Breakfast Burritos

Total Time: 30 mins Preparation Time: 10 mins Cook Time: 20 mins

Ingredients

  • Servings: 4
  • 3 lbs potatoes
  • 3 tablespoons olive oil
  • salt
  • pepper
  • 8 large eggs
  • 1 cup cheddar cheese (shredded)
  • 1/4 cup bacon (chopped)
  • 4 (8 inch) flour tortillas

Recipe

  • 1 1. peel and cube potatoes.
  • 2 2. in a large frying pan add 2 tablespoons olive oil and heat up, add potatoes and salt and pepper. cook through stiring often but gently. once done set aside.
  • 3 3. fry eggs to over-easy/meadium in remaining olive oil (i also salt and pepper the eggs), remove from pan and cut up the eggs with a fork.
  • 4 4. on a tortilla spead 1/4 of the potatoes in a line down the center, add two of the chopped up eggs on top of potatoes, sprinkle with bacon bits and cheese.
  • 5 5. while tortilla is still open microwave on high for 30 seconds to melt the cheese and warm the tortilla, roll up and serve.
