Creamed Spinach (vegan)

Ingredients
- Servings: 4
- 1 onion, finely chopped
- 3 garlic cloves, minced
- 2 tablespoons canola oil
- 250 g soy cream or 250 g oat cream
- 600 g frozen chopped spinach, partly or fully defrosted
- 1 -2 pinch nutmeg
- 1 teaspoon salt
- 2 tablespoons nutritional yeast (optional)
- 1/4 cup breadcrumbs
- fresh ground black pepper
Recipe
- 1 saute the onion and garlic in oil until tender.
- 2 add cream, salt, and nutmeg.
- 3 add spinach and mix well.*.
- 4 add yeast if using.
- 5 add beadcrumbs.
- 6 simmer around 5 minutes.
- 7 add pepper, stir and serve!
- 8 *i defrost the spinach at least partially in the microwave first.
