Apple Pancakes

Ingredients
- 2 cups flour (240 g.)
- 1 tablespoon baking powder
- 1 teaspoon salt
- 1/2 teaspoon cinnamon
- 2 tablespoons canola oil
- 2 eggs
- 1 1/3 cups milk
- 3 granny smith apples, peeled 2 grated and one diced
- 1/2 cup sugar
- 2 tablespoons cornstarch
- 1/4 teaspoon cinnamon
- 2 cups apple juice (cider)
- 2 tablespoons butter
- 1 tablespoon lemon juice (from bottle)
Recipe
- 1 for the pancakes:.
- 2 beat eggs and mix in milk, oil.
- 3 combine flour, baking powder, salt and 1/2 tsp cinnamon.
- 4 mix wet and dry ingredients - do not over mix.
- 5 stir in apples and set aside.
- 6 for the syrup/sauce.
- 7 whisk cider, cornstarch, 1/4 tsp cinnamon, and sugar in microwave safe bowl.
- 8 micro 90 seconds at a time whisking in between until thickened.
- 9 once thickened add butter and lemon juice.
- 10 cook 1/4 cup pancakes on griddle set to 300 - low and slow lets apples cook through.
- 11 serve on pancakes.
