Chocolate Truffle Pie

Ingredients

• 2 cups semisweet chocolate morsels
• 1 1/2 cups whipping cream, divided
• 1/4 cup powdered sugar
• 1 tablespoon vanilla extract
• 1 (9 inch) chocolate cookie pie crust

Recipe

• 1 in a microwave-safe dish, combine chocolate morsels and 1/2 cup cream; cook on high for 1-2 minutes stirring every 30 seconds until smooth.
• 2 cool to room temperature.
• 3 stir in sugar and vanilla; set aside.
• 4 in a small mixing bowl, beat remaining cream until soft peaks form.
• 5 beat in chocolate mixture on high, one-third at a time; mix well.
• 6 spoon into crust.
• 7 refrigerate for at least 3 hours.
