Cabbage Soup, Valtellina Style

Total Time: 25 mins Preparation Time: 5 mins Cook Time: 20 mins

Ingredients

  • Servings: 4
  • 24 ounces savoy cabbage
  • salt
  • pepper
  • 6 slices stale bread, cubed
  • 9 ounces fontina cheese, cubed
  • 4 cups chicken stock
  • 1 1/2 ounces butter

Recipe

  • 1 clean, trim and slice cabbage. place cabbage in saucepan and bring to a boil until the cabbage is tender then drain.
  • 2 in the saucepan place a layer of the cabbage while still warm, then place a layer of bread on top of the cabbage, then a layer of fontina cheese. continue doing this until you have used up all of the ingredients. gently press down the ingredients with your ladle.
  • 3 bring the stock to a boil and pour over the other ingredients. let soak for about 2-5 minutes.
  • 4 meanwhile, melt the butter in the microwave or a saucepan.
  • 5 pour over soup, stir and serve.
