Bacon,hot Pepper & Scallion Corn Muffins

Total Time: 40 mins Preparation Time: 20 mins Cook Time: 20 mins

Ingredients

  • 5 slices bacon (micro wave type, microwaved and crumbled)
  • 1 cup all-purpose flour
  • 1 cup yellow cornmeal
  • 1/4 cup sugar
  • 2 teaspoons baking powder
  • 2 teaspoons salt
  • 1 teaspoon baking soda
  • 1/2 teaspoon cracked black pepper
  • 1/4 cup finely chopped jalapeno pepper ( & seeds removed)
  • 1 1/2 cups corn kernels
  • 4 large scallions, finely chopped
  • 2 large eggs
  • 1 cup sour cream
  • 4 tablespoons melted butter

Recipe

  • 1 in a large bowl, whisk together the flour,cornmeal,sugar,baking powder,salt,baking soda,black pepper.
  • 2 stir in the jalapeno, corn,scallions and crumbled bacon.
  • 3 in medium bowl whisk eggs with the sour cream and melted butter, fold wet ingredients into the dry until blended. pour batter into muffin cups.
  • 4 bake in pre-heated 350* oven for 20 minuted or until toothpick inserted comes out clean.
