Cheese Potatoes

Total Time: 1 hr 15 mins Preparation Time: 45 mins Cook Time: 30 mins

Ingredients

  • Servings: 20
  • 5 lbs potatoes, skinned and diced into cubes
  • 1 pint mayonnaise
  • 1 large onion, chopped fine
  • 1 lb velveeta cheese, melted in microwave
  • 1/2 lb bacon, pieces fried crisp

Recipe

  • 1 cook potatoes, drain, and partially mash.
  • 2 cook onion in bacon pan until transparent.
  • 3 add onion to potatoes.
  • 4 stir in mayonaise and velveeta.
  • 5 top with bacon pieces.
  • 6 fills a 9 by 13 pyrex dish with little room left over.
  • 7 bake for 30 minute 350 degrees.
  • 8 can be made a day or two in advance.
  • 9 refrigerate, bake, and serve.
