Creamy Waldorf Potato Topper

Total Time: 15 mins Preparation Time: 5 mins Cook Time: 10 mins

Ingredients

  • Servings: 4
  • 4 baking potatoes
  • 1 teaspoon olive oil
  • 200 g pot soft low-fat cheese
  • 2 stalks celery, thinly sliced
  • 1 small red onion, halved and finely sliced
  • 1 cox's apple, cored and chopped
  • 50 g walnut pieces

Recipe

  • 1 prick the potatoes with a fork and sit them on a microwaveable plate.
  • 2 rub the skins with the olive oil, and sprinkle with some sea salt if you like.
  • 3 microwave on high for 8 mins until soft in the centre.
  • 4 leave to cool while you prepare the topping.
  • 5 mix the soft cheese, celery, onion, apple and half of the walnuts; season to taste.
  • 6 cut the potatoes open.
  • 7 spoon on the topping
  • 8 sprinkle with the remaining walnuts.
