Cheese Potatoes

Ingredients
- Servings: 20
- 5 lbs potatoes, skinned and diced into cubes
- 1 pint mayonnaise
- 1 large onion, chopped fine
- 1 lb velveeta cheese, melted in microwave
- 1/2 lb bacon, pieces fried crisp
Recipe
- 1 cook potatoes, drain, and partially mash.
- 2 cook onion in bacon pan until transparent.
- 3 add onion to potatoes.
- 4 stir in mayonaise and velveeta.
- 5 top with bacon pieces.
- 6 fills a 9 by 13 pyrex dish with little room left over.
- 7 bake for 30 minute 350 degrees.
- 8 can be made a day or two in advance.
- 9 refrigerate, bake, and serve.
