1/2 cup butter, softened
  • 1/4 cup powdered sugar
  • 2 tablespoons brown sugar, firmly packed
  • 1 1/4 cups all-purpose flour
  • 3/4 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/3 cup caramel ice cream topping
  • 1/4 cup slivered almonds, coarsely chopped
  • 1/3 cup milk chocolate chips

Recipe

  • 1 heat oven to 325°f
  • 2 line 8-inch square baking pan with aluminum foil, extending over edges 1 inch.
  • 3 combine butter, powdered sugar and brown sugar in large bowl.
  • 4 beat at medium speed, scraping bowl often, until creamy.
  • 5 reduce speed to low; add flour, baking powder and salt. beat until well mixed.
  • 6 press dough into prepared pan; prick with fork every 1/2 inch.

Cheesy Bacon Rounds

  • 2 cups colby-monterey jack cheese, shredded
  • 1/2 cup mayonnaise (real mayo not miracle whip)
  • 1/2 cup chopped bacon
  • 1 1/2 teaspoons garlic powder
  • 1 teaspoon onion powder
  • 2 french baguettes, loafs

Recipe

  • 1 in a microwave safe bowl cook the bacon pieces ( the kind used for salads) for approximately 40 seconds and let cool. this gives them a head start on being crispy.
  • 2 in a bowl combine: mayo, garlic powder, and onion powder until smooth.
  • 3 once mayo mixture is complete add in bacon pieces and cheese and combine well and set aside.
  • 4 slice baguette so that pieces are about a fingers width. line cookie sheet with aluminum foil.
  • 5 take bread slices and spread mayo mixture evenly on top and place in rows on cookie sheet.

Cheesy Baked Onions

Ingredients

  • Servings: 4
  • 4 large onions, peeled
  • 3 ounces mozzarella cheese, roughly chopped
  • 3 1/2 ounces cheddar cheese, grated
  • 2 tablespoons olives, halved
  • 2 ounces roasted red peppers, from a jar, drained and roughly chopped
  • 1 garlic clove, crushed
  • 2 ounces breadcrumbs
  • 2 sprigs thyme, leaves only

Recipe

  • 1 heat oven to 425°f
  • 2 halve each onion through the middle. microwave in pairs for 4 mins on high until soft.
  • 3 remove the middles of the onions, leaving about 3 outer layers in place, like little bowls.
  • 4 whizz the onion middles in a food processor until pulpy.
  • 5 mix with the mozzarella, half the cheddar, the olives, peppers, garlic, crumbs and most of the thyme, then season well.
  • 6 spoon the filling into the onion cases and transfer to a baking dish. sprinkle with the remaining cheddar and thyme, then roast for 15 mins until hot through and golden.

  • 1 1/4 cups finely crushed chocolate wafer crumbs
  • 1/4 cup butter, melted
  • 20 caramels, unwrapped
  • 2 tablespoons milk
  • 1/3 cup chopped pecans, toasted
  • 1 (8 ounce) package cream cheese, softened
  • 1/3 cup sugar
  • 1 egg
  • 1/2 teaspoon vanilla
  • 1/4 cup sour cream
  • 1 (12 ounce) package real semi-sweet chocolate chips
  • 1/4 cup shortening

Recipe

  • 1 heat oven to 350. line 8 inch square baking pan with double thickness of aluminum foil, extending foil over ends of pan. spray foil with no-stick cooking spray. combine all crust ingredients in small bowl. press onto bottom of prepared pan.
  • 2 combine caramels and half & half in medium microwave-safe bowl. microwave on high 1 minute; stir. continue microwaving 30 seconds; stir until smooth. pour over crust in pan. sprinkle with pecans. refrigerate while preparing cream cheese mixture.
  • 3 combine cream cheese and sugar in medium bowl. beat at medium speed, scraping bowl often, until creamy. add egg and vanilla, beating just until combined. stir in sour cream. pour over caramel mixture.
  • 4 bake for 35 to 40 minutes or until just set 2 inches from edges of pan. cool on wire rack for 1 hour. loosely cover; refrigerate at least 4 hours. use foil to lift cheesecake from pan. cut into 36 squares.
  • 5 place cooling rack over large piece of waxed paper on counter. combine chocolate chips and shortening in 1 quart saucepan. cook over low heat, stirring constantly, until smooth. pierce each cheesecake square with fork. spoon chocolate over top and sides of each cheesecake square, letting excess chocolate drop back into pan. place onto cooling rack. let stand about 20 minutes or until chocolate is firm. store refrigerated.

  • 2 cups salsa (any heat you like)

  • 4 cups instant rice, uncooked
  • 8 (12 inch) flour tortillas
  • 2 cups cheddar cheese, shredded (optional)

Recipe

  • 1 combine chicken, water, salsa and seasonings in a saucepan.
  • 2 bring to a boil.
  • 3 add rice, and simmer on for 5 minutes.
  • 4 spoon mixture into center of tortillas. add cheese if you want it and wrap.
  • 5 flash freeze.
  • 6 to reheat: microwave until heated through.

Chicken Tacos With Spicy Grape Salsa

Ingredients

  • Servings: 6
  • 1 1/2 lbs red seedless grapes, chopped (about 3 cups)
  • 1 red onion, chopped fine
  • 1 jalapeno pepper, chopped (or more to taste)
  • 1/2 cup fresh cilantro, chopped
  • 3 tablespoons fresh lime juice (about 1 lime)
  • salt & freshly ground black pepper
  • 12 taco shells
  • 2 1/2 lbs chicken, cooked and shredded

  • 1 preheat oven to 350 degrees f.
  • 2 in a medium bowl, combine grapes, onion, jalapeno, cilantro and lime juice; season with salt and pepper.

  • 3 chicken breast halves
  • 1/4 cup salsa
  • 1/2 cup sour cream (divided)
  • 1 (1 1/4 ounce) package taco seasoning
  • 1 1/2 cups shredded cheddar cheese
  • 2 (8 ounce) packages refrigerated crescent dinner rolls

  • 1 cook chicken breasts. cool and dice into ½ inch pieces.

  • 3 brown the chicken on both sides (about 2-3 minutes per side on medium-high heat) in a skillet with the remaining oil. transfer to the oven, so that the insides can cook through. (about 15 minutes.).
  • 4 once the chicken has cooked, slice it, and i like to get it extra crispy by browning the sliced chicken pieces again in the same skillet that you cooked the chicken in before. just make sure that the chicken doesn't dry out.
  • 5 i made my own salsa by mixing 1/4 cup minced onion, 2 chopped tomatoes, some parsley, lime juice, olive oil, chili powder and cumin. but if you want, just use store bought and maybe add a dash each of chili powder and cumin to give it a homemade taste.
  • 6 take the corn tortillas, wrap then in a paper towel and put them in the microwave for 30 seconds just to soften them up.

  • 2 prepare pie dough and refrigerate at least 2 hours, while preparing and cooling filling; better yet, refrigerate dough overnight.
  • 3 to prepare filling, toss apple slices with dried cranberries or cherries in a microwave-safe bowl, and drizzle with lemon juice, melted butter, and honey, toss again, and sprinkle with sugar, spices, and cornstarch.

  • 1 preheat oven to 350 degrees.
  • 2 peel, core, and chop apples to equal 2 ½ cups. pieces should be the size of your thumbnail. (apples can be chopped in a food processor by pulsing them) set aside.
  • 3 in a large mixing bowl, cream the butter and sugar; beat until fluffy.
  • 4 add the egg and beat until blended then mix in baking soda, salt, cinnamon, and nutmeg; add the flour. stir just until blended. stir in the apples and nuts. pour into an lightly greased 9-inch round cake pan.

  • 7 in a saucepan, melt the butter, brown sugar, & salt. bring to a boil; stirring with a whisk. remove from heat and whisk in the vanilla and evaporated milk.

  • 2 grease a 2-quart casserole with a bit of butter.
  • 3 boil macaroni in hot, salty water for 8-10 minutes, or until al dente.

Chocolate-cherry Cola Cake

  • 1 (18 ounce) box betty crocker super moist devil's food cake mix
  • 1 cup cherry cola, carbonated beverage

  • 3 eggs
  • 1 (12 ounce) container betty crocker whipped vanilla frosting
  • 1 cup marshmallow creme
  • 24 maraschino cherries, with stems well drained, if desired (optional)

  • 1 heat oven to 350 degrees (325 for dark or nonstick pan). spray bottom of 13x9-inch pan with baking spray with flour. chop cherries, set aside.
  • 2 in large bowl, beat cake mix, cola beverage, oil, eggs and 1/4 cup reserved liquid with electric mixer on low speed 30 seconds. beat on medium speed, beat 2 minutes.
