Ingredients

- 3 lbs potatoes
- 3 tablespoons olive oil
- salt
- pepper
- 8 large eggs
- 1 cup cheddar cheese (shredded)
- 1/4 cup bacon (chopped)
- 4 (8 inch) flour tortillas
Recipe
- 1 1. peel and cube potatoes.
- 2 2. in a large frying pan add 2 tablespoons olive oil and heat up, add potatoes and salt and pepper. cook through stiring often but gently. once done set aside.
- 3 3. fry eggs to over-easy/meadium in remaining olive oil (i also salt and pepper the eggs), remove from pan and cut up the eggs with a fork.
- 4 4. on a tortilla spead 1/4 of the potatoes in a line down the center, add two of the chopped up eggs on top of potatoes, sprinkle with bacon bits and cheese.
- 5 5. while tortilla is still open microwave on high for 30 seconds to melt the cheese and warm the tortilla, roll up and serve.
