Apple Pancakes

Total Time: 50 mins Preparation Time: 30 mins Cook Time: 20 mins

Ingredients

  • 2 cups flour (240 g.)
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 2 tablespoons canola oil
  • 2 eggs
  • 1 1/3 cups milk
  • 3 granny smith apples, peeled 2 grated and one diced
  • 1/2 cup sugar
  • 2 tablespoons cornstarch
  • 1/4 teaspoon cinnamon
  • 2 cups apple juice (cider)
  • 2 tablespoons butter
  • 1 tablespoon lemon juice (from bottle)

Recipe

  • 1 for the pancakes:.
  • 2 beat eggs and mix in milk, oil.
  • 3 combine flour, baking powder, salt and 1/2 tsp cinnamon.
  • 4 mix wet and dry ingredients - do not over mix.
  • 5 stir in apples and set aside.
  • 6 for the syrup/sauce.
  • 7 whisk cider, cornstarch, 1/4 tsp cinnamon, and sugar in microwave safe bowl.
  • 8 micro 90 seconds at a time whisking in between until thickened.
  • 9 once thickened add butter and lemon juice.
  • 10 cook 1/4 cup pancakes on griddle set to 300 - low and slow lets apples cook through.
  • 11 serve on pancakes.
