Five Minute Lemon-poppy Seed Cake

  • 3/4 cup confectioners' sugar, sifted

  • combine water, white sugar, and gelatin in a large microwave-safe bowl; heat in microwave on high for 7 minutes. stir sugar mixture and cook in microwave for 7 minutes more.
  • mix 1 1/2 cups confectioners' sugar, corn flour, and cream of tartar together in a bowl; stir into sugar mixture. heat mixture in microwave on high for 6 minutes more. stir rose water and food coloring into mixture.

  • heat the oil in a skillet over medium-high heat. place lamb in the skillet, and cook until evenly brown. pour in the salsa, and continue cooking 5 minutes, until heated through.
  • place tortillas 1 or 2 at a time on a microwave-safe dish. cook in the microwave 1 minute on high, until warm. place equal amounts of lamb strips and salsa in the center of each warm tortilla, and roll. top with sour cream and garnish with green onions to serve.

  • wet a paper towel, and wring out. wrap the ear of corn in the moist towel, and place on a dinner plate. cook in the microwave for 5 minutes. carefully remove paper towel, and enjoy!
