Aunt Clara's Rice Balls

Total Time: 15 mins Preparation Time: 5 mins Cook Time: 10 mins

Ingredients

  • Servings: 4
  • 2 cups cooked rice
  • 1 egg (beaten)
  • 3 tablespoons parsley (chopped)
  • 1/4 cup grated parmesan cheese
  • 4 ounces mozzarella cheese (grated)
  • salt & pepper
  • 1 cup flavored breadcrumbs
  • 1 egg
  • 1 cup flour
  • cooking oil

Recipe

  • 1 mix cold sticky rice with 1 egg beaten, parsley, parmesan, mozzarella, salt and pepper.
  • 2 use ice cream scoop to scoop up a rice ball.
  • 3 hand roll ball; roll in flour; dip in beaten egg and roll in bread crumbs.
  • 4 heat 1" cooking oil in pan on stovetop over medium-high heat and brown until golden.
  • 5 drain on paper towels and serve warm.
  • 6 leftovers do well in microwave.
