Cinnamon-nutmeg Butternut Squash Pancakes!

Total Time: 30 mins Preparation Time: 20 mins Cook Time: 10 mins

Ingredients

  • 1 cup whole wheat flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon brown sugar substitute
  • 2 cups butternut squash
  • 1/8-1/4 teaspoon vanilla extract
  • 2 egg whites

Recipe

  • 1 heat up the squash in a microwave and blend until smooth, creating the pureé.
  • 2 sift dry ingredients.
  • 3 mix wet ingredients.
  • 4 add dry mixture to wet mixture.
  • 5 cook like you would a regular pancake!
