Aunt Clara's Rice Balls

Ingredients
- Servings: 4
- 2 cups cooked rice
- 1 egg (beaten)
- 3 tablespoons parsley (chopped)
- 1/4 cup grated parmesan cheese
- 4 ounces mozzarella cheese (grated)
- salt & pepper
- 1 cup flavored breadcrumbs
- 1 egg
- 1 cup flour
- cooking oil
Recipe
- 1 mix cold sticky rice with 1 egg beaten, parsley, parmesan, mozzarella, salt and pepper.
- 2 use ice cream scoop to scoop up a rice ball.
- 3 hand roll ball; roll in flour; dip in beaten egg and roll in bread crumbs.
- 4 heat 1" cooking oil in pan on stovetop over medium-high heat and brown until golden.
- 5 drain on paper towels and serve warm.
- 6 leftovers do well in microwave.
