Caulinana Salad

Ingredients
- Servings: 6
- 1 small cauliflower
- 2 bananas
- 2 tablespoons lemon juice
- 1 1/2 cups fresh sliced peaches (or drained canned peach slices)
- 1/4 cup toasted almonds
- 1/2 cup plain yogurt
- 1/2 cup mayonnaise (best foods is good)
Recipe
- 1 trim and wash the cauliflower.
- 2 place whole in a saucepan of boiling water and cook 5 minutes.
- 3 (or steam or microwave) drain well and cut into florets.
- 4 leave to cool.
- 5 peel bananas.
- 6 slice ino 2cm pieces on the diagonal.
- 7 toss in lemon juice.
- 8 mix the cauliflower, bananas, peaches and almonds together in a bowl.
- 9 combine the mayonnaise and the yoghurt.
- 10 carefully mix through the cauliflower mixture.
- 11 serve.
