Ingredients

- 2 (8 ounce) packages frozen spinach, defrosted and pressed as dry as possible
- 1/2 cup coconut milk
- vegetable oil
- salt and pepper
- 1/4 cup chopped scallion
- 1/4 cup shredded coconut
Recipe
- 1 place spinach in a pot or microwave safe dish with coconut milk and heat until warm in the microwave or on the stove top.
- 2 stir in oil, salt and pepper to taste.
- 3 sprinkle the scallions and shredded coconut on top as a garnish.
