Caramelized Apple Sundaes

Ingredients

  • Servings: 4
  • 2 medium granny smith apples
  • 2 tablespoons butter or 2 tablespoons margarine
  • 1/2 cup packed brown sugar
  • 1/4 cup dried sweetened cranberries, if desired
  • 1/8 teaspoon ground cinnamon
  • 1/4 cup apple juice
  • 1 pint vanilla frozen yogurt (2 cups) or 1 pint ice cream (2 cups)

Recipe

  • 1 peel and core apples.
  • 2 cut into thin slices; cut each slice in half crosswise.
  • 3 in medium skillet, melt butter over medium heat.
  • 4 add apples; cook 2 minutes, stirring frequently.
  • 5 add brown sugar, cranberries, cinnamon and apple juice; cook 6 to 8 minutes or until apples are tender and sauce is desired consistency, stirring occasionally.
  • 6 to serve, spoon frozen yogurt into individual dessert dishes.
