Ingredients
- 2 cups cooked brown rice
- 2 cups canned black beans
- 1/4 teaspoon salt
- 2 cups packed cilantro leaves
- 2 garlic cloves
- 1/3 cup extra virgin olive oil
- 1/8 teaspoon salt
Recipe
- 1 puree cilantro, garlic, olive oil, and 1/8 t salt in food processor.
- 2 combine "pesto" with remaining ingredients in microwavable bowl.
- 3 microwave on high 2-3 minutes or until heated through.
