Caulinana Salad

Total Time: 15 mins Preparation Time: 10 mins Cook Time: 5 mins

Ingredients

  • Servings: 6
  • 1 small cauliflower
  • 2 bananas
  • 2 tablespoons lemon juice
  • 1 1/2 cups fresh sliced peaches (or drained canned peach slices)
  • 1/4 cup toasted almonds
  • 1/2 cup plain yogurt
  • 1/2 cup mayonnaise (best foods is good)

Recipe

  • 1 trim and wash the cauliflower.
  • 2 place whole in a saucepan of boiling water and cook 5 minutes.
  • 3 (or steam or microwave) drain well and cut into florets.
  • 4 leave to cool.
  • 5 peel bananas.
  • 6 slice ino 2cm pieces on the diagonal.
  • 7 toss in lemon juice.
  • 8 mix the cauliflower, bananas, peaches and almonds together in a bowl.
  • 9 combine the mayonnaise and the yoghurt.
  • 10 carefully mix through the cauliflower mixture.
  • 11 serve.
