Coconut Chewy Macaroons

Total Time: 55 mins Preparation Time: 10 mins Cook Time: 45 mins

Ingredients

  • 1/3 cup fat-free evaporated milk
  • 3/4 cup sugar
  • 2 tablespoons butter or 2 tablespoons margarine
  • 3 1/4 cups shredded coconut
  • 2/3 cup all-purpose flour
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1 teaspoon almond extract
  • 1 cup chocolate chips, melted (optional)

Recipe

  • 1 preheat oven to 325 degrees f.
  • 2 combine and heat evaporated milk, sugar, and butter in microwave until butter is completely melted.
  • 3 stir in vanilla and almond extracts.
  • 4 in a separate bowl, combine coconut and flour.
  • 5 fold wet mixture into dry until combined.
  • 6 drop by spoonfuls on a greased cookie sheet.
  • 7 bake 10-13 minutes, until tops are golden brown.
  • 8 cool on wire rack.
  • 9 melt chocolate chips and use to dip the bottoms of the cookies.
  • 10 enjoy!
