mashed sweet potatoes by jean carper

Ingredients

  • Servings: 6
  • 2 1/2 pounds sweet potatoes
  • 3 tablespoons amaretto (almond liqueur) or maple syrup
  • cinnamon, to taste
  • ginger, to taste
  • 1/4 cup toasted almonds

Recipe

  • microwave whole potatoes until done. cool to touch. remove pulp. mash with liqueur and spices. top with almonds. reheat in microwave.
