Cilantro Rice And Black Beans

Total Time: 25 mins Preparation Time: 20 mins Cook Time: 5 mins

Ingredients

  • 2 cups cooked brown rice
  • 2 cups canned black beans
  • 1/4 teaspoon salt
  • 2 cups packed cilantro leaves
  • 2 garlic cloves
  • 1/3 cup extra virgin olive oil
  • 1/8 teaspoon salt

Recipe

  • 1 puree cilantro, garlic, olive oil, and 1/8 t salt in food processor.
  • 2 combine "pesto" with remaining ingredients in microwavable bowl.
  • 3 microwave on high 2-3 minutes or until heated through.
