Congo Bars

Ingredients
- 6 cups macadamia nuts
- 1 (1 lb) box graham cracker
- 1/2 cup unsalted butter, melted
- 10 ounces bittersweet chocolate, melted
- 1 1/2 cups packed sweetened flaked coconut
- caramel (for cookies)
Recipe
- 1 heat oven to 350°f.
- 2 spread macadamia nuts on baking sheet.
- 3 bake until golden brown, about 10 minutes.
- 4 set baking sheet on a wire rack to cool.
- 5 line an 11x18-inch baking pan with parchment paper.
- 6 using a food processor or rolling pin, finely crush graham crackers.
- 7 place in medium bowl.
- 8 stir in melted butter press mixture into bottom of prepared baking pan in an even layer.
- 9 sprinkle the chocolate over the graham crackers.
- 10 sprinkle coconut over the chocolate.
- 11 sprinkle the reserved nuts over the coconut.
- 12 using a microwave or double boiler, heat the caramel until liquid.
- 13 drizzle caramel over macadamia nuts.
- 14 bake until golden, about 20 minutes.
- 15 transfer pan to a wire rack to cool.
- 16 cut into pieces.
