Cottage Cheese Meatloaf

Ingredients
- Servings: 4
- 1 lb ground beef
- 1 cup cottage cheese (i use no fat)
- 1 egg
- 1/2 cup quick oats
- 1/4 cup catsup
- 1 tablespoon prepared mustard
- 1 tablespoon instant minced onion
- 1/2 teaspoon salt
- 1/8 teaspoon pepper
- 1/3 cup parmesan cheese
Recipe
- 1 combine all ingredients except parmesan cheese.
- 2 mix ingredients lightly till well blended.
- 3 press lightly into an 8 by 8 pan.
- 4 cover with waxed paper & microwave on high for 12 to 14 minutes, turning dish once (if no turntable).
- 5 drain fat, if needed.
- 6 sprinkle top with parmesan cheese & cook uncovered on high for 1- 2 minutes or till cheese melts.
- 7 let stand 5 minutes before serving.
