Coconut Spinach

Ingredients

  • Servings: 6
  • 2 (8 ounce) packages frozen spinach, defrosted and pressed as dry as possible
  • 1/2 cup coconut milk
  • vegetable oil
  • salt and pepper
  • 1/4 cup chopped scallion
  • 1/4 cup shredded coconut

Recipe

  • 1 place spinach in a pot or microwave safe dish with coconut milk and heat until warm in the microwave or on the stove top.
  • 2 stir in oil, salt and pepper to taste.
  • 3 sprinkle the scallions and shredded coconut on top as a garnish.
