Breakfast Nachos

Total Time: 15 mins Preparation Time: 10 mins Cook Time: 5 mins

Ingredients

  • Servings: 4
  • 13 1/2 ounces tortilla chips
  • 2 cups refried beans
  • 8 eggs, scrambled
  • 32 ounces salsa, warmed
  • 1 1/2 cups monterey jack pepper cheese, grated
  • 6 tablespoons scallions, thinly sliced

Recipe

  • 1 cover the bottom of a large oven-safe platter with tortilla chips.
  • 2 microwave refried beans for 1 minute, then spread over the tortilla chips.
  • 3 crumble scrambled eggs evenly over beans.
  • 4 evenly pour warmed salsa over eggs.
  • 5 top with grated cheese.
  • 6 broil entire platter in oven until cheese is melted.
  • 7 serve immediately, garnishing with scallions.
